Very attentive staff and down to earth but not overbearing. Head waiter already knew of our food allergies as we had told them when confirming reservations. Never felt rushed. Can get very expensive if you opt for the various supplements. Wine list is on an iPad and is 175 pages that range from a $75 half bottle to a $30,000 bottle. We were very pampered by the wait staff, and they were very knowledgeable, we had a few questions about the food, they were able to answer on spot without having to check with the kitchen.
The one thing I wish I had known before I went was that the Tasting Menu came with petit fours and chocolates and a lot of other delicate desserts. By the end of it we even have to turn down a few wonderful offers since there is such thing as too many good things. As a new dining experience, any first-time patron settles into the chair, glances around at the view and leans into the drink order. Champagne was ordered and the service started and continued to be stiffly formal throughout the rest of the evening, never catering to our table's personality from the onset. Attentive but missteps occurred as wine glasses remained empty far too long.

Amuse des bouches were light and appealing. The salt presentation of 6 different types alongside the foie gras was superfluous, better to offer a few choices that are dramatically different. Who can tell me that Utah Salt is better than Fleur de Sel?

Once we'd gotten a course or two into the tasting menu, every trace of that concern had faded into complete irrelevance.
Bites ranged from hearty and merely absolutely excellent to a few of those transcendent food experiences you'll remember for years.
I'll always be happy with the former; if I'm treated to even one of the latter, I count myself lucky. The food is wonderful. Some unorthodox sounding compilations of flavours on the menu turned into an amazing sensory experience on the palate. This is a Three Michelin Star restaurant and it is easy to see why. Each plate presented perfectly, and the interesting little morsels served here and there in the meal made for great taste surprises.

Every course was picture perfece and extremely tasty. It was pure theater! I loved the baby veggies (radish, carrot). Compared to the dinner menu this is a steal, at 5-plates it was the perfect pre-theater amount of food and we couldn't imagine having another 4. The service was outstanding, they make you feel like you are the only one in the restaurant. Incredible views of Central Park from the Time Warner Building. There just was no other place I opened my bag so I had to hv lost it at per se. Other than that the evening was superlative although we found the food much heavier than the French Laundry experienced 3 weeks earlier. The desserts and extra sweet dishes were SO lovely that it seemed a crime not to be able to eat them as we were SO full. James was a psychic, he knew what he needed before asking, such as my obsession with ice and little ottomans for our purses. Alexandra and Theresa were so sweet in answering all of our questions.A couple in our group were late and the staff was so nice about it. It is supposed to be 9 courses but they bring you other goodies. There aren't enough characters for me to get into the chocolates, just wow. Per Se is not a gem but a treasure. The flowers, the decor, the ambiance were all supreme. It is worth the time, travel and money.
