Great food and service!
The food is absolutely outstanding. I had the aged strip steak with some little halved roasted potatoes and asparagus that was all just wonderful. It was salted heavier for my taste as I have reduced salt in my diet for years and am simply not used to it. My wife had a beautiful thick piece of salmon that unfortunately she had sent back to the kitchen as it was undercooked. I almost gave 4 stars for the food due to this mistake, but I do believe it is a rare occurrence.

Wonderful meal. We went with the tasting menu and each course was unique and delicious. The three savory and one sweet course were a good sized portion, and we ended up boxing up a portion of the last savory course to go. We will definitely go back if in the area.

Had the restaurant week 3-course
Had the restaurant week 3-course $35/person dinner on the 2nd night of restaurant week. Asparagus and spring green salad with goat cheese and prosciutto tasted like spring. The asparagus was cooked perfectly and the lemony dressing complimented the whipped goat cheese and smoky prosciutto. Chicken breast main course with artichokes and fingerling potatoes was amazing. Chicken was well-seasoned and extremely moist and served over a creamy sauce that was a little salty, but fit well with the plate. Artichokes were a little sour for my taste, but were well prepared. Cheese plate was a little heavy with a large block of very strong bleu cheese, but the candied walnuts and smear of honey balanced the taste of the cheese.

Excellent food and service
First visit to Pistou. Had a reservation for 4 and when we arrived, we were greeted by Emily who apologized that our table wasn't quite ready.. As soon as our table opened up, we were seated and told about the prix fixe menu (corn vestoule or grilled asparagus with either hanger steak or roasted Misty Knoll Farms chicken that evening). We were also told about the other additions and given some recommendations by our waiter (house made ricotta and grilled baby octopus were the two recommended). All the food was excellent and done precisely as it should have been. Our only complain, which we voiced to the waiter was the heavy use of salt. Great wine selection, although a bit pricey for Burlington. Definitely recommend the place.

Extensive wine list....you are going to find stuff here that you will be hard pressed to find elsewhere in the Chittenden County area. The menu offerings are few, but what they do offer is really, really, really good.

From out of town, so found on internet. Healthy, fresh, creative cuisine. Our waiter helped choose some lovely wine, and we enjoyed being in a new environment. An observation: Many of the guests seemed to know each other, so Pistou cultivates a small town atmosphere with a bistro setting.
Definitely a do over when back in Burlington!

Everything about the evening was highly satisfactory. From the moment we entered, the service was attentive and completely professional. The menu choices were appealing, and the food was delicious. Both the wine and dessert were adventures, and happy surprises. We are eager to return, and will consider making a special trip to Burlington (2 hours away) to dine at Pistou. Great Dining Experience!
My partner and I headed to Pistou to celebrate both of our birthdays. It was my second visit, but his first. We enjoyed having the semi pre-set menu options, so we did not need to think too hard about what we were going to have. I settled on an appetizer of Smoked Sturgeon with celery root and fennel which was absolutely AMAZING! My second dish was Seared Halibut which was very tasty, but I think I enjoyed his steak a bit more as the flavors of the steak were eclectic and rich. We ended the evening with both the Goat Cheese Pannacotta and the flavorful Parsnip. Both were extremely tasty! Our server gave a wonderful wine recommendation of Beaujolais Blanc to go with my fish. Thank you for such an amazing experience! We will be back!

A great little restaurant that take food seriously at all levels: appearance, aroma, taste, and texture. The limited menu may force you to try something that is new to you, but put yourself in their capable hands and enjoy. The best restaurant in Vermont.

Incredible food, kind service. This place is not fancy or pretentious. They do their thing at a very high level without being snooty or braggy about it. The salmon and the pork belly were both transformative experiences, and the desserts were incredible.

Tuesday is date night.
And we always go out for dinner. I don't have much time left in this city, and the only eatery in Burlington's $$$$ category that I have any interest in patronizing is Pistou. We went on a Tuesday during Jazz week and the place was empty. Our waiter was wonderful, very helpful as well as warm and friendly. The wine buyer overheard our questions about the extensive wine list and shared with us a white wine made in the style of a red. Very interesting. We ordered off the Prix Fixe menu and if you were to ask my date if I enjoyed the food she would respond, "He only said 'This food/wine is amazing' around twelve times during the course of meal". The food was delicious and well presented. The service was excellent. Bar menu next time.

The menu is short, but everything
The menu is short, but everything was perfect! There were three options for each course and since there were two of us we ruled out the most most familiar. and enjoyed it all. Our biggest issue was that while being very well versed in New World wines, a french list is truly a foreign language. We talked with our server and came up with the perfect paring. Radish & butter appetizer took be back to my childhood. Pistou uses simple ingredients, but turns out impressive dishes. We will go back!

good food, ditch the chalkboard
I'm from out of town and the food would be great in any city. The price fixe was a fantastic deal. Really surprised it was so empty on a Friday night.
- I couldn't read the whole menu without walking across the restaurant. There is no excuse for not having a paper menu available on request.
- Wine service was poor and expensive.

Food was very good. Do arrive relatively early. The restaurant has a certain amount of dish and since the menu is "a l'ardoise", they ran out of choices rapidly. They were out of desserts for our table, the only one left was rice pudding.

Nice Burlington Discovery
We are new to Burlington and have not found the great food we are accustomed to in NYC. This was a very pleasant surprise. Though the menu is limited, everything was amazing, and the portions were not overwhelming. The bar choices are limited for drinks, but their wine selection was very nice. Highly recommended and we will definitely be returning.

At first,we were concerned that it only had Prix -Fixe. Padron Peppers, Wow! They were as good/better than those in Spain. We were willing to go back the next night just to eat these again. The pork belly was very flavorful and extremely tender. I am not a lover of fat, but I ate every bite of the smooth textured pork. I ordered the scallop. Normally, I would be concerned about the portion, but considering the quality of the food, I didn't mind in the least. It was soft and glistening, perfectly cooked and well seasoned. My husband ordered the tomato ricotta tart, which was a much larger portion and was equally outstanding. I ordered a chicken which was ridiculously tender, even the breast.. The hake was moist, fabulous fresh taste.

Local, fresh and delicious
I took my wife to Pistou for a birthday dinner. Our meal was delicious, the service was attentive, but not overbearing, the ambience was friendly and relaxing, and we had a great time. This is definitely a place to seek for those who are willing to go beyond the Church Street drag.

New Hope for Vermont Foodies
Pistou is a small and relatively new restaurant in Burlington. The classically trained chef, Max, presented some refreshing takes on old favorites: a lighter and more refined brandade, a delicious gazpacho with cucumber and burrata, and a maple-flavored panna-cotta. The restaurant scene in western Vermont is gaining momentum and Pistou will be among the leaders.

Pistou was a fun and enjoyable dinner. You really get the sense of a true "farm-to-table" concept here. Between the two of us we had 7 different dishes (prix fixe menu, an appetizer from the bar menu, and two desserts), and 5 of them were great. Appetizers were all fantastic. Our entrees were unimaginative; they consisted of a protein (cooked perfectly in both cases) and a mix of sauteed or roasted vegetables, which were clearly fresh and well prepared but didn't really come together as a dish that made sense. The plates needed something else to pull it all together. We had an outstanding dessert, which we didn't really expect and was a nice surprise. I would go back since the menu is always changing and most of the dinner was great.

This was my first time here. The concept described on their webpage sounded interesting, and I was intrigued to try it for myself.
First of all, the price for what you are getting, is a deal. Second, the food was amazing. Everything looked beautiful, and tasted even better. Even though I opted to have beer, their wine list is extensive.
Pistou is the best place I have had a meal in the state of Vermont.
Tasting this food reminded me why I cook.

Personal Service, Unique Food!
The small space of Pistou creates an intimate environment, not only for diners looking for a romantic or familial experience, but also for those who love the personal experience of great food served with care and attention. My group of 3 was smart enough to try the chef's tasting menu; what followed was a detailed journey into the chef's love of food; for days we recommended the restaurant to everyone who would listen. What a great find in northern Vermont. We will be back!

Great for Flynn events
My wife and I had dinner before a show, overall very good. French style portions, prix fixe 2-course dinner, my entree was not quite hot enough, but absolutely delicious. Panna Cotta desert was amazing.

Fantastic for the Foodie

Fresh and very well prepared. Service knowledgeable, pleasant, prompt. Ambiance pleasant and straightforward; a little dark for 60 year old eye, but not distracting as much as a detriment to an otherwise wonderful dinner. Very nice french wines.

Just an example: the Cod.
Why order such a fish in the heart of Vermont?
But il was so fresh: perfect. But the surprise was the cooking 'À l'unilatérale' which means only 'on one side'
So you get a crispy side and a full thickness of bright, moist and delicate flesh rather than 2 crispy sides with
a dry centre!
In entree the grilled octopus was terrific! Both with special seasoning...
This restaurant must retains his chef for a long time to go: the cooking of sea gems is not so easy...

A must for any Foodie
This place is a gem. We all ordered the Chef's Choice.. I highly recommend that . The wines were different ( very little California) but out standing and reasonably priced.

Best of Burlington
A friend who is a terrific chef in NYC worked with Max, the owner/head chef of Pistou, and she highly recommended his restaurant on our recent visit. It turned out to be the highlight of our trip. It was a freezing night and the restaurant was warm and welcoming before food came out. The set chef's menu was stellar, particularly the grilled octopus and kale caesar (don't yawn, this one's special!) salads and a stunning, buttery cacio e pepe. My salmon with fennel broth was hearty and a generous portion. The wine list is truly special, with rare, well-priced finds from Sicily and renegades from the Loire. Service is friendly and unpretentious, and the open kitchen, big windows, and dark den make it perfect for a comforting treat.

The Best Food in Burlington
Our trip to Pistou was outstanding. Every dish was delightful. We have eaten in numerous Michelin Star restaurants in Europe and the US and the food at Pistou compares well to any of these. The food stacks up to the best New York has to offer. The delicate flavors of vegetables are always enhanced by how they are prepared and what is served with them. The fish is perfectly cooked to keep it moist. While I don't like octopus, people rave about it. I prefer the homemade pasta -- on this occasion the cavatelli served with a lamb ragout. I would recommend the restaurant to anyone. Also, the wines are well selected and not expensive.

Uniquely special and delicious
I'd heard raves about Pistou for years and finally got there for a pre-Flynn Theatre concert dinner with a friend. The ambience was quiet, intimate and warm. The evening's menu had a wide range of delicious-sounding options. We decided to share two of the small plates and one entrée and weren't disappointed. The scallops and leeks, as well as the roasted cauliflower were wonderful and the duck with black rice, beets and Brussels sprouts was divine! In addition, the server's wine suggestion was excellent.

Amazing food, wondefully delighted~
We had tried to get into Pistou in May of 2013 after reading a wondeful review in Vermont magazine. Due to the number in our party and the fact that it was graduation weekend we were unsuccesful. On our recent trip we were more succesful, and we were very pleased. It was a little rough start but by the time we ordered a drink things seemed to flow better. When we walked in we were greeted but told someone would be right with us, it ws not crazy busy, but we were fine with it. We waited for a few minutes before the waitress came back to seat us. She walked us to our table and walked away, strange. We sat, and sat and sat, finally after 5 minutes our waiter appeared. The waitstaff seemed to struggle all night but the food was amazing!

Most pleasantly surprised
Heads Pistou; Tails .
We were lucky it fell on Heads.
We had one of the most pleasant and delicious meals in quite a while… and we're from Montreal.
Food was simply outstanding; the wine list is quite impressive for Burlington.
The portions were adequate; not huge, but what a reasonable person should eat.
The desert was creative, and also of the finest ingredients.
Decidedly, a place we recommend to anyone going through Burlington.

It is not often that one can try a squash gnocchi appetizer, a main dish of octopus tentacle or an eggplant with chocolate dessert and for this type of risk taking and creativity the chef must be complimented. The food is excellent and lovingly prepared though portions are small and choices (changes daily) are limited. Somewhat annoying is the fact that one is asked to order bread and butter for a $4 charge (albeit for the home churned butter) and a disquieting incident over wine took a bit away from the overall dining experience. Yet this is a neighborhood restaurant that should be supported for trying new approaches and unusual combinations and deserves to succeed.

Dinner Before Flynn Theater
My wife and I ate here prior to a Flynn show. It is convenient to the theater and we had excellent food, wine and service. We will make this a regular spot for dining. It was our first visit.
