  • "Food overall was good, my wife's pork was a little dry and could have used some type of "sauce" to help with the dryness. The waiter was horrible, never introduced himself, didn't make any recommendations for us, brought us a warm bottle of white wine and was slow as well. It didn't appear as though he was a trainee because he wasn't tailing another waiter so if that's the case he needs some pointers from better waiters. Also, we were there for our anniversary and it was never even acknowledged until we were walking out the door by the hostess. In nicer restaurants, this never happens."

  • "Very surprised how expensive the Red Sage is. Food was good. My tenderloin was a little tough but was complimented a dessert for that problem. I must be strange, but my first opinion was negative because the menus were dirty. They serve the same items every day which is good with me. But I don't like opening the leather menu covers to see dirty paper. The dessert menu was even worse. Print out clean menus every days, please."

  • "My beef tenderloin was burnt on the outside and rather chewy. I had ordered it medium well. The waiter did try to make good on the steak and offered to cook me a new one, but then the rest of my party would either wait for my food while theirs got cold, or ate their food and I would eat alone. I opted for the free dessert. We've had significantly better steak for a fraction of the price."

  • "My husband and I stayed at Buffalo Thunder for a little stay-cation. We ate at Red Sage for his birthday. The menu had a good range of choices, and my husband chose the prix fix menu with a wine pairing. The food was good, nice portions. There were several wines by the glass and lots of bottles to choose from. The prices were on the high end for food as well as wine. We left the restaurant very full, but a little under-whelmed."

  • "We had been wanting to try Red Sage, thinking that Mark Miler was still involved. The menu was good - a bit pricey though. We thought that the wine list, which we learned was controlled by the Hilton was lacking in moderate Ca and NM wines. The markup on some of the wines was 2-3X which we thought was rather high. We would not dine there again, largely because despite the fact that it is nicely decorated, it is still a casino."

  • "We ate dinner here because we stayed at the hotel. We had a reservation at 6:45 and showed up 5 minutes early. The hostess said our reservation was at 7, even after I showed her my confirmation. She said they had just gotten busy with a large group & couldn't seat us (the dining room was virtually empty). I said ok if it makes a difference, we will just come back at 7, to which she said, oh it will be worse then, let me just seat you & you can order fast. We sat down & our server was great & attentive, & the food & bar services was just fine. Had she not made a scene at the hostess stand, our meal would have been great. Instead she gave us a weird , poor first impression that affected how we experienced our meal."

  • "This is a steakhouse in a resort. It was out of NY Strip steak on a Monday night at 7:00 pm, with very few diners. Also out of some starter options. Of course we were told this only after ordering drinks. My martini ordered 'up' had ice floating in it and tasted off. Maybe too much vermouth. Since there were only 3 other options for steak, I had tenderloin ($38) and my husband had porterhouse ($48). Both were ordered rare and came medium rare. We have eaten in a lot of steakhouses and this was the most disappointing meal we have had. Since this is a resort, they kind of have you trapped if you are contemplating fine dining. Next time we will take the the 15 minute drive into Santa Fe for better dining options."

Steak tough, desserts sub par; it was almost a totally different restaurant! Waiter forgot drinks, was running around with bottles of wine; very inattentive (Jose). We can only assume that it was the Hawaiian chef's night off."

  • "Too much activity and noise sat by kitchen. The server, Chris was not knowledgeable on the menu or drinks. Every dish we ate was horrible! The appetizer consisted of ONE small scallop served on chopped cantaloupe. The New York Strip Steak was a bad cut. Mostly fat, no flavor. My son ordered his medium rare, the steak was served rare, bloody rare. The server kept referring to the chef who we never saw in the kitchen. The steak was served with a baked potato that was still hard. We were not given an option to the toppings it came with. It came with bacon bites and a huge glop of sour cream. The worst was the desert. It was a graham cracker with a square of gelatin chocolate with two marshmallows, something that came off the buffet."

  • "I visited Red Sage on a Monday evening in February. The hostess wasn't the best and our 5:00 dinner reservations soon became 5:15PM and eventually 5:20 PM before we were seated. Our waiter, Thomas, was great! He was patient and always on top of getting whatever we needed. I ordered the 4 course dinner for $30 which was a complete steal! The salad and scallop courses were perfect in size. My 3rd course steak was huge and cooked very well with just the right amount of seasoning. By the dessert course, I was too full to finish. My dinner guests' meals were equally as good (the chicken and scallop selections). If you have a smaller appetite, consider sharing a dish with a friend. They serve a lot."

  • "We dined on Valentine's Day weekend. I wanted the New York Strip only to be told they were "out". I was a bit surprised thinking they'd order extra due to it being a busy weekend. I settled for the Beef Tenderloin and it was average at best. I ordered it medium rare and it was a bit dry, not tough but definitely not what I would call tender. My companion ordered the lobster and it was somewhat overdone making it seem dry and tough. Our sides of mashed potatoes and bacon brussel sprouts were very good. The house salad was great and the dressing was also very good. We skipped dessert. For the price I would say this restaurant is not worth the extra money."

  • "New years eve. Didn't want to drive so took chance on Red Sage in Hilton Buffalo Thunder Resort near Santa Fe. Prix fixe menu with wine pairings $98 per person, seemed reasonable price. Food was better than average (dessert was outstanding). Nice room, and very attentive service. Santa Fe has many much more interesting restaurants, which we enjoyed during our stay, but if you are staying at the hotel, the Red Sage is amgood option."

  • "We have eaten here a couple of times. The restaurant is pretty. Nice atmosphere. Good for either business or for a romantic dinner. The service has always been good. The bar has a really good selection of beers, including many craft beers, and liquor. The food is good, nothing weird or too little or too much, but nothing outstanding either. The only drawback: it is pricey."

Waiter basically let us sit for 15 minutes after the meal and never returned to our table. We had asked for the dessert menu, but were never given the opportunity to order from it. Our wait disappeared, We had to hunt him down. The restaurant wasn't that busy. This restaurant has a 3.5 star rating, 3.5 star prices and 0 points for service."

My beet salad was wonderful, my husband really liked the soup, but the entree (Short Ribs) were fatty beyond belief. The side dish we ordered never came. I sent back a slab of fat the size of a quarter pounder at McDonalds. We didn't stay for dessert just went to another bar in the building and had an after dinner drink."

  • "Red Sage resides within the Buffalo Thunder casino complex. It is not easy to find. You can't miss the casino but we had to stop and ask security where to go. Once inside (entering through the Hilton entrance), Red Sage is just off the main walkway. On this evening, the restaurant was occupied at only 3 or 4 tables but the bar was full with World Series viewers. Our booth was a little close to the bar and noise from that area was sometimes disturbingly. We chose for salads and then mains. Service was quick and precise. The food was cooked to order and served at a nice temperature. Quantities as well as the quality were very acceptable. The meat (USDA prime or buffalo) were of a higher quality than most restaurants. So overall, very good."
