A word from Raw Bar by Duncan Ly
Now coined Raw Bar by Duncan Ly, the makeover celebrates Executive Chef Duncan Ly’s Vietnamese background as well as his innovative interpretations of Vietnamese cuisine. Many recipes will be inspired by Chef Ly’s early upbringing but refined with his own personal flare based on his classical training and exposure to diverse culinary influences.

The new look and cuisine will pair nicely with Raw Bar’s reputation as one of the top cocktail lounges in the country. Since opening in 2006, Raw Bar has spearheaded Calgary’s cocktail culture, creating unique drinks and setting the gold standard for other bartenders to follow.

When summer returns in 2014, Raw Bar by Duncan Ly will add daytime hours and will service the poolside oasis at Hotel Arts.

  • "This was our first visit. We had the tasting menu. The food was inventive, creative, attractively presented and delicious, and the portions were generous. The service was warm, friendly and attentive. The manager(?) was circulating to greet and check on everyone, which I appreciate. And all of this for $35pp!! Outstanding value in my opinion. We will definitely be back, especially since the manager told us that the tasting menu will be changing soon. So you're not surprised - with the tasting menu, the first three courses arrive together, then the next three, then dessert. It works well, you can have more or less of one dish or another that way, it was just different than what I'm used to."

  • "Staff looks after you...always a smile and attention to detail... The food has achieved a great level of flavor geared towards the viet-modern style of cooking (not that I am an authority on that style of cooking but the flavors are there for sure!). Chef Ly has touched base on his own countries cooking roots and added his years of experience to bring the quality of cuisine to where it should be when dining out. Too often there are restaurants who do not achieve, in my opinion, the basic level of food quality that should be a standard. Chef Ly, in my opinion, has been peaking with his creativity and development of flavors for years and you can taste all of his hard work in every bite of food while dining at Raw Bar."

  • "I recently had dinner at Raw Bar by Duncan Ly and I think this is the best restaurant in Calgary hands down. The new menu is amazing and dining pool side on such a beautiful Summer's day was amazing. I was there with a group of girls and our waiter Joshua was so fantastic - even with our many Gluten free requests they accommodated everything with complete hospitality! The food was INCREDIBLE - Pad Thai is the best I've ever had, the Steam Buns were my new favorite dish, the Tofu was perfectly done. We also had the Sweet Potato Spring Rolls which were SO good and my friends loved the Tuna Tartar. We had a cocktail from the bar and it was both delicious AND visually beautiful! They must have a great mixologist! :) Will be back again for sure!"

  • "Let's start with the positives. Above all mango dessert was outstanding!! One of the best desserts I have EVER had! Second, our waitress had an exceptional knowledge of the menu. Between my friend and I, we had some crazy dietary restrictions and the waitress was amazing with pointing us in the right direction.(Impressed by the gluten free options) One of the negatives was the outside patio. The pool side dining would normally be a highlight, but because some ridiculously rowdy young men were hanging off their hotel room balconies above the patio, the ambiance was not the quiet bliss I was looking forward to. My only other negative was that the Lemon Grass Coconut Braised Chicken Curry had too much liquid not enough veg and chicken."

  • "Visited on the Saturday evening after Valentine's Day. They continued to offer the special tasting menu. All five courses were excellent and the service was impeccable. Great variety of designer cocktails. Recent update to the decor is an evolutionary improvement. Duncan came to our table side after the meal - we were celebrating our engagement 13 years ago at Catch (one of his previous stops in Calgary). Fantastic evening all around - thank you Duncan and the staff at Raw Bar!"

  • "Celebrated Valentines with my girl, modern room with house music. Lots of share plates with a Vietnamese, Chinese influence. Had the Beef Bun, Sweet and Sour Shrimp and the Sweet Potato Spring Rolls to start. Great execution and flavours. Mains - my girl had the Salmon and I had the Soy Noodle Bowl. Same thing here, my girl enjoyed the crispiness of the salmon skin and the rich flavours of the broth for the noodle dish was superb. We had a share plate of dessert and a glass of wine each and the bill was $110. Pretty hard to find value like this in DT Calgary. Highly recommended."

  • "The revised menu at Duncan Ly's Raw Bar is well worth a visit: the only difficult thing is trying to narrow down what to choose (and our server was able to provide several choices.) Live music made it a little difficult to hear everyone at the table, so if you are hoping to concentrate on your companions and not your food, you might want to find out if there is someone playing when you'll be there. Good thing we were too busy eating to spend too much time chatting, and the Hotel Arts provides seats in the lobby where we could catch up (and catch our breaths) after stuffing ourselves with several of the wonderful starters and the always delicious Pad Thai."

  • "We met up for a mid-week lunch at Raw Bar. We ended up sitting outside by the pool where our waitress made a great effort to find us a warm, sunny table. She was friendly, welcoming and helpful through our entire meal. We settled in for a tasty meal of beef "tacos" and a beef satay. The meal was tasty, filling but not spectacular aside from a really delicious apple-carrot soup and really nice coffee. The rock candy swizzle was a nice touch on the espresso. The view and the service were good enough to make us want to stay all day. A great experience overall."

  • "My wife and I had actually made reservations at another restaurant close by and left due to the service. We walked down to the Hotel Arts (Raw Bar), knowing that neither one of us had been there. We made a reservation on Open Table while walking over and were actually able to be seated early once we got there. Our server that evening was Chelsea, who was just amazing! We went from having a poor start to our evening, to having a wonderful time and Chelsea was a big part of our experience. Little did we know that the Raw Bar had a 99 cent oyster night on Fridays!!! Not to mention $19 bubbly to go with them...we will be back over and over again. Thanks for saving our evening!"
