Is the burger worth $26? Yes and no. No in the terms of are you really getting $26 of food for that money--nobody's arguing that you can't get a burger for less money or as much food or better nutrition, what have you. However, you're getting a unique culinary experience. To call this burger "art" isn't right. Eating meat of this quality is as if you're eating your favorite steak in a hamburger. The flavors of quality beef are on the money and the top quality of the meat truly allows it to be cooked to order. All this in the texture and seasoning that only ground beef allows.

We received a nice, if cramped, table at the circular banquettes in back. Appetizers were exemplary - the marrow bones were a wonderful presentation, more dramatic that that at St. John which started the craze. The shallot confit was a nice complement. Huitres et crepinettes brought four briny bivalves and two meatball-like sausages, wrapped in melting caul fat. A yummy combination.
My son and I had the famed $26 Black Label burger. It had a deep rich meat flavor that was more like a good steak than a burger. No cheese, just well cooked onions bibb lettuce leaf, tomato. Excellent fries. Ketchup not offered, not needed. Wife's pigs trotters were dispatched quickly. As with a lot of New York restuarants space is at a premium so it is cosy to say the least and you may find yourself listening to your neighbours conversation whethwr you like it or not!
The food was very good though with an interesting and varied menu choice. We ordered White Asparagus and Halibut from the specials and Roasted Bone Marrow and Pig's trotter. Very rich but the menu encourages a sense of adventure. The service throughout was of a very high standard.

For a busy brunch time, the food arrived amazingly quick. Latkes were just right, the salmon was not too salty and was very fresh.
