A word from George's California Modern
Occupying the lower level of iconic George’s at the Cove in the heart of La Jolla overlooking the Pacific coastline, George’s California Modern is an upscale contemporary restaurant featuring the thoughtful and inventive cuisine of acclaimed Executive Chef/Partner Trey Foshee. Working with mostly locally sourced products, Foshee artfully combines ingredients to create modern dishes that tell a story, with pure, intensified flavors and interesting flavor combinations. Combined with stunning ocean views, a modern design aesthetic, extensive wine list, seasonal craft cocktails and a relaxed yet refined service approach, the California Modern experience has been described as “evoking San Diego and capturing its culinary essence.”

George’s California Modern serves dinner nightly, including an a la carte menu or new six-course tasting menu with smaller tastes of items Foshee and his team are especially proud of and that may be fleeting in their availability

The food, the menu, the wait staff, the wine list - all excellent. The chef gets all of his produce from one local farm. Our delicious yellowtail was served with beautiful baby veggies including lovely tiny artichokes, nasturtium leaves and even a little nasturtium bloom. During dinner, the young, most attractive manager stopped by our table to introduce himself and personally welcome us...a very nice touch. And the next night, when we dined in a more casual part of the restaurant, he remembered us from the night before and warmly welcomed us back as he walked through to check on things. The ambiance is lovely. Tables looking out at the Pacific are hard to snag, but spectacular view if you are lucky enough to get one! Highly recommend!

I enjoyed the experience as our server was fantastic; however, the food was not that great for the price, which was high. I am a vegetarian and the only 2 vegetarian meal options were $28. I could feed the whole restaurant roasted or charred vegetables for that price. The farro dish was just okay as there was so much oil at the bottom of the bowl, it was not appetizing. I chose the 4 courses with wine pairing as it was a special occasion. The wine was delicious and we were provided a nice sample with each course; however again, it was not worth the extra $34 to have a sample pairing with each course. I'll eat elsewhere next time for much less for better food.

California Modern epitomizes the very best in elegant gourmet dining. Each course was artistically presented by attentive, knowledgeable servers. The striking contemporary decor, further enhanced by the stunning ocean view added to the sensory delight of each course. The fish taco appetizers were far more exotically delicious than the pedestrian name would indicate. The main courses were inventive, making each bite one to savor. And the desserts….oh my!! Macarons with strawberry sorbet, drenched in lemon custard for me and a mouth watering vanilla pudding for my husband--every calorie was worth it! California Modern was the absolute perfect place to celebrate our 50th anniversary. It was truly a golden gourmet experience!

We had the 4-course tasting menu with wine pairings and it was all very good. The pairings complemented the food well and every item was plated beautifully. Highly recommend the burrata, the ravioli, the lamb, the warm chocolate tart and the vanilla pudding. The fish tacos, aka sashimi, were good as were the beef tongue and the shortribs, but all were quite rich (just order one of them and not all of them as your choices). We won't go back to celebrate a special occasion as the restaurant was not accommodating to that (they wouldn't reserve a special table for the romantic celebration). But we may try the other two restaurants at some point and see how they fare.

A very unique experience for non Californians; we enjoyed a four course meal with wine pairing. The food was fresh and expertly prepared; delicate tastes from non traditional ingredients that resulted in a totally exciting experience. The wines paired with the courses were phenomenal and truly complemented every bite. The waiter was outstanding providing direction, answering questions and explaining each course and more importantly the origin of the wines and why they were chosen for that particular choice. Each course arrived in a timely manner and not from sitting under a heat lamp. A perfect evening.

We thoroughly appreciated the artistic presentations, delicious taste combinations, and adventurous delights. The staff were wonderful in making us feel at home, comfortable, and well cared for. What a great evening! We are very appreciative for all the effort put into making this such a memorable meal and birthday celebration. We plan to return soon.

My nieces and partners gave me a dinner voucher for a special birthday as I was on holiday in San Diego from Glasgow UK. The website to book the table was easy to use and a prompt confirmation was received. Warm friendly and professional greeter, as were all staff through out the visit. Our server was observant - gift voucher stated for my birthday and he met my request for no singing!. We sought two explanations of the menu which were well explained. The quality of the food and presentation of each course was excellent - best dinner during 3 weeks holiday in the USA. The wine was of good quality and value for money. I would certainly recommend Georges at the Cove to any friends and family visiting the La Jolla and San Diego area.

I have to admit, I don’t get to California Modern as often as I’d like. And as I said to my friend Michael last night as we were at the end, it’s like this is so sublime, so extraordinary, you simply don’t want to ruin it by making it an “everyday” habit. We chuckled. We had the standard tasting menu. The heart and soul of the meal, courses 2 and 3, the corn ravioli and the lamb, were beyond the pale. Full-on, there are no words. You simply have to come to George’s and partake of the MODERN. If you do, and if you’re lucky enough for an encore, a return visit or two, well, I am certain it will occur to you that this “fine dining” experience—the chef, the menu, the meal, the service, the venue, all of it,—is unsurpassed, like no other.

We were unable to sit oceanside due to a private party, usually those are held not in the prime location, I would think. Also the prawn appetizer that was the special that night 'ran out' after we ordered it. How does that happen? Service was great otherwise.

I guess that I've thought of myself as a bit of a foodie, but this is the second high end experience in a month where I just didn't fully "get it." I expect top notch ingredients cooked perfectly and served really attractively. The latest trend seems to treat each plate as a canvas and present as many "colors" as possible. Just too much going on on each plate. That said, what I did get was delicious and satisfying. This was not my first trip to George's and the service and ambience were as excellent as I expected them to be. The food was just a bit over my head!

La Jolla is a tough market. This is a nice try but the space is too cramped, the view is limited and the bottom line is the prices are far to high for food that is not off the charts. A nod to the service, it was spectacular. All in all, there's better views and food to be had in the area.

The food is divine and the view spectacular. We had the lamb entree, halibut entree, wine and two desserts. The lamb came with two styles of lamb on the plate and both were equally good. The halibut came with a lovely green sauce. The coconut dessert was to die-for but then so was the chocolate one with beets. The chef is creative and blends/pairs flavors well! Everything we ate was perfection.

The views are great if you are lucky enough to get a table by the windows. The 4-course prix fixe was a real steal, considering the quality of food. Very inventive dishes that were expertly prepared. The grilled sardine appetizer and the lamb entree were standout dishes. Desserts were marvelous, especially the french macarons. Staff is courteous and knowledgeable and service was attentive but not overbearing. Cocktails were great and the wine listed well-curated. We enjoyed all the dishes we had and would definitely recommend. Be warned that the place is smallish and can get loud. I wouldn't say it's the best place for a private, romantic dinner.

Food was excellent. While the wine list was extensive, there were not a lot of "affordable" selections. List was heavy in big name, high priced show off wines. More like a corporate budget looking to buy business. Did not see a great deal of bottles ordered while we were dining. We stuck to the by the glass menu which offered good selections.
