The fried soft-shell crab was outstanding - fresh, great flavor, and not overdone like you'll find in many places. The ambiance is energetic and can get slightly loud, but it's not overwhelming. We sat at the bar and watched three wizards at work, spinning out incredible food. We have returned several times throughout the year and have sent friends traveling down to New Orleans. (We live north of NYC.) Back again this year for JazzFest and our first dinner was at Once. Again at the bar, because the ballet with fire just adds to a delicious experience.
