A word from Hinterland Brewery Restaurant
Hinterland…the hub of contemporary American cuisine in Green Bay, WI. Executive Chef, Kelly Qualley, and Sous Chef, Josh Swanson, explore a multicultural approach to cooking and eating. Their journey to create bold flavors and uncommon pairings is a daily mission at Hinterland.

In order to accomplish this sojourn, we've partnered with fisherman in Honolulu, Seattle and Portland, Maine. These partnerships allow our chefs to procure fresh fish as often as two times a day. Other relationships with small, local growers and ranchers allow us to provide our customers with extraordinary game as well as hand-foraged mushrooms and heirloom produce. The result is a menu that evolves with every season and changes everyday.Continued

  • "Good food and service! My son ordered the elk and it was by far the best entree in our group. Very tender and flavorful,"

  • "I really wanted a special evening and to treat my date to a fine dining experience with a great atmosphere. I positively picked the right place! The staff was very welcoming and casual, yet clearly professional and knowledgeable about their offerings. The food was the best I have had anywhere in the GB or Fox Valley areas. I travel a lot, domestic and abroad, and I try to make dining the highlight of every trip. Its great to find we have this class of dining experience right here in GB!"

  • "Hinterland has never failed to impress me. I've gone for a happy hour beer, some awesome food from the bar menu, and now with a large group celebrating. The service is great and the food is incredible. My wife is 100% gluten-free and the server was very knowledgeable and accommodating. They offered to make almost any entree gluten-free and explained how the dish would be prepared. We flew in on a delayed flight and were late for our reservation but the staff held our table and were very gracious about the entire situation. I recommend this restaurant always."

  • "Service was excellent, great food, great beers. We came from out of town for a nice quiet and romantic dinner for valentine'a day, Hinterland was perfect."

  • "Do not accept a table upstairs. The acoustics are so bad and it is so loud, you almost have to shout to be heard by the person on the other side of the table. Food was good and service was good as well. They do need to broaden their wine list."

  • "The food ranking was knocked down for quantity, not quality. The food was very good, service top notch and the ambiance is great but after spending $130 (plus gratuity) for two I don't expect to leave hungry. I don't need monster portions, but the sweet corn chow chow on my $38 Seared Diver Scallops consisted on 14 kernels of corn a.k.a a spoonful. The bread brought to the table consisted of one baguette sized slice per person, no butter or dipping oil. The shrimp starter worked out to $4/bite. I could go on, but I need to go get something to eat."

  • "My wife and I went to Hinterland for a valentines dinner, we booked reservations for Saturday of valentines day weekend through open table. We arrived and were seated immediately. We order some beer and the beef pot sticks appetizers both were great. I order the scallops with pork belly for my entree and my wife had the duck breast. Both were outstanding dishes. For desserts wife had the luna stout chocolate cake and I had the vanilla creme brûlée. This was our first dining experience at Hinterland but won't be our last. We had done their brewery tour previously, which was a good time as well. Overall we have been really pleased with our experiences here."

  • "We had late night reservations and were sitted upstairs. We were a little disappointed as it was much louder and more of a bar scence than the downstairs tables. However, after 10 min we asked if there was any available sitting downstairs closer to the fireplace and we were quickly moved downstairs! We had a table next to the fireplace and received excellent service from our server Eric. He was very friendly, but not didn't hoover around. He was knowledgeable but not pushy. We loved it! Everything we ate was fantastic! This was our second visit and we cannot wait for our third!"

  • "Definitely for special occasions. Extremely pricey, but we loved the decor, bartender was very friendly, and most of our meal was fabulous, the appetizer bison meatballs fantastic, beet salad was also fantastic. However, the entree was a pork porterhouse cut served over brussel sprouts, but the pork was half bone and very grizzly. Very disappointed about that since it was a whopping $36. Food presentation was top notch."

  • "The IPA was outstanding.....the food choices were fabulous, and our meals, specifically, were outstanding. Kids - fish n' chips. Adults - Trout, calamari & mahi was fantastic."

  • "Can't comment on the bar menu as we ordered from the main dinner menu. Presentation was excellent as was the food. Service was good - did not feel rushed. Excellent coffee and tea with dessert - there is no skimping on mug size."

  • "My date and I enjoyed our time there, very good food, very good service, very good environment. I am a fan of Porters/Stouts and Hinterland knows what they are doing. Appetizer: Goat Cheese Curds (phenomenal). Main Dishes: Mahi Mahi (very good), Pork Chop (very good). Dessert: Stout Cake (phenomenal). I felt the food was a little overpriced, by maybe $5 or $8/plate, but definitely tasted delicious."

  • "My wife and I chose Hinterland Brewery Restaurant to celebrate our 22nd wedding anniversary. I had made arrangements through Hinterland's web site (extremely easy) to have some flowers for my wife ready at the table when we arrived. When we checked in with the hostess, she led us to our table in front of the fireplace and there were the flowers that I had ordered. We had a wonderful meal. The appetizers, salads, entree, and desserts were among the best we have ever had anyplace. The waitress was very friendly and helpful. The hostess went out of her way to answer our questions about Hinterland as this was our first visit to the Restaurant. This was a great experience and we definitely will return."

  • "Excellent food. Had Walu Tuna and Dive Scallops with coconut rice. Absolutely the best I've ever had! Like that they have a different menu every night. Waiter very knowledgable about the food and recommendations were right on. Sat by the fireplace which helped make the place more cozy otherwise it seemed a bit like a warehouse, (echoey and cold) but the music and dimmed lighting helped make up for that. All staff was very friendly. Great place for a special occasion and to entertain clients."

  • "Always look forward to an evening out at Hinterland. Staff remembers you and even what you drink. They really take pride in making you feel your special. Food is fantastic and by far one of the best Restaurants in GB. Food selection changes often so you really don't know what you'll find on the menu for the evening which we enjoy. They do keep some of their favorites and yours so if you are going for a particular small plate chances are they will have it or something like it or they will make it for you. What more could you ask for."

  • "I had the Duck, wasn't bad but wasn't great. There were 6 people at our table & no one expressed an 'exceptional' meal - all thought theirs was just OK. Wine by the glass seemed limited as well."

  • "We always think about trying somewhere new when we're in town but always end up back at Hinterland. We never regret going. Fun different cocktails, good wine list, excellent unique creative food. So nice to have a fine dining option with something other than the usual lineup of steak, sea bass, duck, etc done in all the usual preparations. Would highly recommend anything on the menu with an Asian flair. The beer battered fish taco was outstanding, as was the fried quail, and those were just some starters. Love the natural, understated decor and of course the fireplace. Can't say enough good things about this place."

  • "This place has a very nice space and is above average compared to some other GB restaurants we have been too. However, it needs to work on its execution a bit before I could give it a "very good". I would return tho, and would recommend. Its just that the dishes that sound so good on the menu are not quite fully realized on the table. The best thing by far was the brussel sprout appetizer."

  • "We celebrated my wife's birthday with another couple and had a wonderful evening. We sat by the fire and stuffed ourselves with a delicious variety of foods. We shared calamari and a cheese plate to start, then everyone had different soup, salad and quail - all wonderful. We had four different entrees; every one was perfect. We hadn't saved room for dessert, but ate it anyway, and weren't disappointed. Everything was great! We'll definitely come back for another special event."

We are looking forward to when the menu includes more game meat.It is easy to get to and has ample parking. OUr wait staff were very attentive and knowledgeable. WE LOVED everything about our experience. We will definitely return and recommend. I had Walu. My husband had Mahi and our guest had Halibut. All meals were fabulous. Followed by an excellent dessert and pot of coffee.A beautiful warm fireplace nearby with a GIANT moose head overhead to guard the fire."

  • "Server was outstanding in making suggestions, not only for dining options but brew specialities also. "If you are having X for dinner then let's do Y for your appetizer". Hinterland was very busy, however, our service and food was outstanding, timing was perfect, server was attentive but not pushy. Don't forget dessert."

  • "This is the second dining experience here in two years and the food was as amazing as the first time. The ambience remained as special as the I expected and provided an awesomely romantic setting for a marriage proposal. This venue will remain a picture of happiness in my mind forever."

  • "We visited as a 3 generation group of 6. The wood-burning fireplace was a plus. Except for one person at a nearby table whose voice tends to carry, the place was comfortably quiet. So many inviting menu options and none which we tried were at all disappointing. Impressive was the number of local sources for some of their fine ingredients including some meats. Highly recommended. Don't expect bargain prices, though."

  • "I selected Hinterland for dinner as part of a business meeting. I wanted to have a conversation and the setting was perfect. The food was excellent especially the soup. The service was okay but not very attentive. I waited a very long time for the bill - in fact my business associate left because he didn't have time to wait. The overall experience was positive. I would come back."

  • "Noise, if you like noise, then this is the place for you. We sat on the small second floor with three other parties, two of them obnoxiously loud. What does it matter whether the food was good? In fact, it wasn't very. The potato/leek soup would have been the best thing I had, except the smoked ham overwhelmed both those subtle flavors. Maybe that means hip? The potstickers were apparently wrapped in highly tanned, translucent leather. My salmon filet was too thin to have been worth the trouble and even as the waitron was assuring another table it always came out medium rare, I was given mine well and truly done. The wine list was far too young to be worth drinking, and I really can't recommend the homebrew, which came in a tiny .4 L glass."
