Chef-owned Galisteo Bistro features innovative international cuisine known for its open kitchen, quality menu offerings, and attentive service in a casual, downtown setting. Specialties include Braised Lambshanks, Seafood Pasta, Chicken Braciole and Crabcakes ala Flamenca, along with an extensive list of tapas, cheese flights, salad courses, daily specials, seasonal entrees, and homemade desserts. Whenever possible, ingredients are fresh and organic. “The owners have focused intently on all aspects of the operation. The emphasis here is on good food and conviviality in a welcoming, unpretentious atmosphere.” –Anne Hillerman, Journal Santa Fe   “I admire a restaurateur who says, Hey, I want to cook the foods I love, like a musician who says, I want to play the music I enjoy. Chef would have made a great conductor; his orchestra of a staff is playing lovely food in perfect harmony. If music be the food of love-long may Galisteo Bistro play on.” –John Vollertsen, Santa Fean Continued

  • "This will be my first stop for dinner on the next visit to SF. Wonderful flavors, good wine pairing."

  • "Our latest and now greatest find for excellent evening dining. Always great food perfectly prepared. Service is equally great. I have recommended Galisteo Bistro to several people and each has also had a great experience."

  • "We dined here some years ago and were happy to find it still in operation when we returned to Santa Fe. Both the cod and the gnocchi were outstanding. The service was great and our waiter very helpful. Loved the dessert too. The restaurant was not very crowded but we were there on a week night. We will definitely look for it on our next trip to Santa Fe."

  • "We were visiting Santa Fe and happily discovered Galisteo. Everything was fantastic. We loved everything we ordered. The mac 'n cheese was the best I have ever had, so our waiter had the chef give me his recipe. Our server was great, and the manager came out to check on us. Turns out he had lived in our hometown Canadian city in the past, and we chatted at length about his time there. He actually chased us after we left to say goodbye and thank us for coming in. Best restaurant we have found in New Mexico!"

  • "We made a seating request and then we were greeted at the door to accommodate us in a quiet out of the way space. Service was absolutely the best ,and we were provided with great food as well. Thanks for a wonderful dining experience! We look forward to our next visit."

  • "My husband an I took his mother who is a local for dinner on Sunday night. I had been before on a food walking tour thru SFSC and had wanted to go back and try it. We had a great meal trying the Shrimp Remoulade, Pan-seared Rissotto Cakes, Vegetarian Smacafam, cheesy bead pudding, Tinga de ?? ( a beef dish with chorizo) . Chocolate decadence and homemade pistachio Ice Cream were shared. The only thing I comment on that didn't seem to be up to standard with the rest of the meal was the coffee. I love French press coffee but what they served was a disappointment. Also we asked for FP for 2 and the server brought us the largest FP pot they make, so more than half went to waste. Other than that it was very good and will be back."

  • "This is the best in Santa Fe. I come here yearly. This time I brought my wife and 4 of her female friends. Separate checks were no problem at all. Can you imagine waiting on 5 women at once."
    Dined on 2/15/2014
  • "Excellent food and service. We especially liked the "French press" coffee after dinner. However, some of the tables were a little too close."

  • "Rob and Marge are perfect hosts and the staff is enthusiastic and professional. The food is so good that all good intentions go out the window. Every dish was absolutely perfect and unforgettable and visiting with Rob was great fun. Marge's dessert was spectacular. It was a special Valentines Day dinner after we had seen Casablanca at the Lensic. As soon as we walked in and waived to Rob, we were "home", comfortable and welcome. And the food was "over the top"."

  • "We have been coming to Galisteo Bistro since it opened, and it still remains one of our very favorite places in Santa Fe. The food is not fancy, but delicious. The ambiance and excellent, but small, wine list is superb. Perhaps the best feature is being greeted the owner/chef at the door and treated like a friend, not just a customer. I highly recommend this among the top restaurants in a city known for its good restaurants."

  • "We went here for valentine's day because it was the first restaurant that popped up on Opentable (that's a sound method for choosing restaurants, right?) and we were both blown away. I had the tinga de Puebla which was tender, flavorful, and each bite was better than the last. My partner had a New York strip and it was expertly cooked and tasted great. Pair that with a bottle of red wine and some bread pudding for dessert and it was a great night out. Truly outstanding restaurant."

  • "And a bonus to tourist who are lucky enough to find out about it!"

  • "From the moment we walked in the door we felt welcomed and superbly attended to. We enjoyed our meal and then lingered over dessert and conversation, noting that there were a few vacant tables and thus did not feel rushed to leave. The food was very good and flavorful. I especially liked their version of a sangria, and the reasonably priced wine the waiter suggested to pair with our entree's was perfect."

  • "Our second dinner at the Bistro and we still like it. I had the gnocchi primavera which was excellent and not heavy. My husband had a meat special which was good but not something I'd like. A lovely setting with very good service. We really liked how they already had our glasses filled with water (as we had made a reservation) and brought another nice candle to our table. We'll be back!"

  • "We were warmly greeted by the owner who showed us to our table in the location we had requested when making our reservation on Open Table. Loved the artwork and the overall ambience of the restaurant. Service was outstanding (promptness, knowledge, attention to detail, friendliness were all great). All four of us at our table thought the food was delicious and beautifully presented. My only minor criticism is that I would have liked the mixed greens salad I ordered to have been more generous in size."

  • "My wife and I were very pleased with our dinner her. Even on a rather slow, cold night in Santa Fe, there was a nice crowd. Service was great, food wonderful."

  • "We stayed at this resort for a wine tasting. The restaurant is good - not great. The restaurant was not as cozy as the rooms are. The wine list was marginal. The span from ordinary wines to really pricey one was huge. The food was food - the service was quite good. Good place to dine if you are staying there - but I would suggest looking elsewhere."

  • "Our experience was delightful, except as noted. We both ordered a seafood dish and mine was excellent. My wife's, however, was a bit lacking. Her crab cakes did not have much crab and the rice was undercooked. Service was great, ambiance relaxing. Could have been a 5 star evening except for my wife's main dish."

  • "Eggplant crisps were fabulous choice to start. Shared the lamb shank, plenty and succulent. My husband felt his eggplant parmesan entrée was the best. Our Argentian Malbec was rich, full fruity and well priced. Blueberry bread pudding was special too."

  • "We had a delightful dining experience. The food was excellent (Smacafam and Seafood Pasta Romesco) -- both delicious -- and the servings were generous. The service was informative and efficient without being intrusive. We'll be going back."

  • "I had the steak with mushrooms and green chili, it was fantastic, she had crab cakes that were superb , with a bottle of wine, all under hundred bucks! An intimate neighborhood feel coupled with the warm attentive staff provided a comfortable setting to simply enjoy the great food. The open kitchen allows one to witness the seamless presentation of your meal uniting the culinary and wait staff as one. It's a fantastic feeling to leave a restaurant with the sense of discovery of a true gem. Thank you Galisteo!! Hm"
