Gilt......Nice, but a little letdown. the food is certainly good with some high points, but the spice level is lower toward the bland end of the scale. Presentation is very good, if you desire that attribute. Service is a tick above average. The table tops have a place mat in the middle which results in your dinner plates half on the place mat and half not, so a strange way to have your plate unbalanced. Overall a better restaurant than many, but the competition in new haven is great and this restaurant does not stand out. I am in no hurry to return.

We had our family Easter dinner at Gilt. The food was outstanding! We were the only diners in the restaurant, so it was much quieter than I would have expected. The server had a bit of a 'tude when we expressed surprise that the kitchen was closing 30 minutes after we arrived. It was 3:00pm!

Sadly, people who are familiar with Mediterranean food will be disappointed here and people not familiar with Mediterranean will be deceived. Almost everything tasted like sugar had been added, and dishes that were not sweet were very salty or very smoky. The kitchen needs to taste the food before serving. I hate writing reviews like this.

First time visiting since changeover from Bespoke to a "Moroccan Steakhouse". Calling yourself a steakhouse with only 2 steaks on offer is a bit disingenuous, and the prices made neither of those options attractive.(I was actually in the mood for a steak but I wasn't going to shell out $50 for a porterhouse at an unproven eatery, and spending $30 on an 8-ounce filet just about anywhere is crazy.) That being said, the food was very good. We really enjoyed the generous charcuterie plate, the hummus, lamb meatballs, sea bass, and lamb chops. Service was spotty - had to remind them that we ordered a bottle of wine, water was not refilled - but friendly. Place was empty at 8 p.m. on a Saturday night w/only 1 other table. Not a "fun" atmosphere.

Great place for Sunday brunch. Not a pig out but a nice selection with reasonable pricing. Had a Great lobster omelet special. Very attentive staff, Nice place for a quiet get together with friends or family. Can't wait to try out the new dinner menu.

We decided to visit again for the last time before they became Gilt, and unfortunately I was a bit disappointed by our last experience. The service was not very good. They never refilled our water and never seemed to notice us when we tried to make eye contact to ask for something (usually water). In addition, they did not inform me when I was ordering the cookie plate that they were out of a lot of many things that would originally be on it (I've ordered it before) and instead of the 4 types of cookies, I got baklava and cubes of chocolate-covered bread. Very unsatisfying.

Recent change in ownership has caused a decline in the service, however food remains good and I liked the expanded menu. Since changing from Bespoke to Gilt, chefs and decor/setting/layout is still the same also.

Restaurant had opened the previous Friday--we went for Valentine's Day dinner the following Tuesday and it was clear the restaurant was still finding its footing. Extremely understaffed, waiters and bussers literally running up and down the stairs to get to tables, 20+ minute waits between sitting, drink ordering, dinner ordering, getting a check, waiting for a credit card to be picked up, waiting for our card to be returned, etc. It all felt like a restaurant in "training mode" and not a professional service. Great food probably could have made up for it, but it was poorly executed. Bone-dry chicken, undercooked and doughy onion rings, fish that tasted like it had just been unfrozen, etc.
