Presentation was well done although the orders were slow to come to the table because of the "back-up" in the kitchen. Staff were quick to respond to their patron's needs ie. food required re-heating. The Pure Spirits Oyster House & Grill keeps that feeling going, with its ambience. Its modern culinary techniques complements the mood, providing diners with very tasty meals. It is understandably often very busy, which does slow the service somewhat. But it's fun to people watch and soak up the atmosphere while waiting. Online reservations are a nice touch. Our welcome was understated, to put it politely, but we were cheerfully waved goodbye when we left. Wait staff was attentive and friendly delivering each course with great timing. Wine list is a bit pricey, but the selection suggested went well with our meals. The black cod on the paella was buttery and and perfect balance to the salty chorizo sausage. These two proteins outshone the crab, which seemed unnecessary. My friend was over the moon at having octopus, an unusual entree, said it was tender, succulent and well seasoned - something he'd definitely have again. Vegetable accompaniments were unusual, but sooo delicious! After living in numerous coastal cities I was worries about the freshness of the seafood but the BC oysters on special were spot on, the tiger prawns were full of flavor and the calamari was made in tempura batter (panko breading) and had fresh chillies and scallions! All three starters were great. For mains I had the lobster mushroom truffle pasta and it was to die for. The flavours blended together to create a little bit of heaven and my bf had the grilled octopus which was beautifully presented and despite my wariness, really delicious. Our tradition is to try a new restaurant for our anniversary and we made a great choce this year. Came for oysters and were not disappointed; we also tried the seafood paella - also great. the weather allowed us to sit on the patio, a rustic spot for a leisurley paced evening with great food and wine. It is a quality restaurant, but not stuffy at all. Our server was knowledgable, and efficient, but the service was a bit slow, not her fault, it was the first night of having the patio open, and due to the lovely weather things with the kitchen and bar were backed up.
