Located in the Historic Hotel Max Miller’s Guild is built around a 9 foot long, custom made wood-fired grill. James Beard Award Winning Chef Jason Wilson has crafted a menu featuring seventy five-day dry-aged beef, nose to tail butchery, and rustic baked goods that highlights the unique flavors from the grill. Carrying on the theme, Miller’s Guild also features craft cocktails made with spirits finished in oak casks suspended above the bar. The wine list will feature carefully crafted wines from the Pacific Northwest and beyond that represent excellent value across all price ranges.Continued

  • "we visited on a Friday night reservation at 7 pm. sat at table directly in front of the grill/fire. after about 20 minutes i took off my sport coat. I would suggest not sitting in front of the fire unless its colder weather. it was loud. hard to hear the person across from me. I had an old raj and dolin dry martini. sweetbreads. 82 day aged 32 oz steak, brussel sprouts and a bottle of Ontanon Rioja which is temparnillo. the steak came on a cutting board with roasted bone marrow and aioli made from the fat drippings. the bread came with pork lardo instead of butter. nice."

If you are having a biz lunch in a shorter than 1.5 hour time frame, let the waitstaff know ahead of time."

If you get there later you might be limited to the steaks in the menu which are good as well. One of the best sides are the fried Brussels Sprouts!"

  • "I have eaten here once before for dinner. This time was for lunch and it was not a great experience. The service was very slow. We waited more than 10-15 minutes to get the wine we ordered to begin with. Thankfully we had a lot of catching up to do so we enjoyed each other's company while waiting and wondering when our wine would ever come. The noise level is loud. It was difficult to hear our conversations. The food was good, not fabulous. There is a lot of competition in town. Miller's Guild better get it together or folks will be finding other places to enjoy a meal."

  • "We have been making this a weekly visit. This week we were presented the beef short rib which we have been ordering each time. We were warned by the waiter that the size was smaller but the menu did say 14 oz. The only way what we received would be 14 oz is if someone had their hand on the scale while weighing. In comparison to what we have been receiving this was almost laughable, an appetizer portion maybe, for well over the cost before. I really hate it when such changes are made after you are hooked, raise the price, but don't change the entree. I know it is all about money so I will be taking mine somewhere else far more often now. I just wish I had taken a photo so the point could be made that way."

  • "Between the scallops and smoked NY Strip, my husband and I had one of the best meals of our lives at Milller's Guild. We were given the choice to sit at the inferno bar and took the chance. At first it was too hot but we moved down to the side and it was perfect - I highly recommend being right in the middle of the action! I think I was drooling the whole time we watched everyone's food being prepared - but I don't care."

  • "The dinner was outstanding and after terrific original cocktails we wanted to order a bottle of wine from Walla Walla. All 3 we chose were unavailable and all they could offer was wine by the glass from there. Too bad given red wine and steak are a no brainer. Some more details: The sweetbreads, brussel sprouts, and grilled romaine were all excellent but the fire roasted beets came sliced and they must have been running out because we hardly got one full beet. Also the desert with chocolate straws was ruined by them as they were covering the cake and resembled sawdust."

  • "Have been here twice. The first time for happy hour. Had a good experience. The second time for a late Saturday lunch. The service was slow and overall unresponsive. I had the Wagyu burger. It was overcooked and the bun was spongy/stale. Overall, however, Millers Guild is 1 for 2 and has a good atmosphere. So we will give it a third try. But this time will be the tiebreaker."

  • "Our meal was fun and fantastic - I especially love the vegetable sides. The mushrooms were flavorful and special - good to share. They would be too rich to finish alone. The cauliflower curry rivals any curry in Seattle. Scallops browned beautifully and short ribs fell off the bone. Non-alcoholic cocktail was refreshing and special. Can't wait to return!"

  • "This place has it all, fabulous location, good wait staff, slick environment and to top it all off some of the best food I have had in a long time. I have heard of Miller's Guild for a while but never tried it up until yesterday. Today I am a complete convert. We were there for lunch and the food was unbelievable. I had the grilled chicken with cheezy grits and heavenly brussel sprouts. The part of this meal that was remarkable, was the chicken which was juicy, tender and delicious. I can hardly wait to go back and try another item from the great menu, if you have ever thought about going to this place take my advice and go there now...."

  • "I went to Miller's Guild for one reason; to try the oldest dry-aged steak I could find anywhere. While the steak was fantastic, the side dishes, service, and ambience were equally impressive. I sat at the grill, and watched the sous chef there work his magic. The waiter was knowledgeable and friendly without being intrusive, a delicate balance. Highly recommended for a special occasion dinner, as it is expensive, but worth it."

  • "We had high expectations to go along with the high prices and James Beard award winning chef but the food did not match. The meatball appetizer was bland but included a piece of bone (the waiter did the right thing and took it off the bill), my husbands very expensive steak not only had a piece of gristle running through it but was over cooked, the mashed potatoes were too loose and the shortcake was dry. The scallops were great and the snickers dessert was exceptional. All in all a disappointing experience."

  • "Really excited to experience after having a delicious experience at Seattle Weekly's Voracious tasting experience. We ordered the$65 Bomeless ribeye, steak tatare, gruyere potatoes, and grilled romaine. Steak was awful and dry. We didn't finished it and we shared that with the waiter and showed him How hard it was to cut. Very disappointed and would not return."

  • "We enjoyed a wonderful dinner and delightfully inventive cocktails. Nice to have a choice of sizes for the sides to share, so many yummy sounding items it was hard to decide but our waiter was helpful with choices and wine selection. Fun to observe the grill chefs at the open wood grill. Would highly recommend the gruyere mashed potatoes, and the roasted brussell sprouts with harissa aioli. My Bavette steak was delicious but a slight bit small for the $36 a la carte price, but my companions pork chop was ample and perfectly done. Great choice of wines by the glass, enjoyed a succulent Malbec with my steak. Will return FOR SURE"

It was flavorless, tough, cooked improperly, and a significant disappointment for the money spent. Sides, wine, and service was good but as a steakhouse, very disappointed. We are avid steak fans, raised in cattle country, and by no means would benchmark a good steak by this place. "

  • "We enjoyed our dinner here. The starters and salads were all outstanding and we should have continued there. The pickled tongue was the highlight also had the beets and the tartar. For entrees ordered the rib eye, excellent and enough for two, Neah Bay salmon, bland and undercooked and the Waygu special cut, overcooked and a little tough. Ordered grilled Romaine and asparagus but got lost with all the other food. Too full for dessert but the choices were too heavy for the meals served. Need to add some sorbet or fresh fruit."

  • "My wife and I were excited to try Miller's Guild but we left disappointed. Scallop app was very good. Brussel Sprouts way over the top salty. I'm surprised wait staff don't as about the plate when 3/4 of the sprouts were never touched. Short rib was extremely fatty without the depth of flavor we had hoped for. Brevette steak was well seared and tasty and done to order. For the price ($120 for a rib eye for two?!?!), the hype and ink it's received, very disappointed. Next time we'll save the money and go to Jak's."

  • "This was our restaurant choice for the month of May. The menu was easy to navigate, the waitstaff was knowledgeable, the specialty cocktails fun to try and the food was undeniably the biggest surprise. We took our own bottle of wine and the corkage fee of $15.00 seemed quite reasonable. What the chefs of this restaurant have done with unique cuts of meat is second to none here in Seattle. Presentation and portion size were perfect as our party of 4 took advantage of sharing 4 courses throughout our evening. Miller's Guild is most definitely a meat-lover's paradise, and the little bottle of bitters provided at the end of our meal was a perfect cap to help with digesting our 3-hour food experience! We will be back!"

We decided to sit at the butcher's bar - talk about a hot spot! - and we're fortunate to have a very attentive server in Xavier but also great show and service from the chefs at the grill.   • "We went to Miller's Guild on Saturday night with another couple. We had read about it in Seattle magazine and since we love Crush, we thought it would be good to check it out. While it was expensive, the food was delicious! And especially the sides. We had the curry cauliflower, beets, and the Brussels sprouts. The steaks were also very good. My husband had the striploin, which I didn't think was as good as the Zabuton steak I had."

  • "I took my husband to Miller's Guild for his birthday dinner. We arrived @ 8:15pm on a Wed. evening & the restaurant was packed. We were quickly greeted & sat within 2 min. of arriving. My husband was told Happy Birthday by the hostess & our server. (I assume they knew b/c of the note i left in the comments section of my OpenTable res.). We ordered prawns for an appy; gigantic & delicious. I ordered the petit beef tenderloin & my husband ordered the bone in beef shortrib. It wasn't your typical short rib, it should've been called a longrib b/c it was huge! We also ordered 3 sides (couldn't decide)-mushrooms, artichokes & fries. The mushrooms were AMAZING w/ my steak. Great flavor! We were too full for dessert but will definitely be back! "

  • "Big fans of Crush and Miller's Guild did not disappoint. The space is very industrial which is fits the carnivorous menu. The cocktails are craft grade, but fall behind the Zig Zags and Canons of the city. Service was great as you would expect from one of Jason's establishment. Big groups could be a problem, but I would risk it for the experience. "

  • "As a man, I loved the masculine decor and atmosphere and the large portions. My lady friend, whom I brought for her birthday dinner, thought it was not a place she would come to very often. She felt the portions were huge which, for me, is a very positive thing! The beef short rib was outstanding - tender, flavorful, and plenty to eat so you aren't left wanting for more. The buttermilk fried sweetbreads were very very good as well. I can't wait to return for brunch this weekend, since that menu looks very appealing to me also."
