The staff was very friendly from the greeting at the door to the servers during the meal. The food was excellent and the manager visited our table to make sure everything was to our satisfaction. He even answered a couple of questions about the preparation. The staff was attentive but not hovering. They were very knowledgeable about the food and wine and enjoyed sharing their knowledge. My meat and potatoes man husband was fighting me for the califlower and brussel sprouts; we were both ooooohing and ahhing the whole night. And when the bill came, and hubby pointed out that we could have sat in amazing hockey seats for the same price, I pointed out that you had a very stong chance of being dissapointed at the end of a hockey game, but there was no way to walk away from this meal dissapointed. The tasting menu was "just right" for one of us and was "2 courses too much" for the other of our party. We had an amazing tea to start off the meal made from charred oak--truly remarkable. The staff clearly love the food and take pride in describing it. The egg custard has been a menu staple, and it continues to surprise with the multiple textures and flavors. A fish course was extraordinary with green vegetables and sauces. Inventive combinations of flavors and textures coupled with impeccable service that never feels pretentious or overbearing ensures that you will have a magical evening. Although I could argue with some of the food choices, especially the brussels sprouts which were overwhelmed by the overly salty broth, there was always something new and interesting around the corner. The short ribs were as excellent as you would expect from a modernist restaurant. Open, spacious, high ceiling all of which helps with a lower noise level than the former location. As always, the chef's talents are an outstanding temptation. There are tempting menu items to choose from, but if you want to have the Niche experience, the carefully planned and beautifully executed chef's tasting menu is the only choice. The new menu is a little different, tasting menu or a choice of four courses. They no longer feature a varied list of entrees, just limited entrees and sides per evening. But, that said, it's still my favorite dining experience in St Louis. Better to do a few things well than many things poorly. Prices were refreshingly reasonable ($85 for the tasting menu, $45 for wine pairings), and the pairings were of excellent quality, albeit not "fancy". Our only gripe is that the place is rather cramped and noisy - definitely not in the "elegant dining" category. We were celebrating a wedding anniversary and, without prompting, they provided all the members at our table with glasses of complimentary champagne. Equally impressive was the service and Gerard Craft's appearance--love how he still is visible in his restaurants!
Finally, my experience can be summed up in the fact that we were STILL talking about the food almost a month later; the flavor!!!
