Paco’s Tacos & Tequila offers big Texas flavor in Charlotte’s SouthPark neighborhood. FS Food Group founder Frank Scibelli traveled Texas with Tex-Mex culinary expert and cookbook author Robb Walsh in order to uncover the secrets of authentic Tex-Mex recipes, and the attention to detail shines through in the bold flavors of each dish. A variety of spices that season Paco’s dishes are imported from a Texas-based company, and a tortilla machine creates fresh tortillas daily.

From the Wood-Fired Grilled Fajitas to the Cheese Enchiladas with chili con carne, Paco’s menu showcases the freshest quality ingredients.   • "While the guacamole is wonderful, I ordered the vegetable enchiladas. The was probably less than half a cup of vegetables spread among three enchiladas and no spinach was in the wrap as noted in the menu. Very disappointing. It was essentially a corn tortilla with sauce."

Our server was friendly and almost too attentive, stopping by very often. Restaurant was quite loud too, so hard to hear my date. We had a call to confirm out reservation and it was very strict - you must arrive within 15m of reservation and all of your party must be present. When we arrived, mt date had a strbx water and the hostess was quite direct asking what was in the cup and stated that he would have to throw it out. It was just very awkward. Went home full and felt that way for about 12 hours, ick."

  • "A couple friends and I celebrated a birthday at Paco's recently. We had to wait a bit for our reservation because of the busy-ness (forgot it was Restaurant Week). As usual, the food was incredibly delicious....so much so that we stuffed ourselves and left with stomachaches! The guacamole - made fresh to order table side - is always a favorite, and the tacos really are amazing. I always enjoy the brisket one, although the grilled fish taco is a close second favorite. If we'd had any room left, we would have ordered a piece of the tres leches cake - it's giant and the BEST I've ever tasted!! Paco's never disappoints when it comes to awesome tex-mex food with a flair."

At Paco's we got a margarita, queso dip; salad or guacamole, or app; and a main course (I had three original Paco's Tacos with shredded steak), plus dessert. I think you want some noise, but the level of noise is a bit much, just too many hard surfaces. If you are visiting Paco's for the first time, I highly recommend their sampler where you can try a few different items - each more delicious than the next! We love their wide assortment of tacos, but this time my husband tried their chimichanga. It was huge, great tasting and very filling. I tried their taco salad and it was really, really good. I was willing to provide some concessions, as one of the two waitstaff was training that afternoon, but it seemed to almost be competitive among the two staff. Regardless, the meal we had was with friends, we were not in a rush, and the food was delicious. Certainly not enough to deter me from going back, but enough to make me write a review about my inconsistent experience."

We always have great, attentive service, and we never have to wait when we make our reservations with OpenTable. The food is delicious, and I always try a new taco every time I'm there. The guac is second to none, and the salsa among the best I've had. I know the salsa is a little thing, and it's free with your meal, but it's the little things that make a Tex-Mex restaurant experience good, and they nailed it. I would always recommend Paco's to our friends, and we often take them there for dinner when they visit."

  • "My wife and I have been to Mexico +/- 50 times and visit different cities each year. This was our first time at Paco Taco. We had the brisket tacos and while not necessarily authentic, they were outstanding in flavor, quantity and presentation. The meat was actually shredded rather than ground (yuk). Mexican chefs NEVER serve GROUND meat. The rice dish while tasty, was cool by the time it arrived. The charro beans were very good. The tequila list was exceptional. In a place like that, we often drink the best tequilas instead of wine with dinner. John was our server. We would not have guessed he was new on the job had he not told us. He did well. Lots of families with children there. We'll go again."
