Hotel Jerome's longstanding tradition of culinary excellence is showcased in a variety of restaurant options, each reflecting innovative, locally inspired menus that incorporate the freshest organic, natural and seasonal ingredients —a time-honored trademark of Auberge Resort restaurants.

>At the helm is Executive Chef, Rob Zack, who began his career at Aspen's Hotel Jerome nearly 20 years ago. He is vital in recreating new menus, inspired cuisine and unique restaurant experiences throughout the hotel as part of the renovation project.

With that said we are proud to introduce the latest addition to Aspen's renowned restaurant scene – Prospect, the fine dining culinary epicenter of the hotel. The Living Roomis also a new, relaxing and comfortable spot for small plates and cocktails. And the infamous JBar is still a cornerstone of Aspen's social fabric.

  • "Sitting outside on a summer evening in Aspen is special, there are so few that are warm enough. Luckily we had one and it was sublime. The outdoor dining at the Prospect (Hotel Jerome) is well appointed and elegant. It's just off Main St in Aspen, which is the busiest street in this little town, but far enough in their garden to be romantic and apart from the street noise. The gardens are green and lush. The food is very good and well presented. Not large portions, but adequate, order an appetizer or a salad or you may leave hungry. The prices are moderate and fair for Aspen. The menu is wide and should appeal to everyone, vegetarians alike. Everything was excellent and delicious, good service too. To me 5 stars means perfect and rare."

  • "Arrived and was seated. A waiter eventually arrived. He seemed distracted and irratated. He reluctantly asked us if we wanted a drink. I inquired about a specific tequila. Again he seemed annoyed and just stared at us. He offered no help. He left with a scowl on his face. He eventually returned with a drink list and just threw it down on the table and abruptly left. My girlfriend and I looked at each other in disbelief !! That was it, we got up and left. We will never return !!!"

  • "5 for dinner on a Sunday after a concert. Patio was lovely and almost empty...strange. Delicious cornbread gratis, spinach/ artichoke dip tasty. Lobster salad perfect...trout was too pink, too large- was it farm raised? And too fried..not an ideal preparation. Carrot " cupcake" and chocolate mousse cake to share were very tasty. Lovely wine list, friendly knowledgable staff."

  • "the outdoor setting and looking up at the mountain was beautiful but having to repour your own wine (repeatedly) while the waiter is sitting there talking to you is a bit ridiculous. the timing of the service was poor. One of the waitresses didn't understand a special request I made for my soup. It had to be sent back. I believe the party at the table next to us actually left without even paying their bill as their experience with the service was so abysmal. I would still recommend dining there for the ambiance and historical nature of the location:as the food itself was very good."

  • "We went to Prospect last Saturday night at 6pm and the food was great but the service was absolutely terrible. We were told that the kitchen was going to get slammed in a bit, so we should get out appetizer and salads together, then the entree and do it as a 2 course dinner -- because Tony Bennett was performing at 8:30 pm -- we were not going to the show. We agreed to this but during our first course out entree showed up in the middle and proceeded to get cold while we finished our salads. We informed a staff person (manager?) when he finally came over to fill my empty water glass (empty for quite some time) and he said it was because of Tony Bennett performing. No taking it back and keeping it warm. The waiter also misdescribed the Syrah."

  • "Great setting for eating outdoors. The service was efficient and friendly and recommendations were great. Only drawback is if the people in the pool are rowdy. The good was very good- fish cooked perfectly and nice portions. Cookie dessert was quite tasty and very rich."

The vegetarian options (which change throughout the year) are always creative and delicious. They have a great wine list with a super helpful som! They even have gluten free options on the dessert menu!"

  • "We dined here on Jan 2nd. Ridiculously poor service. Nice staff, just not professional. Maybe the "D-Team" was in due to the holiday week?? This is primetime for Aspen. Odd. The staff seemed chronically confused. Waiters wandered the room aimlessly with food, with no idea for whom it was intended. This happened so many times, it became a joke. Our cream of squash soup was lukewarm, which we were told was "intentional" and the way the chef likes it. We were told if we wanted warmer soup, they would make an exception and warm it up for us. Thanks. Entrees were ok. Everything else was so poor that we won't be back. Too many superb options in Aspen, it will take more than free valet parking on a cold night to save this mess of a place."

A big plus But they're offerings fell short of being great food I had the corn bread pancakes w/ bacon flavored jam First the pancakes were way too heavy and the bacon aired jam hard to take The sign up for reservation was convenient and wonderful But no one read the fact I brought three vegetarians I. My group. One of my vegetarians was served a meat meal and they had to take it back If they read my reservation and took it to heart they wouldn't have to give credit On the wrong meal served which is fix after the fact."

So, I was forced to eat a very expensive salad with no protein in it. I understand the hamburgers as well as the lobster salad are awesome..but that did not help me. Nice ambience but pricey."

  • "Wow,Auberge Resorts has made an impact. The new design of the room is beautiful. The menu offers many wonderful choices, not to mention a terrific bread basket. The pork chop was the best we have had in a month of dining in Aspen. The ribeye @ $49.00 was too small but good. The burrata with roasted beets, needed more roasted beets. For dessert, the 7 layer chocolate and salted caramel cake was delicious. The service staff is a work in progress. we had a waitress who took notes on orders and got them wrong, then, could not be found when we had another request, so we flagged down another server to place our dessert order- who told us he would pass our order along, as it was not his job! We are sure Auberge will up the training ."

The wine steward made excellent, cost conscious suggestions based on our tastes, allowing us to sample several suggestions before making a selection. Overall an outstanding dining experience."

  • "We went with friends, hoping to dine on the patio - which is beautiful!! But, alas, it was raining so we had to sit inside. Turned out to be a totally delightful experience! The ambiance was perfect, beautiful decor, lovely lighting, comfy seating and very friendly and helpful service. The wine sommelier was fanantastic! She helped us pick out a wine, and luckily for me she said if we don't like it we will try again - because I didn't like it. So, we tried again and the 2nd time was a charm!! The food was delicious, amazing and interesting. My husband and I both had the salmon - perfection!! My friend had the rib-eye. I don't eat meat, but had a bite and asked for another bite - so delicious! Finally, COCONUT CREAM PIE!!! WHOA!"

  • "waiter was obviously stressed, 50% of the orders were wrong when they came to the table. Didn't bring the appetizer first but with the 1st course, he didn't listed to the requests, vegetables were missing from one entry, salmon was not cooked to order, dressing was put on salad after requesting it on the side, featured lobster appetizer and cobb salad had so little lobster, it was nearly invisible. Disappointing"

  • "While the re-modeled and much improved inside dining room in the Hotel Jerome is very elegant, we chose to eat outside at one of their round umbrella tables since it was a lovely evening. Waiter was pleasant, but neglected to tell us about two changes to the accompaniments for one entree (menu said fries) and one dessert (menu said pineapple on the side, not the carmelized bananas that came with it). We began with the mini mason jar of bacon pimento cheese with flatbread which was very good. My spouse had the beef which was excellent and i had the local trout, also nicely prepared. Prices are high (many in Aspen are), but I would return for a special occasion."

  • "The food was excellent and the service professional and helpful. We shared the special appetizer, a boulainaise polenta which was rich but delicious. The beet salad with goat cheese and pine nuts was also devious and beautifully presented. The main course special, pan seared trout was perfectly prepared and beautifully presented. The only drawback was the noise level which was annoyingly loud. We would return again for the food and overall experience. The room has been redone and is beautiful, but the noise level keeps it from being a "10""

  • "The word seems not to have gotten out yet abt this new restaurant. There is quite a bit of competition in Aspen, but Prospect can match it. The dining room is very attractive and the food was excellent. My friends all had the extraordinarily huge pork loin entree and they did not stop raving about it! The sommelier Jill was knowledgeable, helpful and patient with our questions, and she directed us to some lovely wines. We very much enjoyed our dinner."
