The service this second time was a little less fabulous than last time but the food and atmosphere totally made up for it. The entrée that we had ("Molcajelte") was simply outstanding (we would definitely order this again - they offer three varieties of this dish and it is served in a Mexican mortar, lava rock vessel hot out of the oven!)
Ambience was colorful, well lit and pleasant with large heavy wood tables to enjoy your meal. I introduced a Russian friend to more authentic and gourmet Mexican food and she fell in love with the Chiles en Nogada, while I had the Tlacoyos, native to the Mexico City area which is completely different to my North Mexican home town. We also had the chips and different salsas along with Queso Fundido with Rajas and freshly made corn tortillas. Excellent fresh Mexican food, which is difficult to find in Denver. So many Mexican places are SO average, wonder how they stay in business. They have great margaritas, home made chips/salsa/guac/beans/tortillas. Plus was easy to get a table and park at 7pm on Saturday night (not for long!). Thought the combination of very good Mexican food plus a non-stuffy/expensive atmosphere (like Tamayo) was great. Food is excellent, very authentic and some unique dishes. Margaritas are fantastic, especially the mango with jalapeño. Guac is made table side to your preference. Service the first time, on a crazy busy Saturday night, was really slow and spotty. This time we dined earlier and everything was great. Since the guacamole is made table side, the wait for it depends on how busy they are. Both times it showed up just minutes before meal. Staff need to communicate this to diners to let them know. We knew what to expect, having been before, but they really should tell people. I have recommended and introduced several people to Paxia and they've all been very impressed. I was immediately impressed with the restaurant itself; clean and vibrant. Although the food and the staff was what put it over the top for me. I have been bragging about Paxia to friends and family for a while so for my brothers 45th birthday, this was my restraunt of choice. After moving to Colorado, I have been hard pressed to find high quality Mexican cuisine that has not fallen victim to the green chili / Texan /New Mexican scourge that seems to be prevalent here in Denver. At Paxia - you don't have any "smothered" options.
Instead, we have a delightful ambiance and decor, with dishes that pay homage to regional Mexican cuisine - but are substantially updated and modern, and presented wonderfully.
