This place has the best brisket you'll find outside of Texas! Great beer selection too! We happened to go on a busy Friday night so our waiter wasn't the best, but the food was worth the mediocre service.

We were 15 minutes late for our reservation, but the staff was still nice and willing to seat us. It was our first time there and our server explained how everything works, and one of the guys in the marketplace recommended the Sunday special to us which was less expensive and still allowed us to try a bunch of different food options. This place gives you TONS of food. Definitely only go if you are ready to eat! You won't leave hungry and you'll probably be taking leftovers with you. Overall it was a fun, casual environment, and I'd recommend it to a friend.

Go here for great barbecue
This was not my first nor will it be my last to Hill Country. My friend and I had the brisket lunch special which was just fantastic. I suggest the lean as the moist is too fatty. Staff is efficient and friendly. You can't mind waiting in line to pick up your order if you go here.

If you're looking for no-frills BBQ, then this is your place. The ordering process was a bit confusing and kind of cumbersome, but the food was very tasty. I'm far away from home (TX), so ending our meal with Blue Bell was awesome. I ordered the lean brisket and I debated getting the moist, but the lean was juicy and well seasoned. Also, they make a great BBQ sauce.
We'll be back!

Awesome Texas BBQ
The only problem I had was with the hostess stand. We had reservations for Father's Day and they originally sat us in the basement claiming that was where our "reserved table" had to be located. The main area upstairs was virtually empty. We asked to be seated upstairs and they said we would have to wait because there were other reservations in the upstairs area. After speaking with the manager we finally got seated upstairs. We were there about an hour and half and in that entire time only half a dozen more tables filled up. Their excuses and unwillingness to accommodate their guests rubbed me the wrong way.

Great brisket; but order carefully
The brisket (lean is just fine, no need to get the upcharge for moist) is delish, and the sides are, too (tried the mac and cheese and green bean casserole). Kruez sausage is also very good, but better to share. It's too greasy to eat the whole link. Be careful when ordering. Two sides and 1/3 lb of meat could get you into the $30 range, too much for BBQ, IMO. The Brisket Chomp, $13.50, is 1/3 lb of brisket, a side, corn muffins and a drink. I think I'll do that next time. And it does bug me that unsweet tea doesn't come with refills, and they charge more for the large. Come on, now ...

A great find for a fan of TX BBQ
I'd heard it was here and finally got the chance to stop by. Glad I did. The BBQ was amazing, the sides were delicious and the atmosphere brought it all together. My only complaint is that the band that did a sound check when we first showed up never actually played during the hour and a half we were there. But I'll be back for sure!

Great BBQ and very non-Washingto
Hill Country is a carnivore’s dream come true, but a dieter's nightmare. All the meats are excellent; spiced and smoked to get the full flavor of the meat without relying on sauces. Over multiple trips, I've had the pork belly, ribs, brisket, and sausage. The side dishes are great country cooking done right; where else can you get collard greens that are not cooked down to mush? The "meal ticket" and butcher-style atmosphere is fun, and is a welcomed change from the white table cloths and pretentious "fusion" foods elsewhere in DC. The only drawback is the price; it is not a cheap lunch, but worth it on occasion.

We tried to go once before around 8:00 pm and didn't get past the chaos at the door. This time we went when they opened at 5:00, and had a great experience. Good happy hour drink specials. The ribs were nice and meaty, and the sides were great too. It was a little spendy, but that's to be expected downtown.

Bring on the brisket!
As far as barbecue outside of Texas, Hill Country does it right. We went a la carte the whole way so that we could taste everything. The sausage and brisket topped our list for meats, while the pork ribs were meaty, but could have been more tender. Skip the slaw and load up on beans (baked and pinto) and potato salad. A pitcher of Shiner Bock rounds out the Texas experience.

Great food, waaay too loud
This is a favorite place of mine, but this last visit it was incredibly loud! We could hardly have a conversation with my fellow diners and the whole point of going there was to spend some time together. It was not just the loud people, but the music as well. And we were upstairs, not even down where the band was!

Everything was tasty. The meat was seasoned well and tender. The sides tasted like the authentic, traditional sides they were. The mac and cheese was creamy, the soda is refillable. What more could you ask for!

Texas BBQ on the East Coast!
I went to Hill Country BBQ on a Monday night for the all you can eat feast. My waitress brought a cafeteria tray that was laden with meat: 3 slices of lean brisket, 3 slices of more fatty brisket, 2 huge pork ribs and finally 2 pieces of chicken. You also get your pick of 3 slides. I chose the macaroni and cheese, collard greens and corn pudding casserole. All of the meat was well seasoned with a wonderful, flavorful rub. On the table were 2 types of sauce: mild or hot. I used the mild and it was slightly sweet with the right touch of smokiness. All of the sides had a bit of heat (spice) which was a bit surprising. I also ordered the Lady Bird Lemonade: vodka, peach lemonade-- yeah baby! No seconds! Great food!

Nice Place. but...
My ribs were horrible. Just globs fat basically---very little meat. My side of beans were so hot (temperature) they could not really be eaten before my guest almost finished her meal. Lemonade was good.

This is the place for genuine Texas style barbecue. The all-you-can eat deal is a great bargain, but you won't be able to move afterwards.

Awesome Food & Service...but...
Popped into Hill Country for lunch on Labor Day and was delighted at the lack of people. I had some of the lean brisket and pork belly; my adorable companion got the "Pit Master." Among our collective sides were the "Texas caviar," potato salad, green bean casserole, deviled eggs, and macaroni and cheese. Take my advice: ditch the sides. The Texas caviar - cold black eyed pea salsa - is better as a dip. I make a better green bean casserole. The potato salad was sadly bland. Nothing special about the mac & cheese. I think the deviled eggs came from a Safeway deli. Nothing at all special about the sides. Had we concentrated on the awesome meats we would've saved over $20 on our $80 bill (before tip!). Great meats, great service, ok beer.

Great Food But Where's the Sausage?
Been here several times, the food is always excellent. Got the deal with a sampling of different meats, which last time included sausage but has since been changed though the price remains the same. The delicious assortment of smoked meats was filling, the pork and beef ribs were both falling off the bone. Brisket was great but just slightly on the dry side this evening, which gave us a chance to really lather on the barbecue sauce. Only complaint was our waiter was a little pushy, insisting that he deliver our order and food instead of us going up like usual. Normal busy crowd for a Friday evening, but we were sitting in the back corner away from the bar so noise was kept to a minimum. Try the cupcakes, huge & as good as the banana pudding

My boyfriend and I ate here using a Travelzoo coupon for the feast for two with drinks and desserts. The coupon was a great value. There was ample food; we took leftovers home. We paid the $4 extra for the moist brisket which was worth the extra money. All the meats were delicious, juicy, and in possession of a depth of flavor essential to good BBQ. We'll come back, and we are happy to recommend this restaurant to friends.

I'm not a fan of sweet BBQ sauces so Hill Country's dry rubbed Texas BBQ is perfect for me. My favorite is the beef ribs, but there's not much meat on each rib. I ordered the Pitmaster and ended up with quite a bit more food than I can eat in one sitting - so my dog got to enjoy the brisket and I had the chicken later as well.

Great BBQ From NYC in DC!
This is a great no nonsense BBQ restaurant that serves wonderful BBQ meats with great sides. It has a fun atmosphere. There BBQ brisket is moist and tender. The BBQ sauce I had was on the sweeter side and had only a little kick to it. The mac and cheese was delicious. The green bean casserole is just like mom makes. The corn pudding has just enough heat. The cupcakes we had for dessert were moist and tasted great!

BBQ Lives in DC
Hill Country BBQ is perfect for DC diners who are craving the taste of some good ol fashion BBQ. While the prices are not cheap, the quality of the meat and side dishes is hard to beat. The setting is perfect for large groups and small nights out. And on Saturday night, you're in for a treat down on the lower floor of the restaurant. The Live Music on Saturday nights (starting at 9:30pm) is always a great treat after dinner upstairs and makes you feel as if you are at your own private concert. Great experience and a must try for those who are looking for new places to dine.

Food was great as always! It is rather loud, especially if you are seated near the bar area so if you want quiet, this is not the place. My husband and I love coming here as we are from the south and its hard to find good brisket anywhere up here so we were very pleased when we found Hill Country!

Best Brisket in DC
We went to the restaurant because of the band that was playing and had no idea what to expect. The service is unique. You are handed a meal card with all the meats and sides listed, and then you go to a cafeteria type line. You talk to the folks working the smokers and ask for your meats, how you want them done and how much and they wrap it up. You then walk over to get your cornbread, beans, potatoes, collard greens, etc. and then sit down and eat. Given that setup, the service is amazingly quick - 5 minutes after we walked in, we were diggin in! The brisket was mouthwatering, the ribs were meaty, and the sausages just spicy enough. The music venue is intimate, and I got to see one of my favorite bands, Whiskey Myers, 10 ft away!!

Thanksgiving Food Fest
Hill Country was celebrating Thanksgiving from 12-8PM.
All the food was terrific -- the sausage, ribs and brisket were a wonderful addition to my smoked turkey! I was definitely disappointed that they ran out of sausage, since it was only 6PM. I wish they were more delicate in their serving sizes -- I really like to try a bit of everything before going back and getting second of my favorites only. They were VERY LIBERAL in their servings and I ran out of room on my plate and got way more than what I needed or wanted. The corn pudding was a definite winner -- I wish the collards were chopped a little bit? I think I shoved a WHOLE leaf into my mouth (tasty, but unwieldy). I would definitely do this again.

Our first visit to HC was amazing! The meats were fantastic with tender juicy flavors. The sides were plentiful and flavorful. On to dessert and more of the same!! You get to choose your meats and sides so hour meal is customized to your likes. AND the service and friendliness of the staff was perfect! A great meal at a very fair price. I highly recommend HC to any one who loves a great meaty meal!!
