FOOD IS UNBELIEVABLE!!
We have eaten at bluAqua several times and are still awed at the quality of the food and service. The vegetarian noodles with salmon was my all time favorite. The braised short ribs melt in your mouth. I love their selection of martinis too! I can't wait to go back.

Great Amherst gem
I've been to bluAqua 3 times. It's been very good all 3 times. Our waitress, Lauren, was awesome, friendly and knowledgeable w/r/t the menu, and the cocktails. She was attentive, but not overbearing. The calamari appetizer is probably the best I have ever had. The only downside to our last visit was that the food could have been served hotter, it was only warm. Our husbands had Shrimp Creole, my girlfriend had Vegetarian "noodles" with scallops, and I had the Tuna offering. We shared a chocolate and apricot torte for dessert - it was amazingly I good, could have inhaled the whole thing myself...

My wife and I go out quite a bit, so we have had plenty of opportunity to compare restaurants for the overall experience. Food is obviously tantamount, but with bluAqua you get it all; great food, somewhat different than the "usual fare" ,super wait staff, friendly, but not overbearing, attractive surroundings. We have made this one of our favorite places and we are sure you will agree and not be disappointed.

We enjoyed everything we had. The chef is French trained, but is from New Orleans. There are several New Orleans specialties on the menu. I enjoyed the shrimp creole served on risotto--an interesting and delicious twist on plain rice.

Gotta try it!
It's nice to find something a little different in New Hampshire - with a NOLA flair! Food was terrific but remember that it's French inspired so the dishes tend to be smaller and it's all about the presentation. The restaurant is in an out of the way location, but worth the trip!

good food slow service
Really happy to have a restaurant with better quality of food in our area. Unfortunately their staffing has not kept up with their popularity. Was there on a busy Friday night with family, including a 5 and 8 year old. They were very good with accommodating our request for a plain burger for one of the kids (the other kid had the tuna tartar nachos and devoured it). Sadly the service was so slow that the 5 year old fell asleep at the table before the burger even arrived, I too was nearly done in before my food arrived. Luckily everyone was thrilled with everything they ordered.

Best dining I've found in this area
Fine dining that you don't have to drive to Boston.
Very reasonable pricing.
Outstanding Tuna tartare for my app. There are a few New Orleans style dishes. My wife got the Jambalaya, and it was amazing.
I got the Scallop Risotto with root vegetables,which complemented the dish.
I made a point to compliment the chief and owner.
