The Palm Court Grill also continues to uphold another estimable tradition: the Crab Louis salad, created and made famous nearly a century ago by Chef Edward Mathieu and loaded with tender Dungeness crab, is still served according to the original recipe — with, of course, a dash of contemporary spice.
