Our server made the evening very special and the food was fantastic. I highly recommend this for anyone who likes excellent food in an interesting setting. Although we don't live in the Milwaukee area, we will plan to be back whenever possible.5/18/2013 12:00:00 AMGreat dining experience!It was the best dining experience we have had since we ate at a four-star gourmet restaurant in Las Vegas several years ago but in a more relaxed atmosphere. I ordered the IPA and my wife the Stout - both were quite good. For appetizers we had the Braunsweiger - just excellent and made in-house, the Ramps covered with a Duck's egg - also very good, and I ordered the Opah Cheek - also quite good. My wife ordered the Flat Iron steak (medium rare) for her entrée - it was fantastic! I ordered the Cobia - it was quite good, but I wished I had ordered the Elk steak. Dessert was the Chocolate Pot Cake - it was awesome. At our hotel, we mentioned this and everybody said that while Rumpus Room was great, Hinterland was more unique. We decided to give it a try and had one of the better meals we've ever had. We arrived early to have a cocktail at the bar (would have happily hung out here - the bartenders were great!), then moved into the dining room. The menu changes almost nightly from what I understand, and the hardest part of the menu was to not order everything. We ended up with halibut cheeks, veal heart oscar, antelope, and duck testes (how can you not order them if they're there?!?) - everything was outstanding, as was the dessert! Incredible, innovative menu, however still offering some traditional entrees for the less adventurous. The atmosphere is great. The staff are amazing. They also offer a great, diversified wine selection. Their sustainability with local farmers and producers is super. It was recommended by someone else, but we were not sure about the menu. It's different. Took a chance, and we were glad we did. Our server was excellent. He was knowledgable about the menu and offered helpful suggestions. He brought us drinks and then didn't bother us until we were ready to order. We ordered appetizers and our server told us to take our time on the entree. It was a totally relaxed atmosphere. The food was delicious. We tried some new fare and were pleased with the taste and presentation. The portions were just right. Not gourmet small and not cafeteria-type, huge portions that one cannot finish. Hinterland has a diverse menu and really terrific food. Sarah was a great server and responsive to our needs. Don't miss their beer selection either because they have their own microbrews on tap. We chose Hinterland for an early meal before a show at the Broadway Theater so the location was perfect. The menu is focused and many of the items looked appealing. I had a very nice radicchio and fennel salad and a terrific veal chop with a nice potato and bitter greens ragout. My dining companion had the baby spinach salad and raved about the seared diver scallops. Wine list by the glass was also very nice.
