We were in Milwaukee for one
We were in Milwaukee for one evening, and had selected two possible dining options. At our hotel, we mentioned this and everybody said that while Rumpus Room was great, Hinterland was more unique. We decided to give it a try and had one of the better meals we've ever had. We arrived early to have a cocktail at the bar (would have happily hung out here - the bartenders were great!), then moved into the dining room. The menu changes almost nightly from what I understand, and the hardest part of the menu was to not order everything. We ended up with halibut cheeks, veal heart oscar, antelope, and duck testes (how can you not order them if they're there?!?) - everything was outstanding, as was the dessert! We would definitely go back!

What amazing food!
This New Yorker in Milwaukee drooled over the imaginative wonderful menu. And then the food outdid the menu's wonderful promise. I can't wait to go back to Milwaukee.

I liked the decor and ambience
I liked the decor and ambience --- use of birch branches with the brick and wood beams. Good food and very accommodating for sharing plates and tasting an array of foods. Everything except the Korean short ribs were great. The flavor was great, but they were very rare and tough. The meat should easily have come off the bone ( I sent them back w/no improvement). Good service! Music was a little to loud for comfortable conversation; good jazz would add to the ambience.

We brought a friend visiting from Boston to Hinterland who had wanted to experience what Milwaukee had to offer in terms of locally brewed beers. We wanted to accompany the beer tasting with a great atmosphere and excellent food. Hinterland hit the mark on all levels!

Great graduation dinner
I brought my family here for my son's college graduation celebration. Our server made the evening very special and the food was fantastic. I highly recommend this for anyone who likes excellent food in an interesting setting. Although we don't live in the Milwaukee area, we will plan to be back whenever possible.

Great dining experience!
It was the best dining experience we have had since we ate at a four-star gourmet restaurant in Las Vegas several years ago but in a more relaxed atmosphere. I ordered the IPA and my wife the Stout - both were quite good. For appetizers we had the Braunsweiger - just excellent and made in-house, the Ramps covered with a Duck's egg - also very good, and I ordered the Opah Cheek - also quite good. My wife ordered the Flat Iron steak (medium rare) for her entrée - it was fantastic! I ordered the Cobia - it was quite good, but I wished I had ordered the Elk steak. Dessert was the Chocolate Pot Cake - it was awesome. I also ordered a glass of the Muscat wine - the first time I've seen this on a wine menu in over twenty years - it was great!

Small plate thrills
The entrees sounded delicious but this being our first time here we opted for having several small plates.
No dissapointments - creative use of local products (local - YEAH!), great flavors, beer samplers, and a pleasant staff made this an absolute winner.
Food here was made with love and it showed. :-D

Always a great experience. The Hinterland Brewery in Green Bay makes fantastic craft style beers. The menu is always fresh and unique. Service can't be beat.

Downtown dinning week
Only had a few items to choose from but they were all amazingly good. Service was quick, reservation was easy to make and confirm. Only draw back was the Mobil site didnt have access to open table I had to use a computer.

Very pleasant evening
We went there for Downtown Dining week, which is a great time to check out a new place, although the menu is limited during that event. We chose the lamb and the salad as first courses and both were very good. My husband chose the char entree which was also very good, I chose the flank steak which I would not recommend. The raspberry dessert was good but the chocolate dessert was so amazing that I would return just to have it again.
Our server was excellent, even though she was fairly new.
The atmosphere was impressive and I especially appreciated that we had reasonable space between the tables.
My only complaint would be the $10 valet charge, when most restaurants in the area charge $5.

We had to schedule a late time for our 2nd Anniversary dinner and they were more than accommodating. The food was absolutely delicious. It was our first time going, as we've always wanted to try it and it lived up to expectations and more!

Hinterland is an exceptional restaurant but is geared more towards clients who prefer meat dishes. Our food was fantastic, and always has been. Adventurous eaters would be pleased with the meat and fish selections but vegetarians may need to make special requests of the chef and vegans would probably want to find a different place to dine. Our most recent visit was for six adults. Every plate was delicious, from appetizers to the main meal. We did order dessert (and have on past visits, too) but desserts are "hit and miss". We will definitely be back and will recommend this restaurant to friends and family.

Food was pretty good...
The menu looks like a jumble of great ideas that don't blend too well together. Seems to me that if you ask the staff what the best restaurant in Milwaukee is they would say it's hinterland. Unfortunately this isn't the case. Definitely in the top ten though.

Excellent restaurant. Decor a chocolate blend of rustic and chic. Comfortable ambiance. Service was great. Informative, and attentive. We all had appetizers, and shared. seared quail on watermelon radish salad, salmon tartare, and bbq korean shortribs. All great. For dinner I had seared Halibut on a bed of fiddlehead ferns, oyster mushrooms and swept pea hummus. Fantastic blend of favors. My husband had the walleye, which he considers Wiconsins state fish. He said it was great. My daughter had the duck breast on seared cabbage and a potato croquette. Food came out of kitchen quickly and was well presented .

The food at the Hinterland was absolutely AMAZING! The Salmon from Alaska literally melted in my mouth. The presentation of the food was very impressive and the staff was very welcoming and attentive.

The food is amazing. We suggested this place to my parents when they were down to visit, and my father who likes to put additional salt and pepper on food said his had no need for it. He was very impressed by the preparation, and the nice blend of flavors. This a huge thing for him to not have a want or need to add any more seasoning. Extremely pleased with what we ordered. The other plus was our server. She was down to earth, polite, and very attentive. The dining area was very comfortable and love the design of the place.

We came to Hinterland in a Milwaukee trip from Madison. It had been recommended by a friend. She was not mistaken in her belief that we would enjoy it as well. We liked trying two small plates at a time. One vegetable and one meat. My favorites were the blistered peppers and the duck hearts. We skipped entrees in favor of trying many little bites. We will be back! Fantastic experience!

The menu changes daily, depending on what is available locally. There were many things on the menu that I never heard of, but the server was very good about explaining the menu; but it's not stuffy. They make their own sausages/bacon, try at least one charcuterie meat. We enjoyed braunschweiger paired with pickled asparagus, and pork cheek that melted in your mouth. We had steaks for an entree that were divine, delicious and cooked to perfection; the server explained they buy the whole animal and make their own cuts. Dessert was a light tasty ginger sponge cake with layers of white chocolate mousse and topped with cherry sauce. A lot of love goes into the food. The seating is a bit close, so you can't expect to have a private conversation.

Great bang for the buck
Coming from Chicago, we were pleasantly surprised by the low bill! Love that the menu rotates daily and incorporates foods of the season. We tried a number of the cocktails, all which were well done. The small plates lent themselves very nicely to sharing. The vegetable dishes we had were tastier than the meat dishes, all of which were slightly overcooked for our tastes. The ambiance was terrific. It's so nice to go to a restaurant where you don't hear the conversation of the table next to yours or have to scream to hear your dinner companions.

My girlfriend and I decided to go here for date night as we were attending a show at a nearby venue. We selected Hinterland because of its varied and changing menu. In fact, one of the items we were interested in - pan-seared duck testes - was no longer on the menu when we arrived. But since their menu changes frequently, and sometimes daily, they had a very interesting batch of plates for the evening. We decided on a beet salad, grilled kale, veal heart tartare, and pork belly. All were excellent, with the veal tartare and pork belly standing out. The food was prepared and presented wonderfully, and though they were not what might be called generous portions, they were certainly a good value and delicious. And the mixed drinks were great.

This restaurant was so good we went two nights running as we wanted to try more dishes. Menu is changed on a daily basis. We love vegetables and were delighted to find some many different dishes, but in no way is this a vegetarian restuarant, but just good cooking with locally sourced produce, and they are so good. Combinations of vegetables under the main dishes were amazing.
Decor is fabulous, minimilistic without being stark.

Great local food, relaxed
The atmosphere was low-key, and the server was funny and personable. The food was delicious with local finds and interesting flavor combinations, but it never seemed pretentious or stuffy. The wine list had more than enough choices to find something to pair well with the food, and the combination of small and large plates meant that I could go with my less-than-adventurous parents and everyone could find something they liked.

Bold, uncommon pairings + beer
Though I would love to be selfish and keep Hinterland all to myself, the multicultural approach to cooking and eating of Executive Chef Dan Van Rite and Sous Chef Paul Funk is too good to stay hidden for long. There’s no doubt a table at this Erie Street Gastropub will quickly become the hottest reservation in town. Exceptional food paired with a fantastic craft beer experience.

Creative and surprising!

We will be back
This was our first visit to Hinterland. Since it was our 31st anniversary, I hoped it would be good. It was. Drinks in the bar were great.
The food was delicious and priced right. Our charcuterie plate was fantastic. Our meals were wonderful. Monkfish and Elk tenderloin.
We will be back.

Chef Driven Culinary Surprise !
We had a great time on our first date. Excellent website and the ability to make online reservations. Upon arrival we were seated immediately and given time to order. Surprisingly, the server did not give us an overview of the menu or even ask us if it was our first time dining there. She could have made it more pleasant by simply asking questions, and intern turned into an order taker instead of a server.
Never the less, we paid attention to each other and enjoyed the food and ambiance. I could tell that a lot of thought was put into the menu and decor. Both complimented the experience and the dining room was full @ 8pm. I would recommend it for small parties and an intimate experience. We were both please with the evening and will return

Hinterland is great restaurant. Love going there, haven't been in a while and was not disappointed. Their fall menu was out as I know their menu changes all the time. The elk was rare and delicious, stuff quail amazing and coho fish to die for! Wanted to order the whole menu but couldn't, will definetly be back.

We always have fun here
We like to bring our 20-something kids here and we always have a great time sharing small plates and enjoying the beer list. Nice that you don't have to order all your small plates upfront and can decide what you want as you go. That shows good organization between the kitchen and the wait staff. One of the only places in town for sweetbreads which I love.

Delicious and very romantic
My husband and I went for our 5th wedding anniversary. We opted for a selection of the tapas and then split an entree. I loved the roasted brussel sprouts and the Underground charcuterie plate the most. The hangar steak was AMAZING! Our server, Erica, was wonderful and very helpful in explaining the menu.

1st time here was a winner
My husband and I spent a night in Milwaukee on a lark and decided to change things up from our usual dining picks. Hinterland sounded good on reviews and did not disappoint. The decor is understated and pleasing. We shared a cheese and cracker starter and a radicchio salad and both were very tasty. I enjoyed a smaller plate of korean bbq short ribs and my husband ordered the beef hanger steak. The flavors and presentation in both dishes were wonderful. The 'potted chocolate cake' was whimsical and delicious. Throughout the evening our server was attentive, friendly and knowledgable about the menu. It was refreshing to have excellent service without the scripted style that we encounter at some corporate places. We will surely be back.

Fantastic meal and service
My wife and I recently did the Spartan Sprint at Miller Park and were looking for dinner suggestions. I was able to get a later reservation at Hinterland and could not have been happier with the suggestion. The food and drinks were fantastic.
