We enjoyed our first dining
We enjoyed our first dining experience at Matsuhisa. For a first time diner the many pages of the menu were overwhelming, but our waitperson did help us narrow down the choices and gave the selections of specials for the evening. The Japanese eggplant was delicious, as was the mushroom selection and the lobster ceviche in the salad section. Overall, a pleasant time was had and we would definitely return.

Excellent sushi, very fresh.
Excellent sushi, very fresh. So good we ate there twice during our 5 day vacation. Can be noisy if seated in the main room. Much quieter in the back or at the sushi bar.

Matsuhisa was enjoyable overall. However, were it not for our server Ben, who made navigation through the menu seem like a journey rather than an up-sell, I would not have felt comfortable shelling out the $450 for two (light drinkers). Thank you, Ben. You earned all the credit for my experience and on this occasion you carried the food to meet the price tag rather than the other way around.

Spectacular as always. Whether a Matsuhisa or Nobu, they never disappoint. Had the grand omakase this visit and it was extraordinary. Easily one of Vail/Beaver Creek's best dining experiences.

Located in the Solaris development
Located in the Solaris development in Vail Village, Matsuhisa has been a hit for the two years its been in business. The chef's interpretation of traditional Japanese food is quite exceptional. The menu can be a little confusing, but the waitstaff are exceptional in helping the diner in their selection. Our party had an extensive sampling of the menu, and we can attest that nothing disappointed our palates. We give the highest recommendation for the restaurant, and hope you agree.

As good as as any Japanese restaurant or New York restaurant! These are spectacular dishes they serve...so skilled.

Our second visit to Matsuhisa
Our second visit to Matsuhisa was at the beginning of the off season from skiing. Not as crowded and noisy as our first time, but the specials they offer at a discounted price were very tasty, presented nicely and made us think about seconds. The sea bass prepared two different ways was very good and the Limestone cod was excellent. We also had the Yellowtail with jalapenos, a sashimi dish that was also very good. I don't think you can go wrong sampling from the specials menu. Totally enjoyed the whole evening and dining experience.

Even my mother can rave!
The food and service were amazing! It was off season so there was a chef's special meal that my mother and I split with a good sampling of regular menu items. The first sashimi appetizer (snapper with a drop of lemon and garlic flakes) was to DIE FOR! Melts in your mouth and so tasty! This is the dish my mother has been talking about for weeks and she doesn't like anyone's cooking but her own. The other dishes were all cooked to perfection, mochi ice cream was the best I've ever had.
Our only complaint was the proximity of the tables to each other. There were two couples at the table behind me and I involuntarily heard every word they spoke (sometimes over the server).

Really good food
As one would expect, matsuhisa is top of the line spot. Sashimi/sushi top notch, even in the trough season. Discovered lamb was delicious as well. Hard to go wrong here. service very attentive and professional, yet young. It's a bit too pricey, but we will still return for great fod and wine. Setting pretty nice, as well.

A very enjoyable evening,
A very enjoyable evening, excellent food and good friendly service. And the $49 special five course meal made the whole night well worth the visit. Now if Matsuhisa would only have those specials in season.

Having heard that this would be a memorable dining experience, we were disappointed when the food was just average. Although we enjoyed our dining experience, the sushi could have come from any decent sushi restaurant at a fraction of the cost. It really wasn't anything special.
I will say that the restaurant is beautiful and the service was faultless. Portions could be a teeny bit larger - again for the price, one shouldn't walk away hungry.

A bit of a bummer that service ended early at 840, but it is off season and service was really great, especially Josh. Food was excellent again but so pricey! And some fish did not didnt need saice, like the jalapeno yellowtail. Had a great time though.

A fantastic sushi-with-a-twist
A fantastic sushi-with-a-twist experience. Excellent food, music (our teenage d'ter thought they might have taken her iPod for the tunes!), and top notch service> a great system of host, wait-staff, water/clearer staff, server. Excellent meal and memory.

Incredible Dining Experience
We loved the whole experience. Out waiter "patrick" made phenomenal recommendations, and the support staff were also very attentive without feeling overbearing. It was incredibly busy but the whole experience was incredible. The food was phenomenal, and we would definitely come back, and recommend the experience to others! The culinary dishes were inspiring!

Matsuhisa is fantastic!
Since it opened I have been fortunate enough to eat at Matsuhisa many times. The food, service, and ambience never disappoints. Recently we ate outside - overlooking Vail mountain and charming Vail village. It simply doesn't get any better than this!

Wonderful Meal Outdoors
We have several times at this location during the ski season with great results. However, dining outdoors with a more casual pace was really a treat. The food was outstanding! Our server was very attentive and made a number of excellent suggestions to compliment our preferences. Highly recommended but bring a large wallet.

Best sushi you'll get in Colorado
Not that I would expect anything less from Nobu san's limited eponymous restos.
Have considered the one in Beverly Hills (and his first in the US) among my favorite restaurants in the world for years.
While the Vail location is cavernous by comparison they don't miss a beat.
All of your favorite signature Matsuhisa dishes are available here (miso black cod, tiradito, etc) and better than at all of the other places you've had the knockoff.
The staff is very friendly and knowledgable albeit a bit overwhelmed at times due to the ginormous space.
The room itself is gorgeous.
If you enjoy sushi and don't visit Matsuhisa while in Vail then you can only blame yourself.
Is it expensive? Of course. But it is......the best.

Not your average sushi restaurant
Matsuhisa-Vail is not a typical sushi restaurant. The menu items are very diverse and imaginative. For the most part, we followed our waiter's recommendations and he was spot on. The meal was outstanding, if extremely expensive.

Great sushi, a bit pricey
Great sushi, a bit pricey - but probably in line for Vail. Cocktails were great too! Our server was pleasant and professional, but not overly personable. One downside was we sat outside on the patio which shares a common area walkway and overlooks a park so there were a lot of children running through and screaming.
They do validate parking in the Solaris parking garage so remember to ask them - nice bonus to get free parking!

Food is excellent
The dish offerings are widely varied and everything we tried was excellent! They had a good wine list - with one of our favorites on it.
The views are great - looking up at the ski mountain at Vail. The only downside for some folks would be the plates are small - but made to be shared and pricey. But well worth the splurge if you like Japanese food! Excellent fish - cooked amazing.

Great food. High prices.
This place is great for a special night out. Service was fantastic. Food was excellent, although the dishes are small and expensive.
The Black Cod is a wonderful dish, although it doesn't come with anything else on the plate , so you may want to have some starters or add some sides. We had the yellowtail jalepeno to start and sesame tuna. Both were excellent. Good Saki and wine list. The noise level is high because of the high ceilings and lots of windows. Great views in the daytime.

Our second visit to this fine restaurant was not disappointing. We ate fairly light by having several small plates which were just amazing. The tempura sea bass was awesome and the yellowtail collar was fantastic! The sushi and sashimi were also very good. Wine steward helped us pick a nice chardonnay which complemented the fish. Their off-season rates made the dinner all the more enjoyable.

Awesome off-season menu deals
I have eaten here twice now and both times, just sort of gone with the chef's choice menus. Haven't been disappointed with any of the plates. I am a picky eater. Fabulous! And off-season pricing is great! Service got just a good rating for a few reasons, but I attribute this to the off-season and the service was excellent when I was there in Feb.

Yummy as always
Very good experience as always. My only frustration was that one in our party is gluten free, and the restaurant was not able to accommodate very much: either the dish was gluten free or it wasn't. I had called Mountain Standard and La Tour before making the reservation, and they both said they could accommodate, making about 90% of their menu gluten free. I had assumed sushi would be easy. It's rice! But there was gluten hiding in many, many dishes.
I do not care for the ambience of the restaurant. It really feels like you are sitting in the lobby to Solaris--which you are. There is no coziness about it. It feels cold and open.
Those are my complaints. Food was delicious. Waiter was very good. We enjoyed ourselves.

omakase menu=10 additional food =10
everything was superb.
service , the omakase menu of 5 items ( this was the off season menu), and the additional items we ordered were all superb.
max our server was very warm and and welcome and asked us if we had any allergies or dislikes and if we wanted the scallops or the lamb for part of the omakase. we both chose the scallops and it was a great choice.
the only thing i was not crazy about was the mochi ice-cream served with some exotic fruits. mochi is not for me.
we also sampled a bunch of the items on the off season menu and everything was delicious and a good portion.
cannot wait to come back and that was my third time there.
