At Pie Town our motto is, “it’s all about the pizza!” When owner Pierre Bader, Executive Chef Bill Schutz, and J&W instructor and pizza expert Chef Peter Reinhart came together to discuss the vision of Pie Town, they all agreed the goal would be to create a fun, relaxed atmosphere, and to introduce creative “artisan” pizzas. How does artisan pizza differ from gourmet pizza? Unlike gourmet pizza, which focuses on the toppings, artisan pizza focuses first and foremost on the crust and then finishes it with excellent, farm fresh toppings. Our ingredients and toppings are sourced from a group of select local growers and farmers with whom Groody has cultivated relationships. Our pizzas are designed to be both crisp, with a slight, smoky char, yet have a creamy cornicione, baking in 2.5 to 3 minutes in the perfect stone hearth oven. None of this, however, comes together without the Pie Town Pizzaiolo, certified and trained by both Chefs Reinhart and Schutz.
