What we serve at Ka‘ana, we serve from the heart. We source from local farmers, ranchers, and fishermen. We only put on your plate what we feel is proper to serve. Our pairings speak to the ability to connect the elements of taste, smell, and touch with everything around us.
Our dishes are prepared using techniques from around the culinary world, but thought-out in accordance with our micro-climate. The way we prepare our fish, season our salads, and grill our meat depends not only on its origin, but what the weather tells us, how the swells on the ocean shape our mood, and how the land influences our feelings.
Here we hope to blur the lines between your kitchen and our restaurant, between what is external and what is internal. We invite you in, share our hopes, and create a unique dining experience that connects you to this place and its essence.

  • "Best dining experience on Maui, a must try! Dinner for two on the terrace with sunset view, attentive and knowledgable servers - want to know about chef, sourcing, wine, etc - ask for John. Grilled octopus salad with goat cheese, arugula and bread was heavenly. The most succulent and tender ever, and seasoned perfect. Watermelon and goat cheese salad, divine. Lobster and uni sauce, OMG! Presentation stunning, and perfectly cooked (although a bit hard to remove from shell) with just the right amount of mild uni. Ahi was seared outside, nice and sashimi like beneath. Presentation and flavor terrific. Desert - coconut ice cream chocolate sundae - light and fun with a surprise at the bottom. Hotel is also awesome, and breakfast too!"

  • "Walk into a room to be greeted by friends, offered a drink and watch the bartenders create craft cocktails with fresh juice, home made syups and premium cocktails in front of your eyes. We were lucky enough to request and receive the Sommelier Table, where we could watch the preparation of all the entrees in the kitchen, talk with the cooks and the chef (Isaac) as well as have the sommelier / manager (Greg) tell us about wines and pairings. The food was simple yet modern and the best meal we had while on Maui. The attention to presentation, and flavor profiles was nothing short of genius. Chef Isaac's tako dish is mind-blowing. The service was attentive, and we felt like guests at someone's home. An extraordinary experience!"

  • "We arrived earlier than the rest of our party and stepped up to the open bar/table for a drink. The ingredients were fresh, ecclectic and the resulting cocktails deliciious. Once seated our server was very knowledgeable about the menu and was able to guide us through it easily. Our party of 5 shared everything family-style which we loved...a couple of bites of everything. It would work well for just 2 people too. Overall an excellent experience, though do note the relatively high costs and be prepared for that."

  • "Although the menu seemed very different at first glance, the key to our great experience there was our server, who helped guide us through it. We thoroughly enjoyed our meal, which we had served tapas-style. (They even cut our entree so that we could easily share.). I loved that my son enjoyed his meal from the kids menu - a generous portion of grilled mahi mahi, sautéed fresh veggies and waffle fries. My daughter's mac & cheese was home made, delicious and filling. I highly recommend the octopus salad with goat cheese. The Ahi with olives was also fabulous. Best of all - dessert! Spicy chocolate ganache w/homemade donuts(?), goat cheesecake, coconut sundae yum yum! Many gluten free options available, too."

  • "This was our second visit during our 1 week stay in Hawaii. Ka'ana knows how to best show off the amazing fish and produce of the islands. On our second visit they accommodated our kids well. They made an adjustment to the heat of a dish for our youngest so he was able to enjoy some great seafood. I know this can be a pain for kitchen staff but they were great about it and he ate every delicious bite. This is a must if you are in Maui. If you are in Wailea and you don't eat there you are really missing out."

Tender octopus, earthy buttery mushrooms, sea bass with sweet, creamy ginger sauce,and the tenderest,most flavorful ahi ever, and steamed vegetables cooked to perfection . It was all fabulous! This restaurant alone is worth the flight to get here. And if you're a local? Lucky you! Book a table ASAP!"

  • "Finding Ka'ana Kitchen truly made out trip to Maui a memorable one. Outstanding service. Every member of the staff made us feel right at home. The food was wonderful. Great selection of local flavors and portion size was just right. We loved the open kitchen design. It was so much fun to watch meals being prepared by staff that truly looked to be enjoying what they were doing and who they were working with. We will be back!!!"

  • "Loved the food, menu, and concept in general, but there were some real issues with service and timing of courses. I don't mind a leisurely pace for a nice meal, but we waited as long as 30-35 minutes between each course, which seems excessive since we just ordered a bunch of appetizers to share, some of which were cold. After one long wait, they delivered our second course *again* and we had to point out that we'd already had those dishes. So clearly some confusion in the kitchen or between kitchen and front of house. Staff overall couldn't have been nicer, and we were given a stunning ocean view table. I wanted to love this place, and might on a subsequent visit, but can't quite say that I do yet."

  • "We chose a seat inside, so as to enjoy the sunset without being too hot, but the accoustics are not good, and wih several families at nearby tables, it was quite noisy. An outside table would have been perfect. Portions are small, and some might feel inadequate, but were just right for us. All of the dishes were excellent, with understated, but very interesting, flavor combinations."

  • "Reviews on this new restaurant have been very positive. I cant agree more. Service is off the chart. We were first time diners and left feeling like we knew most of the staff. So friendly, attentive and helpful. Hostess realized we had a long walk back to our hotel so tracked us down in the lobby to make sure she couldn't get a shuttle lined up for us. Then the food. Farm to table at its finest. Dishes are prepared to enhance the already very good food Hawaii provides. A true foodie could just say, "bring me the 5 dishes the chef likes best." You would be set. Coconut sundae at the end of the meal sounds kid-ish, but it is divine. During our 10 day stay in Hawaii we plan to eat there a second time. Then miss it for a year."

  • "Ka'ana Kitchen is as good as it gets. The food is amazing, carefully prepared, beautifully presented, all with the freshest and finest ingredients. There were four of us for dinner at sunset, two of whom live on Maui and two of whom live in the gourmet ghetto in Berkeley. We all agreed that it was one of the best meals we'd ever had. We loved the "open" kitchen, so that we could walk around it and talk to the chefs. Our server was polite, attentive, and not too formal. I'd definitely recommend it. Try the abalone risotto (with sustainably farmed abalone), the ahi, and the spectacular watermelon salad."

  • "Definitely a highlight of our time in Wailea. We had the tasting menu at the Sommelier's table. The watermelon salad was the first course of many (6?) - vacuum marinaded, with feta and candied walnuts. The flavors just kept coming. Each dish was paired with an excellent (and sometimes unusual) wine. Sitting at the table behind the chef's work area was a treat. Each employee who worked on our food would take time to come over and explain it to us. John Weiser, the Sommelier, served and entertained us. Fantastic evening with the Ka'ana Kitchen. Highly recommended!"

  • "What do you get when you take an innovative individual and combine that talent with food ? You get the food served here. Ka'ana Kitchen gives new meaning to the term "farm to table". Before I forget, the architectural lighting has so much to do with the stellar ambiance... Whoever designed the lighting did an outstanding job. In addition, the wait staff here is at the top of their game: friendly, professional, knowledgable. The kitchen is out in the open in the middle of the room...I loved it! I ordered the Ahi Tuna that came with a liquid reduction with a bite to it...I couldn't get enough of it! My husband ordered the chicken that was We are returning this week as there were so many menu items that we want to experience."

  • "A little lax on the attention to details (unripe plantains, anyone?), and a little ambitious without the excellence. The service was obsequious, explaining the provenance of the every bite. The prices were very high (it is, after all, in the middle of a Hyatt-owned hotel), but the sunset view was lovely, and the architecture was beautiful. Back to the food: they really want to do a good job, but i didn't think there were exceptional chefs in the kitchen - the menu descriptions sounded tastier than the final dish. I had the lobster ceviche, kind of chewy with a lackluster lilikoi sauce, and unripe plantains tucked in the bottom. Husband had a steak with chimichurri sauce (never had chimichurri made with tomatoes)."

  • "We enjoyed the tapas menu and ordered the octopus salad, rainbow carrots, watermelon salad, lobster and farm fruits. All were delicious and just enough food. The wine was excellent, although I would say overpriced. I paid $29 for a glass of Patz & Hall Chardonnay, which I found a bit much. We were fortunate to have an thunderstorm while we were dining, so the scenery was fabulous. I would have to say I found the kitchen/dining area inside a bit too bright and the music outside a bit too loud. Other than that, it was a truly enjoyable expereince."

  • "Wonderful meal! Local produce, fish and meats, skillfully prepared in a lovely setting. The Mai Tai is old school and perfect if a bit expensive. However, the lobster ceviche, risotto with kampachi bacon and onsen egg as well as the ahi tataki were to die for. It took deep personal control to prevent my tongue from lapping the plate.   • "Small and creative menu of local foods very well prepared. Standouts were the octopus, the big eye ahi, and the onaga. Both fish dishes had superb sauces...if I had been home I would have licked the plates clean. There were excellent wine choices in a variety of price ranges. very personal service. We decided to return two nights later and were warmly welcomed back by staff."
