But it's also clear that ambiance is not to supersede food or service. With more than 40 years’ combined experience in a predominately country club setting, one might expect a creation from executive chef Jon Spencer, Alan “AJ” Jackson and Michael Spencer to be a bit more on the traditional side. But these chefs have cast off their country club restraints and are ready to soar to new culinary heights.
