A word from Perbacco
Sleek and modern with one foot firmly in the Old World is the feeling at Perbacco. The restaurant boasts a brick wall original to the historic 1913 Hind building, with other touches such as a bar top and floor tiles made from white Carrara marble. With 16 seats at the bar and 7 more intimate tables, Perbacco creates an atmosphere for a glass of wine or a light bite. Perbacco also features 2 dining rooms, one on the main floor and a smaller one on the Mezzanine, which has the added allure of serving as "theater", with windows to watch all the action in the kitchen below.
Chef Staffan Terje strives to cook the finest food reflecting the Italian regions of Piemonte and Liguria. Handcrafted, house-made salami, prosciutto and other meats are featured at the salumi bar. Filled pastas, a tradition in Piemonte, range from the traditional ravioli to the more exotic agnolotti. Main courses feature traditional dishes such as Bollito Misto and milk-braised pork shoulder with Savoy cabbage.

Not only is the food delicious, but the service is also excellent. The owner is seriously intent on surveying how well the clientele is enjoying the food and service. It is wonderful to see him, dressed in suit and tie, circulating throughout the restaurant throughout the evening, watching and appraising the waitstaff, the dishes, the wines, the diners' faces, the state of the table. It shows in every aspect, from the kitchen to the busboys.

It was so noisy and crowded that the server didn't hear one of the menu items ordered. It took about an hour for the appetizer and the missed menu item to arrive. Service was very slow, they were very busy, my water glass was never refilled, the butter was taken at some point, and the overall meal lasted 3 1/2 hours. While I was meeting an old friend and we had lots to catch up on, it became exhausting to sit there for so long.

We have been fans of this restaurant for years, but recently, there seem to have been some recipes changes. The usually good beef rib pasta was too heavy and rich. This restaurant really had the formula: delicate pasta with subtly spiced sauces. What happened?

We had a nice dinner, nice ambience and great service but honesty I was not "wowed" by the food. I was expecting more from the reviews I'd heard. My cocktail, a classic negroni, was beautifully prepared and tasted perfect however the risotto was just okay, the brussels sprouts a little too hard to my liking but more than anything they were boring. The presentation uninspired and not enough of the savory compliment of capers and shallots to meld with the flavor of the brussels sprouts. The main course of red wine braised short rib was again a little boring. The beef was tender but that's all. Lovely time with my friends and very good service but I expected more... sorry.

We went here for our 30th anniversary and as a result of noting that in our reservation, we got a congratulations card from the restaurant and a lovely plat of meringue cookies with Happy Anniversary written on the plate at the end of our meal. Two very nice touches. We had a great meal and enjoyed the good but not stuffy service. We split a very small but delicious salad, had a great scallop entree and butternut squash cannelonii that I thought was only OK (the only thing that was not great) and two fabulous desserts.

After a strong start several years ago, I am really disappointed with where the quality now resides. Unbalanced flavors and texture issues which make the ingredients nearly indistinguishable. Service was far below par and seemingly acknowledged by our server who waived the corkage fee. That was the best part of the meal. Actually we are sad to have decided never to go back.

The pear and persimmon salad was fabulous, the orecchiette with veal sugo was superb and the brussels sprouts were yummy, but the short ribs with gianduja & hazelnut crust was over the top spectacular. And then, just in case there hadn't been enough of a party in my mouth, we had what they call a salted dark chocolate bonet. When told it was a mousse we almost didn't get it... that would have been a big mistake. Mousse is hardly the word for the pot de creme rich, thick, salted "bonet" over the almond cake which had soaked up vanilla crema and golden caramel. The entire meal was wonderful and the lovely server made the evening perfect.

I had high expectations for this place after reading reviews and Perbacco exceeded expectations! Wow - love this place! We started with the tomato salad and it was good. We shared the duck gnocchi at our lovely waitress's recommendation and it was out of this world. For mains, we had the scallops with cashews - amazing and cooked to perfection; and the veal medallions which were equally as great. Dessert was beautiful and soooo good! We shared the lemon panna cotta and almond cake with pomegranate. So many layers of flavour executed to perfection. Our waitress was great too, honest and helpful and knows the menu well to recommend sharing so we ordered right. San Fran is a long ways from Calgary but this place is worth a return trip!

I've been here twice now and both the food and drinks have been wonderful both times. The hamachi appetizer was very fresh and the Tajarin (pork ragu over tagliatelle) is lick-your-plate-good. When I made reservations, I mentioned it was our anniversary and it would be great if they could seat us in a nice table. When we were seated, it was a nice table, and there was a card from the restaurant wishing us happy anniversary. Then they brought a desert at the end of our meal, without prompting, that had Happy Anniversary beautifully scripted in chocolate on the plat with the desert. And again, I just mentioned the anniversary in passing...wonderful surprise. Food was excellent and wonderful presentation, I would recommend the scallops if they have it on the menu, they were incredible. Service was just right, always there when we needed help, left us alone otherwise. We live 800 miles away, but will certainly be back!

This never happens, some thing is off, some thing does not work. Well, never say never. EVERYTHING was RIGHT about our wonderful dinner at Perbacco on Oct. 4. Unbeknownst to the waiter our husband and I were celebrating our 44th anniversary and I was expecting a decent experience having dined before with friends years ago. Our dinner went way beyond decent into sublime. The appetizers, plum salad and tuna with veal, the two pastas, and the sides of beans and cauliflower have to be eaten to be understood just how complex, favorable and downright delicious they are. The cookie that accompanied our verbena gelato was baked by an Angel...just heavenly! The waiter was extremely professional, the service impeccable. Perfection? YES!

Knowing my wife was going to be a bit late, I called the restaurant on her behalf telling them she would be a bit late--a 2:15 reservation-and was told that they had to be there before 2:30. No further comment was given. She arrived just before 2:30 and was arrogantly told that they had one minute to order, had issues getting drinks, etc and actually got up and went to the door, quite upset after rushing to get to the restaurant. A manager met them and made an attempt to diffuse the situation that never should have happened at a high end restaurant. Once seated again, staff took good care and the food was superb. So guess the restaurant must be much more clear and have substantially better customer service to go with the superb food.
