Guild and CompanyWhat a find!We were in Burlington for UVM graduation, and found this gem for our last night dinner. The bartender made amazing, classic but inventive cocktails, and the food was outstanding-- and the ambiance was cool and inviting. A little out of the way from downtown, but not too far and easy parking. Pricey menu but worth it.4/26/2013 12:00:00 AMNot as Expensive as I Thought!My husband and I have been waiting to go to Guild & Co since it opened, but were intimidated by what we heard about the prices on the menu and the long wait, even if you have a reservation.
We went on a Friday night, about 6:45pm. We had a reservation, and got seated immediately. I suggest if you want to avoid the wait, arrive before 7:30pm.
The asparagus appetizer is divine! I highly recommend it. The brisket was also very good, and although my chicken sandwich was a bit dry for me (I am pretty picky), the herb aioli it came with made up for it.
And for prices: the steaks are expensive (and I assume worth it), but everything else was the average price you'd find at any other non-chain good restaurant.

When my daughter and I weren't happy with the "cocktail of the day", we were offered other choices with no questions asked and were not charged for the cocktails. The ribeye steak for two was a good deal with salad, two sides and two accompaniments included. The meat was tender and delicious- cooked to perfection. A salmon tartare starter had a nice pairing of spicy kick and tangy flavour. My scallops were equally good but I would have enjoyed a few more. Reservations are recommend since they are so popular(even week days), and it seems that the patrons enjoy a wonderful leisurely dinning experience. The staff is very attentive and knowledgeable. That goes a LONNNNG way...but then, the ambience, and the FOOD were superb, too!! My crabcake was not remarkable, but it was good....I will have a steak next time I visit. My date's Fish was wonderful - crispy, fresh perfection. I really appreciate the cocktails - keep it up, I'll be back at the bar for a snack and a cocktail! The cheese choices for our appetizer were yummy and local - thank you, LOCAL is important to us. There was plenty on the menu for everyone, even a vegetarian, good move! Definitely enough choices there to make us come back and bring friends and know everyone will be happy. The service was impeccable, the atmosphere was perfection, seriously there was nothing about our experience at Guild & Co. that wasn't outstanding. I had the chicken special, which was far more than a boring chicken dish-- the components were masterfully prepared and I thoroughly enjoyed the dish. My boyfriend took care of a 12oz dry aged ribeye which was cooked to perfection and more succulent that the sirloin from his last visit. The service is great, the drinks are amazing (try a tequila daisy) and we enjoy the diverse menu options.4/8/2013 12:00:00 AMEpic meat-eater experienceI'm not normally a steakhouse kind of gal, but we wanted to see what the hype was all about, and Guild definitely lives up to the hype. We finally had a chance to try the World's Best Beer from Hill Farmstead Brewery in Greensboro, and my first sip was so evocative and complex, it was almost psychedelic. Wow. We started by sharing the rabbit terrine, delicate and delicious, and complimented by perfectly grilled bread, pungent coarse mustard and lip-puckering cornichons. For dinner we shared the bone-in ribeye for two, which came perfectly cooked and carved tableside with two excellent sides: rich creamed kale & spinach and a lovely potato leek gratin, some grilled onion on the side and Cyrus Pringle sourdough. I had the 10 oz sirloin and my date had an 8 oz filet. Both steaks were ordered medium and were fantastic. We both also got the buttermilk whipped potatoes which was delicious. The accompaniments we got were blue cheese butter which my date liked and I got the steak sauce which was sweet and tangy very delicious. Overall good experience me u is a little pricey. For our first visit, though, we ordered the ribeye for two; in addition to being one of the best deals on the menu, it was cooked on the bone and cut at the table. This dry-aged steak was perfectly prepared, tender, and flavorful... and a very generous serving for both of us. Sides were excellent (each of us chose one of a very nice list) and the steak also came with a choice for each of us of one accompaniment for the steak - lobster butter, blue cheese butter, a red wine reduction, béarnaise, etc. - mmmmm. Our ceasar salad had good flavor but quite a few pieces of romain had large noticeable brown rust spots. We asked for our steak "medium rare" and it was very rare, not that big of a problem because we don't mind it that way and stilled enjoyed the flavor. The one thing that we both found extremely irritating was the bartender was constantly chipping away on a piece of ice. For all the hype and talk about being a high quality steakhouse, I still left unimpressed. I've been around the block and have had some mind blowing steaks, but the ribeye was OK (a little overcooked, but I'm not picky in that matter) and my date's fillet was just satisfactory. Our sides were amazingly delicious (creamed spinach and buttered carrots), the appetizer was also very surprising and tasty (cured salmon and urugula), and our dessert was delicious (pumpkin cupcake). Honestly, it could just be that I was expecting something that could not be delivered. I showed up with my 10 year old son who noticed that he was the only child in the spacious dining room. We found the staff helpful and knowledgeable. The appetizers put us off to a good start - especially the oysters. Both entrees were outstanding, and we particularly enjoyed the creamed spinach. We were surprised by a complimentary dessert of panna cotta with a citrus gelee, and in spite of being too full to have ordered a dessert, it miraculously disappeared.
