So what I want to complain about is the dessert. It was some kind of chocolate cake in small tiny square pieces with maple crunch on top.accompanied by maple ice cream in tiny square pieces on the same plate. I ended up having 3 glasses of red with dinner and 2 different desert wines. The problem was that I don't eat fish and the chef said he was happy to accomodate me but instead of finding suitable substitutes while my wife had snow crab and scallop and fish i just got the same dishes without the protein. Even the waiter snickered/laughed under his breath when presenting my third course asparagus plate. I saw a bone marrow accompaniment at another table that went with a beef dish I didn't get to have and they did bring me that free of charge, but only because I asked specifically for it. The one meet I did have, veal, was dry. There were plenty of choices on the Brunch menu so it was fine for the four of us.
The table settings are beautiful and the ambience is very nice. It was not very busy the day we were there.
We ordered mimosas and we wanted to sit and relax a bit before ordering but the server kept coming
over and over trying to get us to order. She was very business like with few smiles.
The food was delicious. I had the salmon on potato waffles and there was enough to feed a family of four. The beef tartare
was very tasty but again enough to feed four people.

The building is restored from the 17-18th century and it's gorgeous! Be prepared to drop some serious $$ for dinner...with drinks and dessert ...$275 before tip. I would definitely go back & recommend if you don't mind spending the $$. For appetizers we ordered the cauliflower & snow crab. Main course - scallops and lobster. Dessert - chocolate and maple. We also had breakfast there which was about $50. The maple crepes, amazing and so is the Panache. Service could have been a little more attentive. But, they were very friendly so we didn't mind. Some of the tables are a too close together which we didn't like but they gladly sat us where we wanted.5/26/2013 12:00:00 AMOutstanding dinning experience!This restaurant was already reputable thoughout Québec and we've experienced another reputable ones from Boulud in New York and Vancouver but this one tops it off for sure!!!
There is a cost though for excellence, and one must be advise to be able to pay at least 150$/ pers. But this was overall our very best restaurant experience EVER!

To say this surpassed every other experience we have had would be an understatement. This was a most imaginative, intriguing pairing of tastes, both within the food combinations and the wine pairings, not at all predictable but brilliant.
The service was equally Impeccible. You never waited for a course but were never rushed. The wait staff enjoyed describing the food, and the sommelier was passionate about the wines.
As can be expected, it is very pricey. We were surprise when we saw on our credit account we were factured two times the same night at these restaurant. The director explained us these practice is usual. I said to him that's was the first time for us and we were upset about this practice.
