Even though we were stuffed by dinner, we still made room for the desserts, which are also not to be missed. Combine some real Texas style BBQ some southern style hospitality and atmosphere too Boot you got yourself really great time

There is a good mixture of good and so so singers so everyone felt comfortable giving it a whirl. Well know the camp fire baked beans. My wife is always jelaus to me when I visit Hill Country.

Generous helpings of meat in all its shapes deliciously barbecued to juicy perfection. This is the place you want to take your annoying vegan cousin with the Liberal Arts degree she never seems to finish. The one thing that holds back the 5th star is the sides that seem a little overworked and could have been better. As of now many of them feel like an interchangeable mush. No service to speak of: food is orderd at a counter in this share-what-you-can menu of beef, pork, chicken, ribs, sausage piled on brown paper sheets, and you can carry it back to the table yourself. Sides are fresh and delicious, all meat is excellent quality, just the quantity is overwhelming. Will definitely be back with a hungry group next time... shoulder or roast beef and prime rib), chicken and brisket served moist or lean (get the "moist") are outstanding as are the sides.
Desserts, especially the Blue Bell ice creams are not to be believed and you may not have room for them anyway. Huge beer, bourbon and tequila selection along with great mixed drinks and a 2-for-1 special on Tuesday nights. Hill Country on 26th Street does them all one, two, even three times better with terrific pit barbecue meats; daily specials and incredible desserts that are not to be missed; 2-for-1 cocktails on Tuesdays along with a barbecued whole hog; Wednesday's is mouth-watering chicken wings; Thursday's and weekend nights offer the creme de la creme, pork belly with a chili rub. Often overlooked are slices of prime rib and pork chops. I opted for the all you can eat option which is a great value. The Ribs did not disappoint. I've gone through my whole life hating brisket until I had it here (the moist version), it erased the memory of my mom's brisket. Everything was cooked exactly as it should and all the sides were great except for the Pinto Beans (unless you like REALLY salty things). My friend really liked the cole slaw and said it reminded her of her mother's. I think she said it had apple in it. Only 4 Stars because of the Service, staff is friendly but aren't attentive at all.
