From the coastland comes Pescado a la Veracruzana, a filet of red snapper in a sauce of tomatoes, chiles, olives, and capers. Venture into the heartland where you'll find more exotic dishes such as Pechuga de Pato, duck breast redolent with spices and mole, served with sweet potato puree.
