Palace Arms at the Brown PalaceA history of good foodI enjoyed dining at Palace Arms and would recommend it to anyone! The food was good, but the service and ambiance were fantastic! I especially enjoyed their preparation of Caesar salad at my table...and that's saying a lot...since I don't really like Caesar salad...I guess I've just never had it prepared fresh. I didn't find out until I got there, but apparently Brown Palace has a long history behind it. They offered some information on the Brown Palace history to read if you wished. It was interesting. Service was great. These folks are pros, not always coming back and asking how everything is, which is VERY annoying.

The staff is friendly and helpful, recommendations are spot on, and there's a lack of pretension that we appreciated. I had the foie gras torchon, which was on a circle of brioche with kumquot marmalade and pickled shallots. It was delicious. It was my first time eating foie gras and it exceeded my expectations. The star attraction with out meal was the "Rossini" with the 7oz bison. It was phenomenal. All day today I walked around and remembered how delicious that course was - perhaps the most memorable dish I've ever had.

And what is great about the palace arms is how they have been able to continuously update and modernize the menu while maintaining the traditional entrees and table side preparation we as a family love. The waitstaff makes you feel like they really enjoy taking care of you without being intrusive or stuffy. The entrees were perfectly prepared and tasty and our girls loved the Caesar salad. The waitstaff told us that if there is a particular entree we would like next time to call ahead and they will have it ready.
