A word from Holley's Seafood Restaurant & Oyster Bar
When Chef Mark Holley opens the doors to his new Holley’s Seafood Restaurant & Oyster Bar at 3201 Louisiana Street this July, many people who have worked with him in his two-plus year’s quest to reach this point may think he’s broken a self-made promise.

More than once, the renowned chef, whose resume includes a number of Houston and New Orleans namesake restaurants like Brennan’s of Houston, Commander’s Palace and Pesce, has said he would not open a restaurant with his name on the sign.

Those people would be wrong.

It may sound like a technicality, but Holley says that it is not his name on the sign. It’s his family name. And when he presents the enticing menu in this grand new addition to Midtown dining, he’ll be the first to say it’s his family and their history represented throughout those pages.

The sign says something else, too. Seafood Restaurant and Oyster Bar.

There’s no technicality in that message.

    This is constructive critism. The food, as always, is so good. But this time the service was a total miss. We fell into the vanishing cream. We couldn't get water, ice, another drink,etc.

    The food and service were outstanding. The service was great from the hostess to our very friendly and knowledgeable waiter. Mark Holley took the time to greet each guest. Every on on the staff wished me happy birthday. The food was absolutely delicious! We ate every morsel that was beautifully presented to us. Reasonable markup on the wine. We can't wait to go back.

    Holley's is a good seafood choice on the near South side of downtown Houston. The fare tends to be a bit spicy as it leans toward Louisiana style, even though Holley is from Ohio. There are some very creative dishes and flavors.

    The entire menu was amazing. Don't leave without trying the Crispy Redfish. You won't regret it. Also, try the coconut dessert.

    My wife is celiac. Waiter Will was excellent. Chef Holley came by the table to make sure our Anniversary Evening was special. Had a dozen mixed oysters, 2 ceviches and oyster shooter for appetizers. Grouper and flounder for the entrees. Wanted to try the kimchi greens but they contain soy. Did not have time for dessert since we were headed to watch the Rockets beat the Spurs.

    We've known Chef Holley since he was Chef de Cuisine at Brennan's of Houston many years ago. When he opened his own restaurant, we knew we had to try it. It was an excellent experience, from attentive service (Russell) to superb cuisine to tableside visits by the Chef himself to be sure we were happy. The soft-shell crab appetizer was one of the best I've ever had, and the Amberjack was fresh and perfectly grilled. I recommend this restaurant highly.

    Waiter took forever to do anything - we were left looking around the dining room like idiots all night trying to order a glass of wine or order our next dish. Appetizer portion sizes are way too big, like an appetizer. Thai curry mussels could've been an entree itself instead of an app. The only thing decent was the minimalist crudo. The wine by the glass list was almost insulting it was so small and the selection was terrible. The entrees were a joke too - I got the $48 Akaushi ribeye with duck fat potatoes - garbage. Steak was never properly trimmed, wasn't seasoned at all, and honestly tasted like a Wal-Mart steak. The "duck fat" potatoes tasted NOTHING like duck fat either. I've had plenty of Akaushi and Texas Kobe in my life, and this steak was awful and tasted nothing like them. I've also cooked with duckfat many times myself and gotten plenty more flavor the the bland excuse for potatoes I was served. All in all $250 down the drain - total let down after I was told nothing but good things about the place. Even tried reaching out to the management and they never got back to me. Will not be eating there again, nor will I be recommending it to anyone else.

    This was our first time at Holley's. Our server, Michelle was wonderful and the owner came over, welcomed us and chatted for a while. We started with the barbecued shrimp and salads. All were good. For my entree, I had crispy red snapper which was delicious. It was served with a succotash so divine that I wanted to lick my plate. My husband has the blackened grouper which he enjoyed as well. For dessert, we had the apple pie bread pudding which was SUPERB! It was served piping hot a la mode and the hubby and I were fighting over the last spoonful. Would absolutely recommend. We will definitely be going back.

    Front of house pressured us to take a table next to private room - we were tagged from the get go as not being "players". We were going to be sharing a waiter with a party of 18. After 20 minutes of nothing - had to get a busboy to get us service. No apology - finally ordered drinks - they got 2 of the 3 wrong. After complaining - got a new waiter and insisted we be moved - he tried to help but English wasn't his strength. Food was actually v good - dessert was amazing. Had to repeatedly ask for table to be cleared/fresh drinks. Chef/Owner came out - obviously having been briefed by his staff that we were "difficult" - he not once gave thought to the possibility (reality) that his staff were really quite awful - disappointingly complacent.

    Everything else left to be desired. The crab cake appetizer was ok but the sauce not a good match. The entrees, both mine and my friends, we left more than half on the plate. Maybe we should have stuck to the raw stuff... Which everyone around us had.

    My wife and I really like Mark Holley's food - but there was a little too much pepper in the gumbo. The reason I'm commenting about it because my wife carries her own "hot sauce" with her, so if she says there's too much pepper - then somebody put too much pepper in the gumbo on Saturday.

    Our group of 4 had a great dinner at Holley's on 10/17/14. We started with 2 Oyster Ana shooters & 2 Bloody Mary shooters. We enjoyed both. We split the wedge which was really good, especially with the fried okra. They were a little small to split, but we felt it was enough considering the rest of our meal. My husband & I chose the special Alaska salmon & we both agreed it was the best we'd ever had. The grilled vegetables served with it were outstanding. Our friends had the Crispy Redfish & the Muddled Stew. Both were very pleased. I didn't give this rating 5 stars because to me, the set-up of the dining areas is strange. The entire front of the restaurant was empty, but where we sat, in the back, it was very crowded.

    Enjoyed the appetizers during the happy hour. The main course was promising, but not yet there. Both the Owner and the Chef came by and asked our opinion on the food and listened seriously to what we said. I just gave it an average rating but would definitely go back, order different items as they are still getting into their rhythm.

    When I heard Chef Mark opened a new restaurant, I was looking forward to going. It was a Thursday night so it wasn't crowded. Our waiter was very knowledgeable about the menu and was really personable. That's where it ended. We started with drinks and the amazing Parkerhouse rolls. We ordered the starters of Ceviche and BBQ Shrimp, but we never saw them. After around an hour, we received our entrees. Our waiter had forgotten to place the starters order, there was barely an apology and we felt the staff thought we were lying. On a night where the restaurant isn't crowded we had to wait an hour for any food. What food we did receive was quite good. It took forever to get the check. It was a very sad experience, don't think I'll be going back

    Really wanted to like hollys, overall I did. There were some notable slips- waiters calling each other idiota and pendejo- not smart in a town where everyone speaks Spanish!!! Mussel sauce was great! But they sales were very small and 1/3 didn't open (undercooked). Please ask Pellegrino drinkers if their drink of choice should be in a wine glass. Lose the lemon unless I say "yes I'd like that". Service was irregular. Overall, very friendly. Grits were cheesy and had whole kernel corn. Tasty! Fish was delicious, but sauces and garnishes lacked a reason, didn't bring a lot to party. We both thought they read on menu better than they tasted Cheesecake was very nice. Substantial, nice crust. Tipped 20 percent and had car returned quickly

    I booked Holley's after reading the great reviews but we left extremely disappointed and wish I had selected some place else. The evening started with the worst Manhattan I have been served at the bar (way too sweet) and lacking in whiskey. We ordered the flounder and the special that evening which was a Mahi Mahi. The flounder was so salty that it was inedible and most was left on her plate. I tried to eat some of it, but it was not palatable. My Mahi Mahi was marginally better but it too tasted like the lid on the salt shaker fell off. The food delivery time was also extremely long. We will not be back for sure. I had to get up twice during the night to have a glass of water due to the salt and whatever other overly done seasoning

    Excellent food, beautifully prepared and served. The overall cost was quite high due to the cost of the wine. Would definitely recommend for special occasions or a once-monthly splurge on something special. There is one section of seating where diners sit on a bench seat facing out towards the rest of the restaurant. Stylistically it looks nice but it wasn't so good with regards to the overall dining experience (I prefer to sit opposite my dining companion not next to them). Other than that, a great dining experience. Good food, good wine (although expensive) and very good service.

    Made last minute reservations and they were able to accommodate us. The ambiance was really nice and swank, loved the color and décor. The owner went around several times and greeted guest and chatted up everyone. Drinks were delicious and with a twist...loved the peppercorns added to the gin drink. Food was AMAZING!!! had the snapper with hoppin john and it was so fresh and full of flavor. Just the right portions as well. My friend had the grouper and it was just as delicious. Hard fish to find in this area so I was impressed that it was being served. Took the gumbo and coconut cake home and WOW!!! Will be going back again and again.

    You will not find better food or service anywhere in Houston. The atmosphere was excellent. The wait staff was knowledgeable, friendly, and attentive without being overly . The environment was harmonious. People seemed to like their job and enjoyed making the guest have a good experience. Our food was brought out all at the same time, hot, and delicious. The chef greeted us and left us feeling eager to come back soon. We all loved this restaurant. Do yourself a favor and dine at Holley's. You will be glad you did.

    Not only is the food very good at Holley's, but the service is excellent as well. Mark Holley and the manager were walking to every table and greeting all the customers, this adds a very nice touch to the attentiveness of the overall service factor.     Food quality was outstanding. My guests and I had the watermelon salad (perfect combination of sweetness, saltiness, crunch, and creamy), the simply grilled fish (the roasted vegetables were perfect), and the coconut cake and key lime cheesecake. Everything was outstanding. The service wasn't the best. We had random kitchen staff come to the table with food that wasn't ours and dishes/drinks that were for our table weren't consistently given to the right person. The location is good for business people, but the dining room needs some sound control/baffling as it is loud and challenging to have a conversation. I really hope they will invest in making the dining room less cacophonous.

    My husband and I dined at this restaurant on a Saturday afternoon after a play. We were familiar with the chef as we had eaten at his prior restaurant and truly enjoyed his level of expertise. The restaurant was well designed and the staff attentive and cordial. The food was well presented and delicious. This is now one of my most favorite places. As always, Mark did come out to welcome us and ensure we were satisfied with the service and our meal. My husband took a dessert home. My only regret is that I did not!

    Amazed at how much staff was at this restaurant. Food Presentation was beautiful, value for the price was not there for me. Knowledgeable and friendly staff, knew the menu and the specials, but there was a delay from sitting to ordering and receiving our food. We even told the waiter we had an hour to dine and get to the concert. This restaurant has only been open 6 weeks. I will give it another chance later this year.

    Gumbo was the best I've ever had. The wedge salad had all sorts of surprises in the bowl along with lettuce and a wonderful ranch dressing. Service was friendly, helpful and patient. Mark Holley toured the dining room greeting old friends and making new ones. All in all a lovely dining experience.
