The newly remodeled Paris Club - now Paris Club Bistro and Bar - is not the restaurant you remember. Where once raw concrete and exposed ventilation fashioned an expansive, industrial dining room is now a smaller, warmer, timeless environment that exudes a history much longer than its own. Oxblood-red leather booths. Rich dark wood paneling. Antique brass chandeliers. Vintage Paris. On the menu, gone are modern renderings of traditional French dishes packaged to please the masses. Instead, Chef Partner Doug Psaltis and Executive Chef Christian Eckmann have focused on execution, assembling a thoughtful menu of celebrated classics like Hand-cut Steak Tartare, Chateaubriand and Dover Sole Meunière. This is classic French cuisine.
