A word from Hugo's Restaurant
Founded in 1988, Hugo’s restaurant sits at the edge of Portland’s historic Old Port district. In its third generation of ownership Hugo’s continues to offer refined and delicious cuisine. We source our produce, game, fish and meat locally—we’re lucky to work with Maine’s best ingredients. With both tasting menus and à la carte options you can join us for an extravagant feast or a couple of courses.

Like our pantry, our dining room is dependent on Maine’s best: sculptors, painters, carpenters, and iron-workers collaborated to create a space that evokes our location. Wrapped around our open kitchen, a large red birch bar occupies much of the interior. With its exposed brick walls, soft wood tones, and plush leather booths, the dining room’s modest luxury sets the stage for an unforgettable meal.

  • "Every single dish and taste was amazing. Who knew a smoked parsnip could be a star? We chose the "lighter" menu tasting with just two courses but we were treated to extras between the courses. They served a red snapper sashimi and a savory churro before our choices were served. After watching dessert prepared in front of me, I had to try the "root cellar" which included sunchoke ice cream. It was all unbelievably delicious and the staff was super attentive. We were hesitant about sitting at the bar but as soon as we sank into the comfortable chairs we were happy. I can't wait to go back."

  • "Excellent in the past; however, our last time there, the food was becoming too confused - too many mixes of flavors, too many flavors, flavors that didn't go together well. Out of our 10 dishes (we each had the 5 course tasting menu), only 3 were excellent. Hopefully, in the future the restaurant will simplify its food, as it has been great in the past. Service and wine list excellent. Staff very helpful and pleasant."

  • "Hugos is a true gem in the Portland food sceene! What a treat for the senses! It's a delight to have a such high end donning experience in the Old Port! We had the best seats in the house perches at the end of the bar overlooking the entire open kitchen. From watching meals being plated with delicate care to the unique art and lighting fixtures above the booths, it was a real feast for the eyes as well! The food was spectacular!!!! Each course surpassed the next! Cant't wait for our next visit!"

  • "What a great experience. Flavors come to life, with every coarse comes something different that will make you smile. Outstanding choices of different foods that are blended together to produce a flavor that makes you stand up and take notice. I noticed my wife and I did a lot of smiling at each other all night long. I had been told that people drove from Boston to eat here but I was not sure I beleived that. But now I know that is true. This food is worth a long drive, and we will be back often..."

  • "My husband and I went to Hugo's to experience the best meal of our lives, knowing it would be so prohibitively expensive that we wouldn't really be able to afford it more than one time. We got everything we were expecting! The food was amazing: pick and choose 5 courses between a fish menu, a meat menu, and a vegetarian option. We were seated at the "bar," which overlooks the kitchen, instead of the drinks. We sat right in front of the cold fish prep station and got to spend the night talking to chef Wiley, who happens to be up for Food and Wine's best new chef, or something like that! He was very friendly and definitely made the experience for us! We would return again and again, if they could cut the price in half for us mere mortals."

  • "Fabulous for our family of supertasters!...special harrissa goatleg entree for 4..We all wanted/LOVED and savored!! Each separate item before the major event was beautifully crafted, plated, & well described by attentive waitstaff ..... incredibly delicious. Never thought a food entitled "fried rice cake" could be remotely edible. This one was over the top in every way...so many flavors and a visual delight. My slight regret was not enough time planned due to concert plans (my bad). Plan on at least 2 + hours for a relaxing and enjoyable evening. At 1 hour + 45, we had to rush through the tiny spoons of intricate/delicate foamy dessert to get to our concert. The waitstaff did not hurry us, but were attentive to our need to depart."

  • "Didn't quite know what to expect when we first looked at the menu, but decided to go for the five course meat and fish menus with wine pairings. We were not disappointed. The flavors were simply out of this world and were enhanced by the wine specific to each dish. At first glance the portions may look small, but don't be fooled. We savored every bite and at the end of the evening were totally satisfied without feeling overly stuffed from a five course meal. These guys are on the cutting edge, but yet still seem to have fun with ingredients. Pig trotter terrine…really? YES. It works! If you're used to simply ordering à la carte at a restaurant, then I dare you to try a unique experience at Hugo's. You won't be disappointed!"

  • "My boyfriend and I had such an amazing time at Hugo's. Every detail of design, service, and food was attended to. The layout of the restaurant is beautiful with mostly bar seating in incredibly comfortable bar seats and separated booths for larger parties along the wall. The food was amazing. We opted for the 5-course tasting menu, which included a dessert, and let Chef choose our courses, which turned out to be an excellent choice. Our favorites included a fried cauliflower with indian spices and yogurt, lamb served with pickled mustard greens and sweet potato puree, and the broiled rice cake, which came with shiitake bacon, yuzu kosho and cauliflower puree. Everything was tastefully and artfully done, and we left very full and very happy."

  • "We both know and love good food. Also have dined in some very good restaurants all over the world. Found it very hard to eat much of each dish because there was just too much going on with the food. Too many flavors, textures, cooked and raw things to contend with (and these in only tasting portions). Despite high quality food, not much choice. Overall restaurant trying too hard to combine locally harvested food types. Ambience rather pretentious. Cocktails were too strong, both in alcoholic content and flavor. And the coffee selection seemed rather too "trendy". The bill was outrageous and our stomachs suffered too :(( So, we shall not be frequenting Hugo's again nor recommending it further unless this is your dining style. Shame..."

  • "I lived in NYC most of my life and have traveled extensively so I understand high-end dining. I am not a stupid person and yet I found the menu idea perplexing and the waiter, poor guy, seemed exhausted from explaining it. We paid a lot and left hungry. We tried to fill up on bread. I prefer going to a restaurant where I can get a wonderful, imaginative salad; some great fish, poultry, or meat; vegetables prepared in an interesting way. In any event, I am certain due to the reputation of Hugo's that it does fine and there are many people who love it."

  • "Loved the food especially the pain perdu - the guava sorbet was sooo good. The roasted carrot combined so many great textures. the rabbit sauce was especially delicious. The only glitch was the awful zombie container for my drink - it didn't fit the décor or the feel of the place. The unexpected little extras between the courses were a pleasant surprise. The servings were not large, but I was very full by the end of the meal. Would definitely go back again and have already recommended it to others."

  • "I have never seen chefs preparing foods so carefully and thoughtfully. They really take their time and put a great deal of thought and effort into the preparation of each and every meal. It borers on art and science and ends with a spectacularly tasty and well, almost perfectly, prepared meal. It is not inexpensive but I would not expect it to be either. So, go expecting to pay a higher amount that normal for sure and if you do, just sit back and enjoy. One last note; I highly recommend sitting at the bar to really enjoy watching the meal preparation. You won't be disappointed."

  • "My finance Google top places to dine fancy in Portland Hugos was number one everywhere. We decided this is out 5 year anniversary let's do something new. We walked in to they seated us. when the menu was given to us we were so confused, the owner came over and was very helpful and nice he could tell we had no clue. He walked us through and we ordered. We still were pretty clueless about what we were eating but every single bite was amazing. Absolutely the best food. I highly recommend Hugos to anyone even if they are like us, parents who never have time to do anything for ourselves. Amazing we plan on keeping up every year and celebrating out anniversary with them. Thank you for the amazing experience and time."

I loved it when Rob Evans and Nancy Pugh were the owners and love it even more now under the new ownership and with a major redesign of the kitchen and dining space. The food is imaginative and engaging, but always in the service of flavor and taste, and the creativity can be fun, but never silly. The wine list has improved a great deal in the last year, and it now lives up to the quality of the food. Chefs Andrew and Michael, and Co-owner Arlin have also added some large plates for family-style sharing. All delicious."

  • "This just happened to be one of the most highly acclaimed restaurants in Portland that I had not previously visited. However, it was a special occasion, a milestone birthday, so it seemed like a fitting time to try it out. My expectations were not necessarily that high, but I knew it would be a good experience. I was more than pleasantly surprised! The wait staff were supper and did a fabulous job explaining everything on the menu. We were a party of three, thus we tried everything on the menu. Everything was wonderful. The mussel dish I had was the best, absolutely the best, I have ever had. It has been a while since I have gone to a restaurant and experienced the WOW factor, but it was present this evening!"

  • "Although Hugo's is one of the more expensive places you could find to eat, it is well worth the money. A five course tasting menu is going to run you around $95, before drinks, per person. However, the food is undeniably amazing, and there are many surprises sprinkled in through the meal in the form of single bites bursting with flavor. You order five courses, you really get closer to 10 dishes though. Portions are obviously smaller, but they do progressively get heavier through the meal. But the best part may be sitting at the bar and watching the chefs do the work. They are meticulous and efficient. It is a sight to see. Thank you for the great experience!"

  • "Scheduled my birthday celebration with two hardcore foodies and was not disappointed. The four of us mixed and matched from three prix fixe menus, with wine and beverage pairing. The dishes were were as good as or better than HGTV ;-), the service was prompt and highly knowledgeable about every last detail, the wine pairings were so spot on it was almost scarey. Desserts were also amazing. What also is shocking, after a 5 course dinner we were not uncomfortably full, but we were certainly happy. One of my top three dining experiences ever."

Extremely unusual combinations resulting in a flavorful explosion. Certainly very expensive, but yet strangely a decent value considering the quality of the cuisine. The format of the restaurant is much improved as is the ambience. Service was gracious and attentive without being overbearing. Certainly not a place to be visited often given the high prices, but well worth it for a special occasion."

  • "Hugo's is the star of Portland's vibrant dining scene. The interior is cozy and comfortable, and the tasting menu was outstanding. The tasting menu is now structured to give diners plenty of options to choose from whether it's meat, fish or vegetarian. The flavor pairings and combinations were ingenious -- nothing like you will taste anywhere else. My husband and I travel the country in search of good food. Hugo's will be counted among our top 5 dining experiences in the United States. Stop next door for a cocktail at Eventide Oyster Co, Hugo's casual, fun next door neighbor. The staff is warm, friendly and eager to make you feel at home. The celery gimlet is a clever start for a fun night out."
