A word from PABU
Founded by Michael Mina and Ken Tominaga of Hana Sushi, PABU is modelled on traditional Japanese drinking establishments and takes it name from the Japanese phonetic translation of “pub.” We honour this inspiration with an extensive beverage menu featuring Asian beers and wines, Asian-inspired cocktails, and a list of more than 100 sakes.   • "Our waiter was easily half of the great experience at Pabu; he was engaging, knowledgeable, attentive and funny. Pabu has obviously taken great care to train their waitstaff--the others we engaged with were also extremely knowledgeable. Above, I checked off notable wine list, but it really should read notable sake list; there is an unbelievable number of sakes on it. We had the tasting menu and found some interesting new tastes--burdock root being one of them (not on the menu--a surprise to our waiter also.) The chicken wings and short ribs were exceptional. Pabu is not your average Japanese restaurant!"

  • "We were greeted on arrival and was escorted to our table immediately. I would highly recommend making reservations. The service was exceptional.I ordered 2 Hot small plates 2 Robatayaki &Ken's roll. I ordered only 2 plates at a time as I wasn't sure how my parents would enjoy this type of cuisine. Our waitress was very friendly and made recommendations and did not pressurize us to order more at any point in time! I have been to restaurants wherein they have insisted I order at least 4 small plates to begin with & would not leave the table until I did!! But here, there was no pressure and they bring out one plate at a time. Cocktails were fabulous. I loved the super X and the Katsura. They also have a tasting menu which looked really good."

  • "Heard such good things but got the feel of a Chinese Buffet or something rather than a nice restaurant. Menu had few selections- few roll selections after Reading how wonderful sushi was:) Server was polite but of little help when it came To bridging the gap of small selection and guest Desires. Rolls were small and average when came to taste. Not the worse dining experience ever but I don't Feel the need to ever go back."

  • "Getting in an out of the restaurant was an issue. It took 5-10 minutes to valet the car and 10 minutes for the valet to get the car when we left. And we had to drive separately so this service cost $20 before we even had a cocktail. That said, the food was very good and our cocktails were made perfectly. You shouldn't leave without getting the country ribs. They were worth the tip alone."

  • "After a few months closure it's great to see Pabu back. Perusing the extensive menu plus additional specials list over their newest Spring cocktail, the Kawatsura mule (infused strawberry and shiso vodka, lime, strawberry honey, ginger beer) we were excellently guided with suggestions by our wonderful waiter, Brian. We dabbled through every menu section, with some specials added in. Of note were the "Happy Spoon", Maryland crab okonomiyaki, and Pabu wings. Loved the special fried brussel sprouts. On to sashimi and nigiri, we wisely opted for chef's choice for a variety of tasting. Fresh, visually beautiful, melt-in-your-mouth deliciousness. A lovely sake suggested by knowledgable staff rounded out our wonderful dining experience."

  • "My beau and I went here for dinner. Not as busy as I thought it would be on a Saturday night. Initially, requested the sushi bar, but glad we were unable to get these seats. I would say the hightops are the best seats in the house unless you sit by the window facing the water, which appeared to only have tiny tables or have a large group. Service was top notch, food was beyond our expectations. Can't wait to go do it again! Must try the Happy Spoon."

  • "the service was outstanding, Ive been here 4 times now and every time Ive had exceptional service, I used to work in the food industry so Ive experienced my fair share of horrible service and I know how hard it is to train a good wait staff, the manager Anthony came by to check on all the tables and was very attentive and friendly. The food was so unbelievable, and the timing of all the plates was perfect. Im the kind of person that sits down and orders 12 plates and one time for the table and its up to the server and kitchen to time things accordingly, and they did a perfect job. We had a few cocktails from the bar, all excellent, and the dessert was equally satisfying. thanks for a great time as always."

The sweet shrimp and sea eel from the Tsujiki fish market were among the best I have ever tasted. The rice perfectly cooked and served ever so slightly warm on the sushi. You could put this place in New York and LA and it would stand it's ground among the greats."

  • "The food at Pabu is VERY good. The dining experience at Pabu is really very much like taking an amazing trip to Japan and eating only the best, exceptional foodl! That being said, it is in no way overwhelming or too exotic at all and the best thing we tried were the RIBS!!! While the food and drinks (amazing sake and Japanese whiskeys) are stars, the service turns the experience into a very memorable occasion. Every person we encountered from the valet, to the receptionists, and ESPECIALLY our waiter was helpful, inviting, accommodating, and FUN in every way. I eat out often around the country, and you will not be disappointed with an evening at Pabu."

  • "This is my new favorite restaurant in Baltimore. The service is exemplary. I can't imagine how the service could be better. The menu is unique and creative. The saki selections are extensive. The ambiance is perfect for a date (kind of hip). The music is slightly on the loud side and the tables are a bit close but the view of Baltimore, decor and choice of music makes up for that. My wife and I loved the crispy Brussels sprouts and the steamed spinach. Absolutely delicious. The sushi was as fresh as I've ever had. The experience is on the expensive side but worth it."

  • "The food wasn't bad, but it wasn't up to par for what they were charging. I've eaten at many fancy restaurants and for this price I would have just gone to Shiso or another Sushi place in town. The sushi wasn't anything to write home about, the other small plates were around a 7 ~ 8 on the scale. Also, my boyfriend had been there before and he said the meat portions were smaller than last time but that was about a year ago. I would recommend a cheaper restaurant."

  • "There are many great restaurants in Baltimore, but this is truly one-of-a-kind. It is different than all other Japanese restaurants, despite having many of the same items. The edamame is superb, as are the soups and salad we had. The sushi is fresh and excellent, and the wood-fired meats were excellent. The brussel sprouts even made a believer out of someone who doesnot usually like them. The waiter was very busy, but able to take time to be certain we had what we needed, and to be able to talk a bit. The food was brought out promptly and very hot. All in all, an excellent experience that has us looking forward to going back so that we can try some of the items we did not have on Saturday night."

  • "As we were a party of 7 dining for a special occasion, we were delighted to be placed at a huge banquet-like table in a separate section of the main room. Our waiter Mo, was enthusiastic and determined to make us happy. And he did. At his suggestion, we had multiple and diverse small and large plates of both traditional sushi and house special Japanese delights. The restaurant has an extensive list of sakis and Mo helped us select one to our liking. The overall experience was outstanding. We will return and plan ahead to reserve the same table."

  • "Mentioned that it was an Anniversary Dinner and first time at the restaurant in the comments section while booking on OpenTable. The restaurant, and our waiter specifically, went above and beyond to make it a special night. We split the Satori Meal, one sashimi (amberjack), and one roll (spicy scallop). All the fish was extremely fresh. Everything I loved, I really LOVED! I had never tried some of the offerings and there were a few new things that I didn't really care for. But everything was well prepared and exquisitely presented. Had a great time and left more than full and satisfied."

The food was great and the menu had enough options that when we go again we could order a completely different dinner. There were many options that were not sushi also. The only negative is that the entrance was hard to find due to construction in the area. We will definitely be going back again soon!"

  • "On date night, this is our favorite spot. Because I know we will love the meal and have fun. The staff remembers you and always recalls what you enjoy! They have enough new flavors to keep you coming back, while they keep the same old delicious dishes. We have recommended this restaurant to anyone who asks. Even non-sushi fans. Their grilled chicken meatballs are killer. Actually everything grilled on white oak is amazing. That doesn't mean to overlook the sushi-because that is amazingly fresh and well presented. I jump at the chance to dine there and especially love sitting at the sushi bar."

The service, however, was not nearly as good as the food. While the runners and the buspeople were great in delivering and removing plates quickly, we had to wait for our server to stop talking about the bar scene to the diners at the table next to us to both order food and get the check."

The sushi was the best I've had in bmore, and the happy hour is worth checking out. Do not miss the chicken wings and ribs - and the fresh sashimi of course."
