The service was good however, so we're thinking that perhaps we just happened to pick a few unlucky menu items that didn't ultimately appeal to us.   • "Humboldt is rapidly becoming my favorite restaurant in Denver. The whole menu looks great but i always order fish.......because it's always outstanding! Crispy whole fish this time and it was outstanding!!!!! A little sweet, wonderfully crisp skin, perfect, firm flesh, took a little time to eat and every minute was a little adventure and just a lot of fun. Wish there had still been arugula in the kitchen, because I really like the little bite of that lettuce which would complement the dish to perfection but the spinich substitute was fine. SOMEDAY I'll succomb to one of the other (many) appealing looking entrees. As always, professional, friendly wait staff, knowledgable and good natured."

We'll try it again with different choices. It's nice they try to serve local foods. But it seemed a lot of it was fried/fatty."

  • "One could learn to love veg at Humboldt. Our group had broccoli and brussel sprout appetizers, and a couple in our party had beets accompanying their entrees. All were so very good, as was the salmon. The two desserts we shared were also full of flavor. Though I had been there before, the food--and service--were even better than I had remembered."

  • "One of us liked Humboldt and one did not. On the plus side, they emphasize Colorado products. The menu is large and there’s a lengthy specials list. Good energy in the room. But a bit overpriced in comparison to other nearby spots that we feel offer comparable or better food and service. For fish, they have a combination of prepared plates and also fresh options where you choose a sauce and side. I chose poorly: the brussel sprouts were excellent, but their strong and flavorful sauce completely overpowered the halibut and the waiter's recommended sauce (chimichurri). Yes, my fault, but more guidance from the waiter would have been appreciated. (I'm not a fan of these build-your-own plates -- what does the chef recommend?)"

  • "The food was great. Crispy broccoli was amazing. I had the burger (bacon mixed into the patty and onion jam, yum). My wife had the filet which was perfectly cooked. Would have given 5 stars for food except the creme brulee came out runny. Our server Brandon was great though, and he comp'ed the dessert. I would definitely recommend Humboldt as a first rate option in Uptown."

  • "Would definitely return but probably sit at the bar because at times it was difficult to hear. Love the style/decor and the service was excellent without being overbearing. Had one of the best Blood & Sand cocktails ever. Food was excellent. Great spot. Noise level is just enough that I would not personally recommend for a romantic evening for 2 but still a fun spot for 2 or a larger group. The tables are close but not so much that it is uncomfortable. I like that that there is a variety of table sizes in close range so you don't feel like you are in a sea of 2 tops that are too close. While not cheap, I think you get what you pay for so it is a great value."

  • "We went for a late lunch and the burgers were amazing. Would recommend and go back again.We had a very late lunch, around 2:30, so the restaurant was not very crowded. We were about half way through our meal when the hostess tried to seat a couple right next to us, in the booth/seat area of the restaurant. Really? There were a ton of open tables. As it turns out the couple asked to be seated on the patio, as I would have done as well. The bench seats for 2 are fine if you are going to have a silent meal. If you want to have a conversation in a pretty quiet restaurant having a couple 8 inches away is not ideal. Just something to think about. We loved the food, the burgers were amazing and our server was great. I would recommend and go back."

If you want trendy and energetic don't go here , it was nice for a birthday and noise level was not high ."

  • "You are in the restaurant business - you've been to a restaurant before. Seating a party in the corner when several other tables are open is a mistake.The greenhouse area isn't the best part of the restaurant to be seated in, but you filled it up, while the renovated part of the restaurant sat empty. It's awful to put your customer in the position of having to ask to be moved. It's also not the way to start off a visit. Humboldt has a lot to offer, and a lot to learn. That said... food was great, server was delightful. I'll come back but if you try seating me in the greenhouse again, I'll walk out."

  • "This was my second time at the new restaurant. I really enjoyed it the first time...sat at the community table at the bar. This time, we ordered the fried oysters at my recommendation, but there was too much papadew relish. I ordered the halibut now that it is seasonally available. Unfortunately, it was not seasoned well (too much pepper) and the vegetable bed was undercooked. I should have returned it to see if they could have made it better."

But this time we came to find that they didn't offer this NECESSARY brunch feature anymore. We left after one $9 little mimosa.   • "We visited Humboldt last Oct. right after they'd opened & weren't impressed. We went back last Friday for a re-visit. The menu is appealing & the wine list well-represented. Front of house staff are super-friendly & accommodating - so there is positive there! Sadly, what continues to lack is flavorless wait staff service. Wait staff that can't TELL you about specials - they just shove a card at you & aren't knowledgable about specials. A lack of attentiveness overall sullied the evening. Slow food/drink delivery, courses that didn't come out with good spacing, & our server walked by our table 3 times staring at our empty dishes but didn't clear them! Apparently wait staff can't be bothered with bussing duties. We won't be back."

  • "Visited Humboldt for Sunday brunch for the first time with a group of 9 this past weekend. Our group was sat towards the back of the restaurant in a atrium like area. Was the perfect setting for brunch. The rest of the restaurant is stylish and visually appealing. Our server was Kim; who was extremely attentive and thorough. I have a very rare and serious food allergy; Kim and the kitchen were very accommodating and careful in regards to my meal and dietary needs. Our food was very good overall, the only negative was the price of the drinks.The Bellini serving is very small and not worth the $7. Suggest they add a bottomless mimosa or bloody option to brunch. Will dine here again."

  • "I love what they've done with the space - much more modern and upbeat than the old Strings (may it RIP). We started with the tuna crudo appetizer - fresh and flavorful! We shared the lobster risotto (I don't usually order risotto, but this is a can't miss!) and the special (another fish dish which was very good). Portions are decent size for the price point, as well. Service at the bar and our table was friendly and attentive - always a nice plus in Denver. Check it out!"

  • "Because of the din at the front of the house, we asked for a quiet table and were ushered to a spot near the back, where we could actually hear each other, most of the time. The service was impeccable and the food excellent. Negatives: The two mid-Atlantic natives had the fried-oyster-with-peppadew appetizer, and we agreed we would never have known there were oysters in there had it not said so on the menu. The oysters were tiny and the crispy crust (very tasty) was thick, so that the oysters were overwhelmed even before the spicy pepper salsa. The bread pudding was a bit bland in flavor. Otherwise, the food was "to dance for"! The salads, steaks, Brussels sprouts, and clam chowder were all delicious – definitely worth a return trip."
