A word from Holley's Seafood Restaurant & Oyster Bar
When Chef Mark Holley opens the doors to his new Holley’s Seafood Restaurant & Oyster Bar at 3201 Louisiana Street this July, many people who have worked with him in his two-plus year’s quest to reach this point may think he’s broken a self-made promise.

More than once, the renowned chef, whose resume includes a number of Houston and New Orleans namesake restaurants like Brennan’s of Houston, Commander’s Palace and Pesce, has said he would not open a restaurant with his name on the sign.

Those people would be wrong.

It may sound like a technicality, but Holley says that it is not his name on the sign. It’s his family name. And when he presents the enticing menu in this grand new addition to Midtown dining, he’ll be the first to say it’s his family and their history represented throughout those pages.

The sign says something else, too. Seafood Restaurant and Oyster Bar.

There’s no technicality in that message.

    Spoke with Chef Holley. Waitstaff was great (Jarvis & Peter Micheal) , they really made us feel at home and welcomed. The bartenders (Ilene & Rosa) were really professional and accommodating. Can't wait to get back , Houston needed a restaurant like this and the Incredible Chef Mark Holley made it happen ! Thank you Holleys , you all made my lady's birthday exceptional ! ! !

    Best gumbo ever, but don't recommend the coffee crusted tenderloin. First one came out cold, second one way under seasoned. Had to ask for salt and pepper. They were nice enough to remove from the bill. Sides were amazing including the grits. The crispy redfish had a nicely crisped skn, but a little salty on the skin, yet the fillet had very little flavor. The cocoanut cake for desert was superb. Ambiance is outstanding and the sommelier and wine list were first rate. Definitely want to give it a second chance, because the gumbo was world class.

    Holley's has a wonderful menu based on New Orleans favorites with a Houston twist! Food and service was superb! Gumbo was amazing and the waiter brought out several hot sauce options including a Holley's Hot Sauce that you can buy. Crab cakes were perfectly cooked and huge lumps of fresh crab took center stage. They are willing to customize your dish and prepare it just how you want it. Crab rolls and fresh potato chips were excellent too! Definitely will go back soon!

    We were so happy to see Chef Holley return to what he obviously loves, Cooking and sharing his great food with his customers. We had been fans from his time at Pesce; even remember seeing him at Nordstrom's Bistro and wondered where he'd gone (?). We were happy to learn that he opened his own place, and couldn't wait to visit. Now the food....We enjoyed wonderful starters - a watermelon salad that was refreshing and a great start to the meal. My husband enjoyed an equally wonderful crab cake, that was 'all crab no filler'! For entrees, I had the crispy red fish, which was crispy and moist at the same time. For dessert, we shared the apple pie bread pudding, that was outstanding! Again, welcome back, Chef Holley. We will be returning!

    Mark Holley has hit a homerun with his new restaurant. The bar area and dining room are beautiful, and the food is unique and delicious. The barbecue shrimp and fried green tomato poboy was delicious, as was the gumbo. Enjoyed The cerviche and looking forward to trying the raw bar on our next visit. Our waiter, John, was very attentive, and the staff was very friendly. You won't be disappointed.

    Overall our small group (of 4) thought that Holley's was very good, but not great. There were a few hiccup's that kept us from rating the overall experience great, but that Mark H. can easily fix. First was our waiters lack of knowledge of certain items on the menu. Waiters need to know what is on the menu "that day" and not rely on last weeks menu to describe this weeks selections. After all, it is a Seafood restaurant and the entree's and appetizers will change based on "available and fresh". One highly rated appetizer was uninspiring (tuna and octopus crudo). But all other elements of the meal were great. The Thai Snapper was excellent, as were the wedge, soft shell crab, apple pie bread pudding and everything else we ate. $350 for 4.

    Wonderful waitstaff and the gumbo is a must. We loved Pesce and this was an equal experience. Well done building improvements as well. Created an intimate evening for us.

    This was our first visit and my wife and I tried a number of appetizers and one main course. Everything was seasoned well but nothing was over-peppered. The crab cake was all crab. I thought it might be too small for the price but it was so rich that I was satisfied when finished. We will be back to give some other items a chance.

    The service was great, most of dishes we order was very good. Like the spicy cumbo with duck meat and fried oysters, kind of breaking the traditional cumbo I used to have. Unfortunately the food take a bit longer to deliver, took us 2 hours dinner just for 2 starter and 1 entree.

    We went here for our 6th wedding anniversary. We had a few fantastic cocktails at the bar while we waited on our table. We had the Nikkei, gumbo, watermelon salad & fried snapper for two. Everything was fantastic! Our only regret was we didn't have room for the bread pudding that was so highly recommended.

    Expected awesome. Downfalls - restaurant was uncomfortably warm. Crispy Redfish was ok - not spectacular and not "crispy". Our waiter - older gentleman - Michael I think - not outstanding. Coconut cake was awesome. Really loves that Chef Holly came around to our table and said hello.

    We have been waiting for Chef Holley to open his new restaurant since we found out about his acquisition of the space last year. Did not disappoint! Everything was spot on. WE cannot wait to go again to try more of the menu and are excited to have his caviar service. One of the best old fashioned's in town.

    Food was seasoned very well. Food portions were small for the price. I was still hungry after appetizer and entree. I normally start getting full off appetizers at restaurants. Nice ambience. I would suggest others to save Holleys for a special event such as date night. I think that Holleys would be a good candidate for houston restaurant week in the future

    I was hoping for an amazing meal and to leave there well satisfied. We had the crab cake which was good and about the right price/size. I had the redfish which was quite a small portion, fish is cheap make the portion a bit bigger especially if its a guy eating it. She had the stew which was interesting... Menu needs help, you need some chicken, more meat or a lot better seafood selection,,,This is Texas we want Texas food not tiny Oysters from the NE , more salads would be nice ..Place was not too busy , my thoughts are serve lots of great Texas Seafood like Goode Company and you will be packed... More Sauvignon Blancs or Fume, why so many Chards??? Serve some bread!!! when you drink wine you need something to cleanse the pallette

    My first observation was the white wine displayed in the bins. Most restaurants only display their reds at room temperature. The red came out chilled nicely but was poured in to wine glasses still hot from the dishwasher. All of the glasses are etched with their logo and I guess they don't have enough. Stuffy clientel. No oyster forks served with oysters. Server inattentive after the runner brought our food. Again no fork or knife as it was taken with the appetizer. I won't be in a hurry to return.

    I'll come back again...and chalk the hit or miss experience up to being a new restaurant...the gumbo and the market fish of the day were wonderful!!!...on the other hand the ceviche - 'fish in a bowl' and the redfish entree need some work...the 'fish in a bowl' was bland and boring...everything on the redfish entree was very good except the redfish...the corn relish and the ravioli were excellent (although I didn't quite understand what the shredded beef stuffed ravioli was doing on my plate...but none the less it was delicious)...the redfish it self was a bit over cooked (I had to use a knife to cut it) and had a strong 'old fish' smell... Like I said I will give Holley's another shot hoping they can bring it together.

    Still new so the service was spotty. The menu is limited and not very appealing. The food was ok not great. the best dish was the BBQ shrimp. Needs the kind of menu He had at Pecse. We may go back, but it will be a bit.

    The restaurant could not be better suited for the replacement of a lost wonder in Pesce, a place Chef Mark never got enough credit for. He has assembled a great team from the previous restaurant and kept the best food and service intact. From Sherrie at the front door to the fabulous Lennie at the Oyster bar, all is welcoming to those that missed the previous restuarants passing. Several new additions from Chef Mark make this uniquely his and they are wonderful. Go there, enjoy, and appreciate the best Houston has to offer.

    Everyone at our table enjoyed their meals. We all generally had seafood dishes. The quality and freshness of the fish was impeccable. Each side dish complemented the entrees very well. The gumbo starter was delicious and the fried oysters were placed in the gumbo at the perfect time so that they maintained their crispness in the soup while eating. I would definitely recommend Holley's to anyone.

    Chef Holley's former restaurant was our go to for special occasions and we were anxiously awaiting the "next place." We had a birthday to celebrate and we were not disappointed. Great food, attentive service, nice wine. We'll be back and almost anytime with a dear friend is a special occasion. We could visit and be heard easily. The lighting was enough to see without sunglasses. We had fish, and they did the little tweaks to the order to make it just what we wanted.

    So excited to partake of Chef Holley's equsite cuisine. The redfish was amazing. Mom would not have to make you eat the vegetables because they were rich & delicious. Simply heaven was the coconut salted Carmel cake! Chef Holley, Congratulations!!! Holley's is a wonderful experience.

    Attended with wife. We had known Mark Holley at Pesce and thoroughly enjoyed his menu. We were not disappointed at Holleys. Bar is professionally staffed & drinks are perfect. Dinner could not have been better. We had salad & gumbo as appetizers. I had muddled stew & spouse had crispy redfish. Food met our high expectations & service was incredible. Our waiter, Chad was superb, knowledgable of all menu items and ensured we were well taken care of. In short, Holleys was an excellent experience. We will go back & we highly recommend

    Chef Holly's Seafood and Oyster bar is a hit. I loved the ambiance, decor, and most of all the food. The seafood gumbo was wonderful, served with a different twist - adding fried oyster, so good and creative. The service was impeccable! My only suggestion is that it would have been nice to have more variety in terms of entrees. For the most part there was only fish on the main course menu - I must say a good variety of fish, but no shrimp, oyster, or scallop dishes. When I think of seafood restaurant I think of a number of options, not just fish. Also, sea bass is a favorite, it would be great to have that on the menu from time to time. I will be visiting the restaurant again very soon. I loved it.

    We ordered drinks and the waiter mentioned several times that the bar was backed up. That's not acceptable in a fine dining restaurant. We were never asked if we wanted another drink. Water is plentiful there because they continually kept the water glasses full. All food was including appetizers was extremely slow but most dishes were good. No bread was ever offered or served. Sat for over an hour with no drink or bread or food but plenty of water.
