A word from Hugo's Restaurant
Founded in 1988, Hugo’s restaurant sits at the edge of Portland’s historic Old Port district. In its third generation of ownership Hugo’s continues to offer refined and delicious cuisine. We source our produce, game, fish and meat locally—we’re lucky to work with Maine’s best ingredients. With both tasting menus and à la carte options you can join us for an extravagant feast or a couple of courses.

Like our pantry, our dining room is dependent on Maine’s best: sculptors, painters, carpenters, and iron-workers collaborated to create a space that evokes our location. Wrapped around our open kitchen, a large red birch bar occupies much of the interior. With its exposed brick walls, soft wood tones, and plush leather, the dining room’s modest luxury sets the stage for an unforgettable meal.

    There are three menus and guests choose 2-5 courses from each menu. The courses are quite small--we were told that two courses equals one regular size appetizer. My friend and I each ordered three--I left hungry, she did not. The food is very fussy, lots and lots of unrecognizable names on the menu and we needed to ask for explanations from our waiter. They play up the unusual ingredients and seem to lose sight of the fact that most guests care more about how the food tastes than what is in it. And the food was quite disappointing. The gnocchi were hard and chewy, the sablefish was bland, the arctic char was not a pleasant taste or texture. The best course was the bolognese but it was tiny. The dinner was very expensive--with tip, $100 pp. Too much money for a disappointing experience.

    When you book a table at Hugo's you expect greatness. We had experienced the WOW factor in the years previous and had high expectations for the evening. It started great, good table great staff, exceptional food and wine knowledge and presentation. We ordered the tasting menu and started with cocktails, then moved on to a bottle of wine with our meal. The host, server, bartender and the wine sommelier where exceptional. We enjoyed our first two food courses, then the Entree came and both of us went from a 10 to about a 6 on the 1-10 scale. The flavors where off and they just didn't have the exceptional we felt it should have for the caliber of restaurant we were paying for. The dessert and coffee where again unique and imaginative as well as tasteful. We felt overall they had dropped on our restaurant rating from in the top 3 to in the top 5. If your going to charge a premium price then it should encompass the whole experience. Will think twice before booking this restaurant again.

    To enter Hugo's restaurant in Portland Maine is to enter a food paradise. Every, that is every, small plate was totally delicious, one better than the other. plus you get little surprise extra plates. The staff was very friendly and made an even great food experience even better. It was just one big WOW experience.

    We have had the good fortune to eat often in the world's finest restaurants. Now, 2 blocks from the harbor in Portland Maine and a walk away from home, is a restaurant that is the equal of any of them. Unique recipes but without preciousness or a fetish for the exotic; exquisite attention to detail; nuanced, warm and gracious service. Time after time. Never a bad dish. Never a meal without some "ah hah" stemming from one or another unusual combination of flavors. Superb cocktails and fabulous wines -- delivered with price sensitivity. NewYork, Paris, get in line.

    This was the second time we visited Hugo's. The first visit was spectacular, with food that would be exceptional in any major city. This visit the good was good but not exceptional and, frankly, the desserts were inedible. I do not know if it was an off night but my recommendation would be to proceed with caution.

    It has been a while since we’d eaten at Hugo’s, so we were really looking forward to celebrating our anniversary there. Things started out great. We were seated at the bar with a great view of the kitchen and were given a glass of a very nice sparkling wine in recognition of our anniversary. We selected different meals from the tasting menu and got the wine pairing for our meals. Both of us were very disappointed in the food. We expected the small portions of beautifully plated food, but found that more attention was paid to how it looked than to how it tasted. The food was mediocre at best. On top of that, the wines that accompanied the food seemed to be chosen more for how unusual they were than whether the actually tasted good.

    Although the food was wonderful, and everything were expecting, their music choice (the Hall and Oats station) was a total disconnect. I never realized music could have such a large impact on dinner. Do go and experience Hugo's - the food and service was a pleasure - just call ahead for reservations and what they will be playing for music that evening.

    If ever there were a cost to quality ratio that was accurate it would have to be Hugo's. Without doubt the price point is a little steep for every day dining, but it is completely worth it. Not only was the food excellent, but the way that Hugo's approaches the tastings forces you to experience new foods you may not otherwise order. Enjoy your time, and if you want a truly unforgettable experience ask for Patrick ;)

    After some recent poor meals, some more than double the cost of Hugos, I couldn't bear another waste of money. Au contraire! Hugos restored my faith in tasting menus but also the ability of people to cook good food! And to ensure all ingredients on the plate work together, not just because they are individually 'hot' at the moment. I ordered mainly from the Foraged & Farmed. The duck, though a bit tough to cut, was one of the best dishes. Several amuse bouches came out. Impressive wine menu with a sommelier who guides you through each pairing. We were sat at the bar, side by side, but just a feet away from the dishes being prepared and gave us a front row piece of the action! Great food. Knowledgeable staff. Worth it!!!!!

    We dined at Hugo's for our 30th Anniversary, it did not disappoint!!!! This was by far the best dining experience we've ever had. I would not hesitate to recommend this restaurant!! They were pleasant! When we arrived they seated us at our table and brought us a glass of Champagne to toast our Anniversary which was wonderful and every part of the evening followed the first part. The Food was the star and we are definitely returning. It's expensive but worth every penny. Between the staff and food served it was like nothing we have experienced when dining before, loved it.........people should go eat at Hugo's, they will not be disappointed, we are going back...

    Portland is home to a number of superb restaurants, chief among them is Hugo's. We drive up to Hugo's from Massachusetts a couple of times a year and we've never been disappointed. Hugo's is the best restaurant on the East coast, and that includes the Michelin 3 star restaurants in New York. We ate at Jean George (a Michelin 3 star)last month and Hugos last Saturday. Hugo's was spectacular, Jean George (@2.5X the price) wasn't in the same league. Hugo's menu is highly innovative and everything is perfectly prepared. The only thing we don't particularly like is the seating arrangement, most of the seating is bar style where you have a view of the chefs. That works well at a tiny restaurant like Stages in Dover NH but not at Hugo's scale.

    This was our first time at Hugo's after wanting to try it for years. The whole experience was spectacular. Chris our waiter was amazing. He has an extensive knowledge of wines and food pairings. Every plate that was served was described in detail, involving ingredients and preparation. It was a wonderful experience and especially special as we were there celebrating our 10th anniversary.

    After we were seated, no one came over to us, and after 10-15 minutes, I had to ask what was going on and told them I was getting ready to leave. After that, the service was good, and the food was very good, but unfortunately that kind of set the tone at the start.

    For our anniversary, I selected Hugo's as we used to enjoy going there years ago. Well, upon opening the menu my husband wanted to bolt for the door, and suggested as much. He was looking at the $90 price for a 5 course tasting meal. I convinced him to stay, for a two-course at $45, and we were both glad we did! It was an evening of elegant & exquisite food, presentation & service, with multiple servers, special little treats before, between & after courses - like aerated egg over bacon & shallot jam served warm in little cups, & other constructions artfully presented which lingered on the tongue, releasing their flavors. I'm ready to book again -but not until next year. Hugo's is a celebration of refined dining I will anticipate with joy.

    There are so many wonderful restaurants in Portland, but this is my favorite. We were first-time diners here, but are already looking forward to going back. We were greeted like old friends, and seated at the bar overlooking the kitchen. In and of itself the ability to watch our food and drink being prepared was a treat, but the staff took it one step further and engaged us in informative conversation about how the food was prepared and how the "paired" drinks were chosen. Every dish we tasted was creative, delicious and thoughtfully prepared. The entire staff truly worked as a team, so service was seamless. A wonderful experience overall.

    This restaurant was for foodies wannabes and posers. If you know your food this place is a huge disappointment. We asked for a martini for a cocktail. They didn't carry Grey Goose...The wine by the glass options were pitiful. This is a tourist trap under the guise of an upscale restaurant. The name of this restaurant needs to be changed to "The Emperor Has No Clothes!"

    Hugo's was everything we had read about and hoped it would be for a culinary experience. We were seated at the bar area so we had a front row view of the Chefs at work! The level of detail, artistry and care was amazing. Atmosphere was friendly - not at all stuffy or pretentious. The flavors and presentation were exquisite. We had the 2 courses and added a dessert...perfect. (Hugo's also provides 'little tastes' of special treats in between course. Nice touch)

    This is one of the most thoughtfully prepared menus we have ever seen, including those in NYC. Each course has distinct and complex flavors without being muddled. The ingredients are, as advertised, absolutely fresh, and usually locally sourced. Portion sizes are perfect, and the five course tasting menu is a relief from the normal slabs of protein and scoops of carbs found elsewhere. The waitstaff is fun, knowledgeable and professional without fawning. The sommelier, Brian, has built an interesting and affordable wine list, and has some interesting thoughts about wines. Let him help you pick something different. We sat in a booth and the noise level was fine - we are hearing impaired. A great experience. Probably Portland's best!

    Don't get me wrong we eat chef tastings all the time and all over the world. The food was very good but compared to other tastings I wouldn't rate it high on our list for the price. We had some really great meals in portland and this was by far the most expensive and least favorite based on the food alone.

    We had a delicious meal at Hugo's, we will definitely be back. If you want to have a " true Hugo's experience", sit at the bar. We met a great couple next to us and we had an amazing experience. You can pick and choose from the tasting menu to create the perfect menu for you- which is great. In between each course they give you an amuse bouch which are so fun and delicious. My husband did the 5 course and I did the 2 course. Every meal was chalk full of flavor. I can't say enough good things about it. Our waiter chris made the experience wonderful with his great personality and knowledge. This isn't a meal you want to rush, but rather one you want to savor the whole experience and let the kitchen do what they do best! Enjoy!

    We have been to Hugo's a number of times and it just keeps getting better. Each dish is a surprise both in presentation and taste. The service is impeccable and the environment lively but with a sense of privacy. You will drop $100 per person and more if you go for all 5 courses but this is a treat you should give yourself and someone you love. In a word, Hugo's is BRILLIANT!

    The chef cooks for himself and not for his customers, The food is complicated but uneventful. My wife found it difficult to select five dishes she wanted to eat from the $90 menu, so we each had three dishes for $67. My principal entree was roast duck breast which was supposed to be cooked in two ways. It came in one way with no explanation and scant apology. Our first two choices of Pouilly Fume and Sancerre were not available because "it had been a busy weekend." The noise level was discotheque friendly. The server poured our expensive wine once. A restaurant to avoid and not to laud.

    RECENTLY 3 OF US HAD DINNER AT HUGO'S AND I DEFINITELY DID NOT ENJOY THE BILL OR THE EXPERIENCE. IF YOU ARE INTO NOUVELLE CUISINE THEN YOU MIGHT WANT TO TRY IT, BUT BRING YOUR BANK ACCOUNT ALONG. I HAVE EATEN AT MANY FINE RESTAURANTS ALL OVER THE WORLD AND I WOULD RATE THIS THE MOST EXPENSIVE FOR WHAT THEY DELIVER. WE EACH HAD THE TASTING MENU AND 4 GLASSES OF WINE AND THE BILL WAS $455.00 + TIP. THE PRESENTATION WAS TOO TEDIOUS FOR ME---CHEFS ASSEMBLE THE DISHES WITH TWEASERS IN FRONT OF THE BAR. ONE OF OUR WAITERS WAS CHARMING, ONE A SNOB AND THE THIRD INEPT. DO YOURSELF AND YOUR BANK ACCOUNT A FAVOR AND FIND ANOTHER RESTAURANT IN PORTLAND.

    A friend or ours whose son is a Chef, and used to work there years ago suggested we eat there when we went to Portland. It exceeded our expectations. We sat at the bar which is the best seat in the house for watching them create these delectable courses. Anders, one of the chefs, talked to us while he worked and was so knowledgeable and friendly. I love to watch food preparation. It was even better than a cooking class. Would definitely go again.

    Although the food is very good and you can see all the care and respect for the ingredient that goes into each plate, it is very pricey for what you get. The portions on the tasting menus are very small and the bill won't be cheap. It's a dining experience some will love and the service was excellent, but if you want value for your money, there are many places where the food is just as good but the portions and prices are more reasonable.

    I was in Portland by myself and decided to treat myself to a good restaurant experience and am I ever glad I chose Hugo's. Everyone at the restaurant made me feel comfortable. My waiter was attentive and so knowledgeable. Even though I did not have the tasting menu he did a wine pairing for the dishes I ordered. He recommended something I would not have tried, the fried mussel salad, which was so very delicious. I was seated at the bar in front of the chefs prepping the food, and the chef closest to me was very gracious in answer my myriad questions about his work, the food and the restaurant. I will definitely try to get a reservation the next time I am in Portland. With one turn a night tables are hard to come by. Book early.

    My wife and I dined here for our anniversary on September 2, 2014, and I can't say enough about the food and service at Hugo's! Great biscuits to start with fresh farm butter, amuse bouche, three amazing courses, a mid course treat, a fourth course,a cheese course and dessert, each paired beautifully with a perfect wine. We even waved off a second beautifully crusty bread offering mid meal. After dessert, a selection of tiny cakes with coffee. All of the dozen or so people that brought our meal together were true professionals. Cannot say enough about our experience.
