Best Meal Yet
We have been to One many times and it is always very good but this may have been the best yet. We chose the Chef's Choice tasting menu which was totally outstanding, as were the wine pairings. Highly recommend this restaurant. The only miscue was that the music was too loud for this normally quieter restaurant.

The servers were very attentive
The servers were very attentive and nice. I have been to this restaurant several times and have always found them to be this way (unlike others' reviews that I have read). This time, they were perhaps overly attentive. I had a hard time finishing sentences with my company when we were asked repeatedly "can I take that off your table now? " and "Would you like some more wine?"
The food is very good, but I DO find that the portions are small and the prices are high. Maybe thats how you create an ambiance of exclusivity. Or pay all that wait staff. But I would gladly trade some exclusivity for a few more bites of food, one fewer decimal in my bill, and fewer interruptions in the conversation.

One is Number One
ha ha. Really great experience. Wife received a gift card, so off we went. First course was soup and sushi. Wonderful, and generous portions. Second course was lamb ("rack" = 2 chops) and steak (quite a sizable cube) - both cooked and seasoned perfectly. great wine selection - I won't tell you which red to get so you don't drive up the price. For desert we had ( forgot the name) a multi-part choclate extravenganza - spice thick hot chocilate next to a choc ganache with some nutty gelato. Wonderful. Service was attentive but discreet. i like the view into the kitchen afforded by the open floor plan. A bit procey for everyday ( a lot) but worth the proce for special events. Definitely raised the bar, from our local experience.

The best food with the best service
All items on the menu are delicious and making the choice is so hard. The staff is very helpful and give further details on the menu to make the decision easier. I have never eaten anything I did not like, rather love! Each menu item uses local foods and is very creatively paired. My recent favorite: Cilntro Semifredo with Dried Pineapple!

I highly recommend visiting this gem of a restaurant!! Doubtful that you can find anything like it within 100 miles. I would compare the cuisine to a New York City Michelin Star restaurant but much more reasonably priced. Wonderful combinations with beautiful presentation and excellent flavor profiles. Much more than just a meal, this was an experience. And an awesome one at that. Service was absolutely top notch, the staff was always checking in (and not in an intrusive way) and everyone is very knowledgeable about the menu and were able to answer all my questions. Great place for an anniversary dinner, or just for a great meal in general. Cannot recommend this place highly enough and will be returning soon!

Michelin-star food in Chapel Hill
Absolutely amazing food from Kim Floresca and Daniel Ryan, who are coming to us from Meadowood in California, a 3-Michelin starred restaurant. The flavors, textures and plating create an incredible dining experience! Highlights of the evening included the Beef Tendon Tartare and Shrimp Toast snacks, Shrimp Custard with Bacon Dashi, White Scarlett Agnolotti with smoked Lamb Heart, Heirloom Tomato Salad, Diver Scallops with Potato Gnocchi, Duck Breast with Cornbread, Caramelized White Chocolate Ganache with Miso Ice Cream, and Fig Leaf Ice Cream with Tapioca. This is the kind of place Chapel Hill has needed for a long time to give the local restaurants some serious competition! Completely blown away by the food and they've only just started!

The two new chefs are an added addition. I think we are all in for an adventrue when it comes to trying out new food.
The service was jus outstanding, couldn't ask for any more. They made the evening very special. LOVED the food.

great potential but some downers
free appertifs and dessert tastings were smashing but the first course was a dissapointment. Bring them into the menu please...The carolina shrimp dish was off - didn't have a fresh flavor, can't recommend it. The tomato caprese was nice, but meager. On the main dishes, the veal was fabulous and the scallops were great too. Sommolier is fantastic - great help with wine pairings - a real gem. Love the ginger chocolate with cinnamon ice cream.....enough to come back and try the menu again!

Our new favorite restaurant!!
We've eaten here 3 times in the last 2 weeks and can't wait to come back! The food here is outstanding and rivals anything we've eaten in DC and NYC. This is the perfect place for foodies. It's about time we have a restaurant in the Triangle that's accessible for the palate and the wallet. Our biggest quandary each night was deciding which dish was our favorite, and that's a great problem to have! Highly recommend the Beef and Duck entrees and the Passion Fruit and Fig Leaf desserts. Flavor combinations are very impressive and thoughtful, and presentation is beautiful and modern. Open kitchen and friendly service lend a great atmosphere to an incredible dining experience. Don't miss out, Chapel Hill!

Better than ever
One started out as a good neighborhood restaurant and steadily improved. With the new chefs it seems, based on this meal, to have taken a significant step forward. New and different menu and the cooking was excellent. Blackened roast veal a particular treat.

The food is amazing here, can't say enough about it! They do a great job, service is friendly, too. DIshes are artfully plated, a treat for the eyes and the tongue. The atmosphere is a bit dark and dismal. Gray walls, black tables and comically two-tone gray and red chairs make the place feel a little cold and clinical. Warm neutrals would give the place a more appealing and modern feel that would better suit the incredible food they are putting out. Lighting could be better, too. But the food is the real draw here. We'll be back!

Friday nite out
We made reservations this time although our early 6:00 time guaranteed a spot at this somewhat slower time of year (mid August). We arrived early and had a drink at the bar...nice way to end the week. The menu was delightful and service excellent. The wait staff has obviously been trained and all were professional and personable. Presentation was artfully done and we felt we had an excellent experience. The decor is modern, "sparse", and ambiance fairly noisy even at that early hour when there were less people dining. This is not an intimate atmosphere but definitely lively. That was fine for this was an unexpected plan at the end of a relentlessly rainy week. Food and service comparable to Fearrington Inn and Four Square.

We had the Chef's tasting menu with wine pairings for our table of 3. Wow! The meal was fantastic and service was terrific. We also felt the tasting menu with pairings was a great value for the caliber of the meal. Highly recommended. If I could change anything I would soften the very cool, ultra contemporary decor just a tweak and lower the music slightly. I love that the kitchen is literally inside the dining room. Great concept.

Incredible food!! The new chefs are the real deal! We were so impressed with the presentation and flavors! Just blown away! We haven't found anything in the Triangle that compares. Service is friendly and efficient. We loved sitting at the kitchen bar and watching the chefs cook. We will absolutely return, and often!

A Welcome Addition to The Triangle
Now with new, young chefs at the helm of this place, it's easy to just come in and grab something fun and tasty to eat. The place has a great mix of guests (business, older folks, families, special occasion, and the see and be seen types), giving it that energetic vibe. Food concept is a definite upheaval from what the restaurant used to be. From the appetizers to the dessert, the food's clean, precise, artistic, and most of all, flavorful. Manipulations are at a minimal, letting the ingredients speak for themselves. Wine list is interesting and chock-full of great buys - speak to the sommelier and get helpful recommendations. Don't miss the bar, it's well-appointed and stylishly furnished. All in all, a fantastic addition to the area!

Love this place!
We've been here six times since the new chefs took over and it is always impressive. The previous chef's menu read more like a standard steakhouse, but now the food is more modern and tastes incredible, and they change the menu frequently which keeps us coming back to see what they will do next! So pleased the Triangle has a genuinely praiseworthy restaurant that could compete with those in NYC and LA. Service is friendly and welcoming. Watching the chefs cook in the open kitchen gives the restaurant character and vibrancy. Haven't found anywhere else in the Triangle that compares! HIGHLY recommend!!!

Wonderful food and wine!
The prix fixe menu with wine pairings was just wonderful. The portions were appropriate, and the inventiveness of the dishes was terrific. It equalled or exceeded any of the local wine dinners I've attended. Since I don't care for dessert wine, they quickly substituted sparking. The service was very good--not quite European-style perfect, but very good nonetheless.

Perfect Anniversary Dinner Spot
One was a wonderful spot for a romantic celebration. Our waiter was incredibly attentive and friendly. The sommelier was the same. The food was presented beautifully and it tasted as good as it looked, once my boyfriend and I dared to cut into the artistry. The icing on the cake, however, was when one of the chefs came out to make sure we enjoyed ourselves. Our experience at One was thoroughly positive and I would recommend it to anyone with a special occasion to celebrate.

A special dining experience
The four in our party each had different entrees and salads and we sampled each other's selections. Every morsel of every dish was spectacularly good. The frequent offerings of fresh-baked bread were appreciated and savored. This is a place that I hope will remain in place for many years to come because it is my new favorite "special" restaurant. It's not in my budget to dine there often, but I will look forward to returning there whenever that time arrives again. I almost forgot to mention the staff, who were gracious, genuinely friendly, and unpretentious. We felt as welcomed to be there as we did happy to be there.

Innovative little bites
Great food! Very innovative menu with a multitude of ingredients not commonly seen in restaurants. Every dish we had was cleverly conceived and artistically plated. Portions are very reasonable-- to most Americans they may actually look small, but really are just right.
Our favorite aspect of the meal were the several small single bites brought out complimentary between courses. Hope for the "snowball" one; so cool. And take their advice to order the chocolate soufflé for dessert when selecting entrees-- it alone is worth the trip. .

Best of chapel hill
The new menu and chef has introduced a dining experience to Chapel Hill that it has never experienced..as we did not have wine I can't comment on the wine list . We were 2 seniors having an early dinner and they seemed to make the kind of effort that would impress anyone, any time.

With an open kitchen and stunning decor, One is definitely worth the trip to Chapel Hill. Varied menu options based on local produce and season define this new restaurant and speak volumes of praise for it's two chefs who hail from impressive careers across the country. Love the new menu!!
We opted for the Impromptu Menu, which allows the Chefs to decide what to serve you. It was such a fun experience not knowing what was coming out next and being totally surprised and wowed by each dish. The Fluke, Sweet Breads, Beef with Chrysanthemum crust, Egg Yolk Ice cream, and the Candy apple pie were our favorites. So glad we have such a great restaurant here! Seven courses plus snack and other little extras thrown in for only $65 is a steal! Can't get that anywhere else in the Triangle. This is our new favorite spot!

while the "impromptu chef's
while the "impromptu chef's tasting" was delicious and a deal, there wasn't much that seemed impromptu about it. when it's described as the chefs working "off the cuff of their chef's jacket" i expected more than dishes that were already on the menu. if that was it, i could have just chosen very precisely what i wanted and perhaps omitted a dish or two. as is, it's simply a mix of regular and tasting menu items and quite a few of them. left very full and generally happy, but was disappointed there wasn't as much of an element of spontaneity. it didn't feel quite as special as i would have expected.

LOVELY Food & good service
We had a great time at One last weekend with my husband, his father and partner. The service was excellent, prompt and polite without being rushed. We did the 7 course tasting menu as a splurge, and it was fantastic! The dishes were unique and would definitely foodie-approved (funky, fun flavors and combinations). Highly recommended! I didn't realize we had a place like this in the Triangle and we'll definitely return.

One deserving of name
Anniversary dinner at the new One Restaurant. Chose the Impromptu Tasting and accompanying wine flights. 6 courses plus three amuses to start. Each selection was creatively conceived, beautifully plated and delicious. The kind of meal when conversation is forced to focus on the food with each new course. Wine was well paired. We had an issue with one wine selection, only casually mentioned and the glasses were whisked away and an alternative brought. Only wish a little more time was spent describing the details of the courses. Great meal. I hope the recent excellent reviews in the local press brings enough business to keep these talented chefs in town.

One, Version 2.0
We are local residents who tried to support the original incarnation of One with our patronage, however with the gradual decline of food quality and service we quit going. When we learned that it was under entirely new management with high ambitions we decided to chance it once more for our wedding anniversary. It was simply outstanding in all regards. A really wonderful experience. My wife and I had to think back to a dinner we had at the Inn at Little Washington several years ago to find something comparable. Bottom Line: If you haven't been there lately, you haven't been there.

excellent food questionable staff
The food at this restaurant is fabulous, however the entire staff except the manager should be replaced to match the wonderful
menu. The manager needs to smile a little more and make you feel welcome.
Our daughter called to send a surprise bottle of wine to our table and the when the person answering the phone told my daughter
the manager would talk to her all he did was hand the phone to me to say we had a telephone call. He didn't ask her why she was
calling. She was shocked to hear my voice and hung up.
The bus person who delivered our different servings knew more about how the these dishes were prepared. This restaurant will
be a huge success if they can hire correct people to match the wonderful food!

interesting food and wine pairings
many interesting food pairings with wines and that seemed to be what most people ordered. noisy for the setting; the music could have been in the background but wasn't. unusual ingredients combined to make interesting dishes which were beautifully presented. interesting and reasonably priced tasting menu. noticed many many wait-staff but a second offering of rolls was never offered to anyone; when the butter dish was empty, it remained that way. i had to ask for our water glasses to be refilled.

We dined at One, yes dined, one does not just eat at One. We enjoyed Thanksgiving dinner with family and it was out of this world.
The sommelier was knowledgable and friendly as usual for this restaurant. It is trendy and elegant which is difficult to achieve. Dressy or your best jeans will do. We dined at One for Mother's Day last year and the food was also amazing. Best salmon ever.

Third times the charm
Well they finally got it right.. After 2 terrible experiences at One the new ownership has turned this place around. Attentive and FRIENDLY staff made it enjoyable from the get go.. But the food is why I recommend this place..I don't talk about specific entrees or desserts I'll let you decide for yourselves but my entree was great as well as my wife's. Dessert fabulous also great wine list Innovative flavors and presentation . I'm glad we gave it another chance.

Suggestions to restaurant:
Elaborate on food descriptions on menu. Using tablet with photos similar to wine list would showcase chefs creations and allow diners to appreciate all menu items rather than asking wait staff to explain ALL items

Great and unique dining experience
My wife and I went here for her birthday, and it couldn't have been better. The food was delicious and very unique. There were many different and fun flavors that I've never had before. It's the kind of place that can make food I normally don't like very good. We will certainly be coming back.
