Named "Best Barbecue in NY" by both New York Magazine and Time Out New York, "Top 10 Barbecue in the U.S." by the Wall Street Journal and "Best New Restaurants of the Year" by New York Magazine, Hill Country takes its "cue" from legendary Texas barbecue joint Kreuz Market and its distinctive dry-rub style. Hill Country's brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings. Hill Country features two full bars with an extensive menu of long neck beers, tequila and bourbon, and a state-of-the-art sound system and stage for live music celebrating the thriving Austin music scene.   • "If the food wasn't so consistently good we wouldn't think of returning to this place, at least not on a weekend night. Though we had a reservation, Hill Country hasn't figured out crowd control logistics so that diners can enjoy the amazing food without waiting on multiple long lines, first for a table and then for food. It was darn near pandemonium and it was clear that patrons and staff were equally unhappy. It appeared that no one was running the show, resulting in an unsatisfactory dining experience, saved only by the delicious food. What a shame that Hill Country can't figure out how to give diners a thoroughly enjoyable experience."

  • "We already knew how great the brisket (always get moist), pork ribs and sides were but who knew the turkey was so delicious. You really don't have to wait for Thanksgiving anymore and besides, being pit smoked it tastes totally different from turkey roasted in the oven. EKA chili has brisket and sausage pieces baked in and is more beef and flavor than it is beans and that's a major advantage. House drinks are very reasonably priced and the corn pudding, cole slaw, and collard greens are something to behold. Leave a little room for the Blue Bell ice cream sent up straight from Texas. Always order by the slice or number of ribs you want; they'll weigh it and charge you based on that. Prime rib and pork chops are incredible here."

  • "The restaurant wasn't too crowded when we got there (6PM on Sunday night). It didn't take long to get our food, and our iced tea glasses (Mason jars) were kept full early on. The "moist" brisket (we call it fat brisket here) was AMAZING, as was the Kreuz sausage and the sides that we tried (mac/cheese, corn pudding, and greens) were all yummy. I could've done without the prime rib my hubs ordered, but I'm not a huge fan and therefore not the best judge. As the restaurant got busier, we didn't see our server very often, but that's to be expected, I guess. The desserts we had (brownie and Blue Bell Homemade Vanilla ice cream) were great. My only wish is that the desserts came in sample sizes, so we could've tried more of them!"

  • "The only thing that disappoints about Hill Country is that sometimes they run out of the yummies. We were looking for beef ribs but they were out (we also dined late that night). Everything that we have there is usually delicious (the ribs were a little salty this time) but the chicken is ALWAYS moist and juicy. We absolutely love the sides. The green bean casserole is always a winner and I'm a fan of the corn pudding. My fiance likes the bourbon sweet potato mash which actually really does taste like bourbon. Overall, this is great bbq in the city."

  • "a vibrant, at times raucous restaurant, Hill Country is a fun experience. we had a party of 7 and got to experience a wide variety of side dishes. all excellent. the meat is sensational--our favorite was the turkey but the prime rib was also delicious. the beef rib is really huge yet incredibly tender and flavorful…however quite salty! for optimum eating, get several small portions of meat. you can save room for dessert, which all looked good, but we didn't plan properly for that. good eats, fun place!"

  • "I'm biased with barbecue because my grandfather was the BEST Barbecue artist north of the Mason-Dixon! This was pretty good stuff, though. Not too saucy and still had a lot of flavor throughout the meat. Not as good as grandpa's, but I would go back. My complaint is that it was overpriced. They charge by the pound and there are some pretty enormous, heavy bones in those ribs. The sides were tasty; plenty of options for g-free. NO OPTIONS if you are Paleo and/or trying to avoid added sugars for any reason. I had the collards and they were FULL OF SUGAR! That is extremely disappointing since... well... it's BBQ! I should be able to go and eat well-seasoned food without having to ingest a ton of sugar. Lively vibe. Not crowded. Sort of odd."

  • "New York no longer needs to play 2nd ( or 3rd, 4th or 5th ) fiddle to BBQ joints throughout the south west. This place rocks! You place your order and being it back to your plain albeit comfortable wood table and chairs. Served "Texas style" on paper and with white bread, it's delicious! Mind your clothes during this eating frenzy cause things do get deliciously messy! Have the pitcher of margaritas for only 20 bucks....well worth it! It's on my to to list and perfect for large groups..there's an all you can eat option but what we order for three was more then Enough and everything was great!cribs, chicken and sides of MAC and cheese, warm potato salad and string beans ( spicy) were AMAZING! Just go!"

I was a little nervous at first that we weren't going to enjoy it as much since it's more buffet style then seated but it was a GREAT experience and the food was AMAZING!   • "LOVE Hill Country Bar-B-Que! As a Native Texan I can honestly say that this is traditional Bar-B-Que fair at its finest. Try it all, and you will not be disappointed! The meat is well cooked, and so tender that you do not need a knife to cut it. The sides are also really good - be sure to try the baked beans with the burnt ends, the mac and cheese (my three year old's fav.) and the mashed sweet potatoes - and don't forget dessert - Banana Pudding is homemade and my family's favorite. Just a note on the atmosphere - when my family walks in it feels like home - Texas - great to have a place in NYC that brings a little Texas to the North East! Great friendly service as well."

  • "Visiting from the UK, we pre booked and arrived at this lively place on a Wednesday eve. Great atmosphere, loved the true American theme and the food was to die for! It's a barbeque restaurant where you line up, choose your meat by weight and add your sides. Love the concept and wish we had one back home!! Meat was delicious. We went to lots of great restaurants whilst in NY including some super high rated trip advisor favourites for some fine dining, but we agreed that this was our fave of the whole trip! For food and experience. Oh and the live country band topped it off. Will be telling all our friends about this one."

  • "I love the pay-like-you-weigh concept at Hill Country. And there's never a problem with splitting the bill when dining with groups (there's always that one friend who doesn't drink alcohol). But whenever you wanna get you BBQ on it's still my favorite spot in the city. And whatever you don't eat that night tastes just as good the next day."

  • "I've been to Hill country before. Never as last as 10pm, like this time. They were out of most things - ie Short Ribs, most of the beef was not available. The pork spare ribs and hot sausage were good. I usually love this place. Because of the severe limits on what we could eat, I was a bit disappointed. Dessert was great(apple crisp) Wait staff , solid and reliable."

You do sit at tables, and you do have wait staff who take your drink orders, but otherwise it's up to you to go to the market-style area and order whatever main dishes, sides, and desserts you want. The down side to that is that you have to wait in line at that area, but it's kind of a fun experience. The PB&J cupcakes are INSANELY good. Get one. Seriously! (Well, unless you're allergic)."

  • "Used to love this place. The food is pretty good and close to Texas barbecue. Most of the staff is friendly as we encountered because we were with friends and we all interacted with different people. Some of the staff isn't so helpful and getting something to drink when you're at a table is a challenge. Then again, in a business where you always have to be "on" (and tips are "pooled"), it isn't easy and the couple of people I'm referring to may have had something going on or just dealt with someone who was less than pleasant. It happens. Overall, a pretty good time. Great live music, good food and good company. What more can we ask for? =)"

  • "I've been to Hill Country many times in both NYC and DC, and always enjoy the food. I took a local for her first visit on a Friday night during restaurant week. The food was outstanding as usual, with the beef rib particularly good this visit. My local friend declared the chicken to be the best she had ever had, and that she is looking forward to making Hill Counrty one of her regulars - particularly since she lives within the delivery zone! Apple Crisp dessert was also delicious - not too sweet!"

The ordering was too rushed, confusing and conflicted with the way we ended up getting the food. Limited beer selection. No kids menu. Expensive! But I'd go again. The food was delicious."
