The food was exquisite, and that comment comes 48 hours after eating at The French Laundry! The sommelier was fantastic and his wine pairing recommendations were perfect. The restaurant staff could not have been better. We will definitely have dinner (and stay) here during our next trip to Carmel-by-the-sea!

I spend a lot of time in Japan and quickly saw the influences on this talented chef. The experience was as excellent as, maybe even better, than French Laundry. The service is impeccable. The ambiance perfect. What a special spot! We had the tasting menu with the wine pairings. Knowledgeable sommelier, extensive wine list.

The creativity of the chef is matched only by the charm and expertise of the sommelier. The chef's tasting menu is a fantastic experience; it's expensive but this was one of the most memorable meals we have ever had.

Pleased but less than expected...
A non-alcoholic beverage was ordered along with a glass of wine, and not brought to the table until the glass of wine had been consumed. When asked if we wanted coffee with our dessert we stated yes, but the coffee was not brought until the dessert had been finished. Japanese beef priced at $32.00 per ounce was not any tastier or less grainy than one would would normally expect at a restaurant of this quality. Overall the food was excellent!! Servers were pleasant, very personable, and explained each course very well.

Adventurous Wine Pairing
We opted for the chef's tasting menu and the sommelier wine pairing. I was pleasantly surprised with things that are uncommon but familiar to me like Pinot Meunier in red wine form. I was welcomed into new territory with ingredients like sea urchin, osau iraty, hato mugi and Viura. I loved 90% of what crossed my lips and remain perplexed by 10% of it. I consider this more of a success than if I'd loved 100%. I commend both the chef and sommelier for their exceptional, adventurous choices.

Such a beautiful experience
Such a beautiful experience and a great way to celebrate any special event. Did the tasting menu for $125. Highlights included abalone in a chicken & umeboshi broth with sea grapes and kelp, scallop and scallop roe steamed in its shell in a lemony broth. Each dish looked like a work of art and was so incredibly innovative...not to mention delicious. Great use of fresh local ingredients in both the food and decoration of each plate. Service was proper and attentive, but not stuffy or hovering. Larger parties are in a separate room from couples/small groups, making for an intimate atmosphere. Loved everything about this place!

Aubergine has a very small dining room (I believe it seats 18 over 8 tables) but this place proves that good things come in small packages. We were greeted by name at the door. The service is 5-Star all the way. The Sommelier discretely tastes every bottle of wine before serving it and the food is over the top. Extremely creative presentations and perfectly prepared and compared to other high end restaurants that offer 4-course meals, the pricing is quite reasonable. Definitely worth a visit for a special occaision (ours was an anniversary). We were even offered a chance to speak to the chef (in the kitchen) afterwards. This has to be the best restaurant in Carmel-by-the-sea.

More than a restaurant this is truly a foodie's experience. It is not suited for teenagers or children as they have a very limited menu and no adaptation. It is far from your typical fare and $$$$$$$$$
We thoroughly enjoyed it but will not return due to the expense.

An excellent adventure
My wife and I are fairly new to the full "chef's tasting" experience, but this was another good one. Great mix of tastes and textures and experiences, paired with great wine (had to go for both!). It's not cheap by any stretch of the imagination, but if you know that going in, then it's fine. The desserts seemed to just keep coming at the end (just fine by me!), with 2 "planned" deserts, a sweet-ish cheese dish, a chef's "thank you" extra dessert and small Madelines. The Fois Gras was excellent and also the first time I had it, the breads were fresh and delicious, the red meat servings interesting (including lamb tongue), and the tasting was overall a nice tour of flavors (and three hours long!).

Are you a foodie? If yes, then this place is for you. My husband, 4.5 yr old daughter and I visited Aubergine over the 4th of July holiday in Carmel. Why doesn't this restaurant have any Michelin stars? It certainly should - it is that good. I will say that probably our daughter is the only 4 yr old there in quite some time - certainly not a kid friendly place but she was fine plugged into her iPad. They kindly made her some plain noodles and chicken breast. Both my husband and I had the 4-course tasting + cheese tray. Wish we'd had time for the 8-course. Unfortunately, the 2nd course (for me - asparagus, hubby chose lobster) was a missed opportunity. Still, we'd go back in a heartbeat.

There's something different about Aubergine. Perhaps it's Chef Justin Cogley's enthusiasm for his work or Sommelier Marin Nadalin's skilled orchestration of the dining room, but whatever it is, Aubergine stands out above any of the other fine dining establishments I've had the fortune to sample recently. While Aubergine does create menus from fresh, sustainable and mostly local ingredients, the culinary team doesn't count on this to bring people in the door. Creative and inventive without resorting to gimmicks, this place is worth a trip.

This was our second time at Aubergine, since it reopened in January. It exceeded our expectations and the food and service were both superior. Our dining experience far exceeded the last time we dined at either Gary Danko or the French Laundry. Aubergine is clearly going to be one of the premier Greater SF Bay Area restaurants.

Everything is THAT good
With a steep fee at booking for day-of cancellations, you may not form the warmest first impression of Aubergine. Get over it. The food, the service, the ambiance—everything is THAT good. It starts with the by-name greetings from, well, just about everyone and carries through the unhurried pace of the meal. Chef Cogley makes food into an adventure. Don’t get caught up in how you think you want your fish done; just let the man cook for you. (DO identify any dietary restrictions in your party, as he can accommodate brilliantly.) We found the wine list well-chosen but the mark-up seemed excessive, so we brought our own bottle. No problems there, either. In all, we look forward to the next occasion worthy of an Aubergine evening.

A world class dining experience
We had an amazing dining experience here, on par with some of the best we've had anywhere, including French Laundry, Garry Denko and Kokari in San Francisco. We had the 8 course chef's tasting menu, which was worth every penny of the $125 price. Every dish was perfect, with abalone, foi gras and sea urchin roe being the best of the best. The chocolate brownie dessert was a solid epilogue although without the 'wow' factor of the other dishes but by then we were completely stuffed. The service was also world class, starting with the front of the house, where we were greeted by our first names and taken to a specially prepared side by side seating table and finished off with the waiter who knew every dish intimately. Spectacular.

The menu deserves the Sommelier's Wine Pairing accompaniment. It made the meal complete. If you're going to spend the money to go there, you owe it to yourself. They did a fabulous job.

Bottom line: every dish is exquisitely presented and delicious, but portions are microscopic and pretentiously presented. Example: gazpacho "deconstructed" consists of a two-inch by two-inch portion of food which does not resemble anything you've ever thought of as "gazpacho", nestled into the corner of a 12-inch by 6-inch plate. Some kind of Japanese beef is offered at $39 per ounce, four ounce minimum. But the smoked chocolate mousse topped by corn ice cream (yes, CORN ice cream) and corn silk is to die for. Warning to those who are not antique car afficionados: do NOT eat here during the annual "antique car show festival" unless you like clueless antique car fans gunning their antique engines in your ear during dinner.

Every little detail from the warm welcome to the tiniest ( and very delicious) detail on your plate has been thought out and we so appreciated it. There were two tasting menus... One of four courses and one of eight with choices on the four course option. There was also the opportunity to add in some very special Kobe beef and some abalone which we did with pleasure. We enjoyed the descriptions of how certain items are prepared by the knowledgeable staff ( seared at 1000 degrees on a Japanese Grill, bathed in sake, seared again to caramelize the sake then wrapped in seaweed) for the beef....some fun elements too - the ' stones' that were chocolate mint bites for example! So many other details but only 12 characters left on this review!

Wonderful food & service
Our experience at Aubergine was simply wonderful. The food was not only a work of art to look at but the tastes were sublime. The service from the staff was on par with the food. The staff was very attentive but not so much as to disrupt our dinner conversation. The only one slight disappointment was the quality of wine in the sommelier wine pairing. The wine was okay, but for the price paid, the quality was just not there. Overall, we would visit Aubergine again - without a doubt!

I would not consider myself
I would not consider myself a foodie, but do enjoy a good meal. The food here was incredible - although well above the price range I would usually go to. We both did the 8 course meal tasting menu, which had a great variety of foods, including the abalone, which was unbelievable. We also had a wine pairing, which made me, for the first time, truly appreciate how wine can be paired with food - the flavors meshed beautifully. Great experience for very special occasions, price is a bit prohibitive otherwise.

Michelin star worth restaurant
The whole experience at the restaurant was very nice, from the welcoming to the finish. The servers were knowledgeable of what they were serving us and answered any questions we had without hesitation. We had dined at a 2 star Michelin restaurant 2 nights before and I can honestly say that this restaurant was much better than the other one (food, service, atmosphere).

This restaurant tops the list of truly special restaurants in the Carmel area (with prices to match, by the way - and well worth the price if you really want to splurge).

Fantastic Carmel dining experience
This restaurant allows a choice of 2 tasting menus. Our group went with the Chef's tasting, which provides the ingredients the chrf will use, but no other description of what you will receive from the kitchen. We were delighted with each dish that came out to our table and also enjoyed the wine recommendations Nathaniel made. Service was spectacular. A very expensive evening, but we enjoyed every minute of it.

Wedding Night Dinner
My husband and I had a very intimate elopement and followed it up with dinner at Aubergine. It was truly remarkable. The food was outstanding, the service impeccable. We were more than taken care of. Aubergine was the perfect place to commemorate the moment.

Incredible dinner...all time best!
This was one of the all time BEST dinners we have ever had...ever! We were celebrating a special anniversary and the chef and staff went beyond in creating an incredible meal with paired wines. The food presentation was outstanding, along with the creative infusions of flavors and the artistry on the plates. Even the plates/ceramics are exquisite presenting each course.

A wonderfully experience
We were visiting the Monterey area from the East Coast and were looking for a special dining experience. Aubergine did not disappoint. We've been to The French Laundry, Restaurant at Meadowood, Inn at Little Washington, and Per Se and this place was right up there with them. The culinary Team and staff did a great job with a creative menu and excellent wine pairings. Service was attentive and friendly, answering all our questions about the various food courses and wine.
We opted for the tasting menu which was superb. This is not an inexpensive restaurant and with various optional add ons and wine pairing, a dinner for two could approach a grand. But, it was a special experience and one we would repeat if we were n the area again.
