We've been going to HC for a couple of years and always have a good time. Being from central TX, I've always come here for the blue bell ice cream and authentic bbq when I'm missing home. This time, the food was perfect, service from all areas friendly and genuine ... And you just can't get any better. Thanks for keeping it real.

Loud, fun BBQ place in Flatiron District. Great (I am sure) for younger folks in the evening (with music, too). For us, a fun lunch with great food. No service (beyond drinks that is). Line up, order meats; line up, order sides; line up, order deserts. All paper, no plates. Foods -- brisket in particular -- is tops. Fun food-filled lunch. Wouldn't want to try it in the evening, however.

Always a great experience! It is great for groups, especially when people want to pay their own way because of the cafeteria setup. It is also great for groups because of the family style portions.

Brisket worth having
It's fantastic for a quick lunch. If you're in a hurry, the order at the counter system was just perfect. As quick as fast food, but much more delicious (and expensive, I guess). The moist (fatty) brisket lives up to its reputation. The vinegar-y cucumber salad balances it nicely. I went at lunch, and it was not very busy, so a nice, quiet place to have a talk.

After trying the beans (with burnt ends!) I said, "These make me want to go back [to the kitchen] and kiss someone!" The sides (beans, sweet potatoes and mac'n'cheese) were more mind-blowing than the meat, but it was very good. My husband loved the brisket, but was less impressed by the chicken.
Excellent customer service: staff was friendly and attentive.

Great rustic BBQ in NYC
A lot of fun especially when the music gets going. We loved a birthday party we had here and would certainly come back for the great meats!

Downhome barbecue in New York City
When you walk into Hill Country you forget you are in New York City. Sitting at a wooden table and drinking from mason jars, we enjoyed pouring over the menu of options - options, that is, of what meats we wanted and in what quantities. The Pitmaster is a great deal and a great way to try out several things. We each ordered differently and shared side dishes among the three of us. All the meats were juicy, perfectly cooked, served casually on butcher paper by weight, and simply delicious. I hope the barbecue smell never leaves my clothing. PS Top Chef Celebrity Ty-Lor Boring was behind the counter.

Got there for my birthday
Got there for my birthday with my wife and daughter and it was great. I got moist brisket, bbq pork and beef ribs and chicken ! loved it.

Albeit a bit loud, It was so great to have amazing bbq and sides, all the sides were so tasty (tried: sw potatoes, reg potatoes, collards, green beans, cornbread, mac and cheese...)! ancho honey butter for cornbread to die for-
And they have bbq turkey! very hard to find!
Having struggled a lot attending birthdays where the bill is split evenly even when two people share a dish or someone orders a lot of drinks, it was so much easier to allow for folks to get and pay for exactly what they want/need-
No veggie protein option apart from cheese (the mac and cheese is tasty!) and no option for greens w/o bacon- so definitely not a place for vegans and iffy for vegetarians...

Best BBQ in New York
This may be the best BBQ restaurant I have been to anywhere. The food is consistently good. The service is friendly and the ambience is spot-on for the business they are. Once you try it you won't want to go anywhere else.

NYC is not wanting for restaurants, including BBQ. I checked this out for the first time due mainly to proximity to prior business meeting. Better than dinosaur and less precious than Blue Smoke. Brisket is awesome and sides are hearty (although coleslaw was a little soupy). Inside is unassuming and staff is very pleasant.

Great BBQ but expensive
I was very impressed with the bbq and liked the fun atmosphere and ordering system. You order by the pound, which seems to be the norm now in NYC but this was the first place to adopt the Texas style. Brisket, beef ribs, and pork ribs were all delicious. The sides were also very well done specifically the mac and cheese, corn pudding, and sweet potato mash. Beware though that your bill can get pretty high since everything is charged by weight.

Great night out with the guys
The food is great, some of the best BBQ around. Fantastic short ribs and brisket. The market-style setup makes for a fun and informal atmosphere. At the end the bill was surprisingly modest.

REAL Texas-style barbecue in NYC
Hill Country is perfect for those of us who'd rather eat delicious brisket and ribs off wax paper than filet on fine china. You order by the pound, pick your delicious sides and go to work at spartan wood tables stocked with sauces and rolls of paper towels. They do an all-you-can-eat night on Mondays, which is a fantastic value.
Add a few Shiner Bocks and some great blues and outlaw country tunes playin in the background and you've got a slice of Heaven...or at least Abilene!!

Ordered a platter for 4 and the chicken was the highlight. The brisket and ribs were both very good as well. Really didn't like the conceit of standing on line to get your food. Charging extra for moist brisket was excessive.
Overall, I enjoyed it, but it wasn't a must repeat.

Head for the Hills
A rare BBQ joint that gets it right north of the Mason /Dickson line . Great food , fun but loud atmosphere and a reasonable price make this a winner in Manhattan . Went with my family for our Canadian thanksgiving dinner and we all really enjoyed it . I own 3 smokers , so Texas BBQ is a passion of mine ,and though Lockharts is the real deal , the pit guys at Hill Country really do some very tasty smoking . Loved the downstairs with the live music . I'll be back for sure .

Casual and fun
Super energetic crowd, enjoy the family-style dining, and it feels just like Texas. Bring a big appetite because there's a lot to eat with your eyes and you will go home stuffed to the brim!

BBQ at its best
Great food and atmosphere. Daughter, normally a vegetarian, specifically requested we go to Hill Country for her birthday. It's that good. Recommend a Margarita with a slice Serrano chili to start it off. Try a selection of BBQ items and share sides.

Serve yourself, eat the best!
Hill Country was one of the first straight-from-the-hills (think Austin and thereabouts) pit barbecue restaurants to open in the city. It started a wave of imitations. In a loft-like, two levels, HC has always been one or two steps above everyone else. The meat served here is truly spectacular; the sides are well-conceived; and the desserts are gourmet quality but include Blue Bonnet ice cream and red velvet and peanut butter cupcakes. It is down-home cooking done right. From pork chops to prime rib, chicken to sausages, the world's best brisket (always get the moist) Hill Country is exceptional along with offering live music several nights a week featuring everything from blue grass to the sounds of Grand Ole Opry. It's always a blast.

Super yummy BBQ

A Little Bit of Texas in NYC
This is a nice simple place to get a good meal. Reservations suggested, especially for dinner, Lunch may be a better bet, as the noise level is a little lower and it is easier to move through the serving area. When ordering, it is important to remember to save room for dessert. The banana pudding is a great finish to a tangy BBQ meal. Love the service! I have eaten here about a 1/2 dozen times and have yet to have a bad experience with anyone.

BBQ with attitude
My wife and I visited the restaurant as part of a week long trip to NYC. Easily the best meal we ate and a great atmosphere. Brilliant fun and would recommend to anyone who loves meat!

Excellent barbeque and great music
Just like every country and western bar you've seen in the movies! Loads of barbeque food - all excellent and sold by weight so eat what you want: brisket, ribs (which were amazing), chicken, sausages etc. Gorgeous side dishes including campfire baked beans with burnt ends, mac and cheese and cornbread.
Craft beers and lagers on tap, all served in a mason jar to keep the home style country feeling going served by chatty and friendly staff.
Live music most nights, we watched a great blues and bluegrass duo from Portland who really made the atmosphere come alive!
Just go - but make sure you're hungry.

BBQ as you like it
For those that do like Texan BBQ and a meat-feast, this is the place to go and the side-dishes are also great. Not to forget the seasonal cobbler, which easily 'feeds' three. Waiters are very friendly.
To be recommended. Can be noisy, depending on how packed the place is. It you don't reserve in advance you might have to wait for 45 minutes but if you are not too hungry you can easily spend the time with a drink aor two at the bar.

Always a great experience
Always a great experience at HC. We had six people in our group and each couple had their own food (but we all shared as well). The casual nature of the restaurant is also a nice break from some of the typical upscale restaurants. Love the choice of meats and the sides are great as well.

True Texas BBQ in NYC
Ive had the best BBQ that Atlanta, Dallas/Ft. Worth and Kansas City have to offer and this did very well against those BBQ shrines.
The meat was moist and flavorful--didn't need sauce at all, though it was available in both sweet and hot. The rib was fall-off-the-bone tender and the burnt ends were outrageous. Couple that with a fresh, hot corn muffin and a nice peppery side of collard greens and your hankering is solved.

my first visit to Hill Country.
my first visit to Hill Country. I had been skeptical until a Texas transplant assured me this was the real deal. No fancy pretense here, just big portions, dished up home-style all with a good humor. Hill Country serves the biggest pork ribs that I've ever seen , tender and srpakling with flavor and the Texas ribs are as big as all outdoors. Prime rib was fork-tender and brisket was lean and flavorful. So pull up a glass of real Texas beer (Shiner) load up your plate and enjoy this winner!

:D 2nd time here and it was awesome. The green bean casserole and moist brisket were delicious. Pork ribs were good too but not outstanding. Went with 2 friends and we were there talkign for a while haha. Did get a couple of stares from waitress but it was fine. She was nice and brought us a dessert tray. All the waiters/waitresses were really attentive and energetic.

Great BBQ at Hill Country - very cool, since the food is already bbq'd and ready to go - you just go and grab what you want. So - if you have a reservation, there's almost no waiting to get in or for the food! Fun, family style too - so everyone can have some of everything.

Best Thanksgiving Meal in Years!
From mountain sized portions of succulent smoked meats, to extra generous helpings of sides; New York City's Hill Country BBQ is unbeatable, heck untouchable! The food was absolutely amazing, ever get tired of going out to eat and having that feeling you could do better at home? No way with Hill Country their food is to die for, everyone should experience this place. I am originally from Louisiana where cooking is culture, and I can honestly say that Hill Country's BBQ is the best Thanksgiving meal I have ever had (don't tell my wife and mom that haha). Seriously though you can't go wrong with this place.

Wonderful as usual
I just LOVE Hill Country , even more so now that I have tried other BBQ restaurants in New York . The Beef ribs are my favourite & the coleslaw & cucumber salad go perfectly with the salty crisp meat. I dream of this place when I am hungry !
