Only local ingredients. Service is very good, attentive without being overbearing. Wine list is ok; wines by glass are a good option. Specialty cocktails are always good. Wine list was amazing, and not at all over-priced (less than 200% mark-up, which is rare for fine dining). The gnocchi was a little green (little sauce and came with snap peas, peas and asparagus), but other than that I'd say it was very good to outstanding. The ambiance is somewhat rustic with candlelight for dinner hours. Our chilled rhubarb soup was refreshing and interesting. Our lamb and pork were cooked precisely to order with a lovely wine pairing. We ended the meal with delicious ginger cheesecake and pressed coffee. I had the gnocchi and it was like comfort food to me. My father had the soup of the day and it tasted so fresh, not full of sodium. Their tea selection was impressive as well! The quality is fabulous and while they don't have two dozen entree choices, every one of them we've had was memorable. Wine list is another plus with the 3 and 5 oz pours available for almost everything. Top all this off with excellent service and access to reservations through Open Table. Loved the pork tenderloin and side of succotash (fava beans and rock shrimp in coconut sauce), less impressed with the lamb ... though the side (artichoke heart and vegetables) was flavorful and satisfying. Had the bread pudding dessert - very sweet (ice-cream and caramel), perhaps too sweet for us. Next time we'll try the flour-less chocolate cake. One drawback: a homeless man came in the restaurant and approached us for money. I was a bit shocked that the service staff just watched and did nothing to kindly intervene and escort the man from our table even after making eye contact with them. Our server, Jeff, was attentive and friendly, and the sommelier, Evan, was knowledgeable and professional. We have been celebrating our anniversary for the last three years at Pago, and this year we unfortunately were seated by the door at a 2 person table, on a weekday night. Friendly staff greeted us at the door. The ample wine list had great variety in style, region, and price (although mostly on the higher end of the price spectrum). Our server, after providing some assistance in this area then proceeded to bring over the sommelier without even being asked to do so - and he, a former assistant wine maker at Quivira, brought over 2 bottles that were similar to our initial choice and allowed us to refine our choice even more. Perfect. The food (Trout and Lamb, and a side of "Squash Hash") was excellent - inventive and perfectly prepared. Nice sized portions, too. The food is fresh and local and the servers are very versed on what is being offered and how it's prepared. Makes for a very easy and enjoyable dining experience.
