Service could not be better.....never felt rushed yet they always seemed to anticipate our next need. Very attentive throughout the evening. Dinner war exquisite .....started with a chilled soup, perfect on a hot evening. One was a baby split pea in cream the other was a tomato-avocado soup. Excellent! The menu large with many great choices. Two had the crispy duck with cherry sauce, one rack of lamb and the other seared beef. Have never had a better prepared or presentation of a meal.

Patrice, the quintessential maitre d', came by our table between courses to see how we were doing. Our waiter, Carlos, couldn't have been more courteous, knowledgeable and friendly. The menu is quite extensive and diverse...something for everyone. Service was impeccable and unobtrusive. Our meals were delicious: the white fish and the special grouper. We enjoyed ourselves so much, we lingered over a couple after dinner drinks. A lovely piano player was in the bar. We took advantage of that to dance between courses. Only half the men wore jackets (no ties); the dress was generally smart casual. We were in the desert to celebrate our second honeymoon and 15th wedding anniversary. The staff, chef and piano player made our evening incredibly memorable. We were treated with care and not rushed.
The food - I had rack of lamb which was exquisite and pure in its taste. My husband had the halibut and kept trying to get the recipe.
The weather was perfect, warm gentle breezes and twinkling lights.

There is varied menu with many entrees to choose from. My husband had the escargot as an appetizer which was amazing. I had th echargrilled filet with wine reduction sauce It came with mashed potatoes and vegetables amazingly seasoned. My husband had the halibut with honey ginger lemon marinade which was unusual and delicious. The restaurant was VERY VERY busy and the service slowed as a result. For example, it took about 10 minutes for someone to ask if we wanted a drink or wine and then the server did not return for another 10 minutes to follow-up. Our meals came much later after ordering this second visit but were worth the wait.

We had a wonderful evening. We had a table outside under the trees. The evening temperature was just about perfect. The staff was great and the food very good.
We had the Degustation menu: a small trio of appetizers including Ahi shashimi in a paper thin pastry cone, a small dollop of caviar and a ball of deep fried cheese. Next was seared scallops 4 each in in a lovely sauce. Then a trio of duck (paté, a tiny duck burger with a meringue bun, and slices of duck). Also wonderful. The entrees were great. This was as comparable as those in France. Other than not being in Paris, the cuisine and atmosphere was comparable. It is "our" place when we return to Palm Springs. Mr. Vallauris circulates the room very elegantly. An experience to be repeated. My wife said it reminded her of Laurents on Champs. The ambiance is classic, old-Hollywood kitsch with a whimsical edge. The dining room is a wonderfully unique indoor/outdoor concoction, with tables situated under an enormous tree, tiny white lights and walls of clear plexiglass. It's beautiful. The food is classic French, but not stuffy or heavy. We enjoyed multiple courses, including a lovely smoked fish plate, fresh oyster, a bright and sweet spring pea soup, heavenly roast chicken, lamb chops and filet mignon. We did give 4 stars this time, though, as the Blue Crab appetizer had grapefruit in it instead of the fennel as it was told to us. We informed our waiter, who apologized. However, I did eat everything else in the dish.(I am not fond of grapefruit and would not have orderd it if I had known). Other than that, the evening was a nice transport to mini-France and we will absolutely go again.
