A word from Pallet
Pallet is a new and entirely refreshing extension of Salt Lake’s downtown dining circuit. Marked by a chef-inspired menu that is imaginative, elegant and simple, Pallet’s timeless design and smart vibe make an ideal setting for your next culinary experience. Located in a restored brick building built in 1901, the restaurant’s name pays homage to its roots; for many years it served as a busy loading dock for Salt Lake Valley’s first creamery.

Pallet’s menu is a clever take on casual fine dining, with choice ingredients and inventive creations, such as Sweet-Beet Salad with Goat-Cheese Mousse, and Scallops with barley, stone fruit and salted caramel. Pallet is a unique and complete dining experience, from the incredible food to the impeccable service, design, music and company. Make your reservation, and take a bite.

Second time to Pallet and it was better than the first! Loved the winter menu (pork belly, mussels, chicken liver; entrees with sea bass, scallops, pheasant). Very helpful bartender; well-coordinated team of servers. Definitely going back.

The food was delicious, but portions were very small for price. (@5-6 oz of lamb, 7 green beans and 3 baby potatoes for $28) My friend fared better with a salad and appetizer. Salad was generous and fresh. Prices on 3 and 5 oz wine pours were scandalous. Their signature cocktails were intriguing, again $$. I enjoyed one instead of wine, which I would customarily order. The interior was meant to be moody but was only dark as a tomb. I had read so much recently about SLC chefs to watch and was really looking forward to this meal.

I have been to Pallet a couple of times in since it opened and I have never been disappointed with the food. This time was no exception. The cioppino was FANTASTIC and I really wish they had an entree portion. The seafood was cooked perfectly and the grilled bread was delicious. We ordered the short rib ravioli and the trout gnocchi. The short rib was very tender, but the ravioli pasta was a little thick and the sauce needed a bit of seasoning. Still very enjoyable. The gnocchi was the highlight though. Soft and tender and really great sauce. The thing that could have been better about the visit was the fact that we had a 7:30 PM reservation and we weren't seated until 8:00 PM. It seemed that they were having difficulty with reservations as there was another group that came in after us that had made their reservation directly with the restaurant and the manager had no record of it. In the end everyone was accommodated, but it was a frustrating. One item to note, if you are going to Pallet on a date or with a significant other and want a romantic experience be sure to note it on the reservation. We were at the communal table and occasionally it was difficult to hear. We could very easily hear the conversation of the couple next to us :) Over all a wonderful experience and I will definitely be back!

If you don't mind a really noisy room, the food is well done. Best sea scallops I've had in a long time. The service is excellent and attentive, the ambience appropriately kitchy industrial, which is what accounts for excessive noise levels and a lower overall experience rating. Glad we went early before the theater.

We tried Pallet on the advice of a co-worker who lives in Kentucky. He said he'd visit Salt Lake City again just to eat at Pallet. After trying it, I agree completely. My wife and I--not huge eaters so we always share--started with the gnocchi pillows which were very nice. We then had the Chilean sea bass. It was, by a long long way, the absolute best fish I've ever had. Served on a bed of potatoes and caramelized onions, it was moist and flaky and buttery and light. I'll dream about it for a long time to come. We finished off with the shortbread which I found too chocolatey but it's quite popular so make your own call there. The ambiance was slightly off-putting. Very dark in there but the food made it all worthwhile.

Food is overpriced for the quality. The deconstructed desserts are dry and unpleasant to eat. The entrees were well prepared, but in our group of 8, two meals arrived 10 minutes after all the others--so the kitchen has timing issues. We ate early in the evening--before 6 pm. Cocktails and appetizers were very good, arrived quickly. Reservations was an ugly process. The recording tells you to use Open Table or the eatpallet.com website. Neither were working properly, so I couldn't get a timely reservation and the hostess was not very helpful in getting things squared away. 20% forced gratuity for poor service isn't my idea of a "must repeat this experience" for a party of 8.

Good spot for downtown dining, close to Gateway and more upscale. Service was good, tables a bit too close to each other but not terrible unless the restaurant is full. Octopus app was amazing, mains were plentiful and ok. Fish was a bit overdone in special but still a nice flavor and variety.

Visiting SLC 2x/month from the Northeast, it is a struggle to find great food in a setting without pretences. Pallet delivers an outstanding environment with an awesome diverse selection (without overwhelming you on choices) that are clean-the-plate/let-me-sample-what-you-are-eating delicious. Service is unhurried, so it allowed for us to gather in a comfortable (not too formal, not too casual) setting without feeling rushed. Only one hiccup was that five of our party of six were served their main course and we had to wait a good five minutes before the last person in our party was served (and they ordered the same this as another two in our party)...the downside of "unhurried" service I suppose. On balance "Outstanding!" and a "Do Over".

Amazing food. Divine scallops. Phenomenal Mahi Mahi. Outstanding Grouper special. The steak was just okay - pretty fatty cut. The restaurant itself is small but comfortable and a warm feeling. Service was slow, but the waitress was nice. We ordered wine and it took 15 minutes to make it to the table. I would go back for the amazing entrees but would hope for quicker service.

Took my husband for his birthday. I was pleasantly surprised by the prices (not bad for a special occasion dinner). We went early and it was nice, but did get quite loud by the end of our visit. The food was good, and inventive, though my ravioli was overly sweet. Wine suggestions were good, and on point. Service was fine. But lacking in the kind of warmth and friendliness I'd expect from such a place.

Small but tasteful menu (short for vegetarians) with well prepared and presented seasonal foods. Substantial appetizer list relative to the entrees--could dine on those as small plates. I had the beet salad and scallops, very well prepared and plated. Good wine list and cocktail offerings--didn't test the bartender with an off-menu classic cocktail, but I will next time. Nice visuals and atmosphere, not too loud, but it's not a place to have an intimate meal--seating is on top of each other, with little space for private conversations, and not particularly comfortable where I was on the window bench. Better for groups. Wait staff is excellent--well trained and just the right amount of attention. Definitely a return trip in the future.

I had heard good things about Pallet from a Salt Lake native so we decided to try it out during Dine Around. The place was packed (which is always a good sign). 3 of us ordered off the prix fixe menu and one ordered ala carte. The cocktails were pretty good. The food was quite ordinary. I had the asparagus salad which consisted of shaved asparagus and not a lot of dressing. Main course was Bison short rib which was overcooked to the point of being dry. Dessert was peaches and Panna cotta. The PM was not too sweet which didn't appeal to me. Final verdict - I may go back once more when it's not Dine Around. But there are loads of places to try out so it might take a while.

Great food however less than stellar service. Took over five minutes to get water after seated and over ten minutes to get drinks after ordered. We had to ask the server to take our food order and when it arrived, only four of the five entrees were placed. At least 3 - 4 minutes before the fifth entrée was brought out. (I realize that is a kitchen issue.) I booked the reservation on line an indicated we were there for a birthday celebration. No mention whatsoever from any of your staff. I indicated above I would dine with you again and I will based on the quality of food. If service is only fair again, not sure I will return.

We sat outside where the weather was perfect and it was a nice quiet dinner. Inside, it is noisy, no question, hard to have a conversation, but outside is perfect. A reasonable wine list as well. Dinner was fantastic, the octopus starter is amazing, highly recommend it. Enjoy
