Classically trained, Chef Hertel offers a contemporary southwestern inspired menu featuring such items as Crispy Blue Point Oysters with johnny cakes, cactus green chili tartar, charred corn and sweet red pepper jam; or Autumn Squash & Smoked Chili Fritters, glazed with The Boulders own harvested Arizona honey, old west cherry peppers and green onion; and Smoke & Spiced Bison Bistro Steak with sweet corn pudding, red chili emulsion and bourbon jus.
