“The owners have focused intently on all aspects of the operation. The emphasis here is on good food and conviviality in a welcoming, unpretentious atmosphere.” –Anne Hillerman, Journal Santa Fe
“I admire a restaurateur who says, Hey, I want to cook the foods I love, like a musician who says, I want to play the music I enjoy. Chef would have made a great conductor; his orchestra of a staff is playing lovely food in perfect harmony. If music be the food of love-long may Galisteo Bistro play on.” –John Vollertsen, Santa Fean

Diner Reviews
  • "We are long time customers of Galisteo Bistro and were a little apprehensive when we arrived for dinner to find the restaurant had changed hands. Many of the staff have remained but ownership has transitioned. Not to worry, Galisteo Bistro is as good as, if not better, than it always was. The new owners have kept much of the same menu while introducing new items as "this evening's specials. The night we dined there were 5 of them and we selected two different fish specials. Both were marvelous. The wine list continues to be broad and attractively priced. Service and timing were both spot on. We will continue to be regular customers and we recommend Galisteo Bistro to all visitors."

  • "With new owner and chef, the Galisteo Bistro has not lost a beat, and perhaps is better than ever, with a larger menu and expanded wine list at reasonable prices. Definitely, a "go to" place for us"

  • "Galisteo's is under new management since the 1st of June. So I expected maybe a few blips to service or food. However, the owner/chef was extremely attentive as was the waitstaff. The food was great. They are now serving lunch, so we will have to try them again!"

  • "I wasn't sure about this place given a few of the recent 2-3 star reviews; but I decided that the overwhelming positive reviews made it worth a shot. All I can say is the negative reviews are WRONG - or written by the competition or those with no palate. From the moment I entered I was greeted warmly ( later I found it was by the owner), my waiter Luis was spectacular, offering bottled water and some of the best fresh homemade bread and olive oil. The chef has this place humming; the venison tartar was spectacular, the seafood dishes fresh and divine in taste and presentation. The place gets busy fast and is not that big, but the energy level, the delectable food and the service is worth it.One of the best restaurants in Santa Fe"

  • "The food was fabulous. Our waiter, Ben, was equally amazing. He was very attentive, friendly and knowledgable. I had the snapper with a veracruz sauce and my s.o. had the seafood stew. Both of our meals were delicious! We then split the "Decadence" for dessert - yum!! The tables are in close proximity to your neighbors, so if you want a more intimate, private setting this may not be the place for you. We will return here on our next visit to Santa Fe!! Make sure to make a reservation for dinner."

  • "The chef and staff know what they are doing. We had a reservation and were seated immediately, but not before being warmly welcomed. Our meals were beautifully presented and expertly prepared; what a delight to have a chef with such a creative flair. The dishes were tastefully simple without being overly sauced and seasoned just right so as to bring out the natural goodness. The braised lamb was outstanding, and I don't eat lamb too often for fear it will be ruined. So, a big thumbs up to the chef and staff. The service was great. However, the notice level was obstructive to where we could hear the conversations of neighboring tables. I am not sure what could be done for that but otherwise we will return."

  • "The transition in ownership seems to be going well. Same reliable menu with we additions. Your waiter should be Ben. He's excellent for both wine and menu suggestions."

  • "Good wine list and convenient location. Food was disappointing for such a well known Santa Fe restaurant. Too much salt in our food (a fish dish and a steak dish) made them both close to being inedible. They didn't even have filtered or bottled still water to wash the taste away. Management did not seem to care very much when we expressed our dissatisfaction as we were leaving."

  • "The food and service are outstanding. The range of menu items make it very easy to satisfy most people. The sauces are my way of judging the quality of the dishes and Galisteo has some of the best I have tasted."

  • "It happened to be our anniversary. What a great restaurant to celebrate that evening. We were visiting Santa Fe for a week. Would love to return. It is charming with a warm and inviting ambiance. The food and wine were outstanding. Highly recommend."

  • "We brought some friends to Galisteo Bistro and we're not disappointed. Chef Keller has things humming already -- Zuppa de Pesce was perfect as were all of the other entrees. Service excellent! A real Santa Fe gem for a reasonable price."

  • "This is a smallish restaurant where the tables share space with the kitchen. Most of the two tops are very close together, so expect to be part of the neighboring tables conversation whether you want to be or not. Ordinary conversation is difficult when the restaurant is filled at peak dinner hours. So, go early if this is important to you. Solid menu and wine list. Food is good quality, well prepared, and attractively presented. Prices are Santa Fe."

  • "We had a party of 5 and had such a wonderful time! The waiter was well versed in the food and made an excellent wine recommendation which paired perfectly with my meal. Food presentation was stimulating, combinations of ingredients impeccable, and service perfect. So much that my friends continued to talk of our experience the next day. We dined on octopus, venison, pasta, and chocolate. I don't know if you can order anything and not love the experience."

  • "Great lamb shank, squash flan and veggie salad. Nice Napa Chardonnay. Great sauce on Vera Cruz snapper. Convenient right off the SF Plaza."

  • "What a great fid; from the moment we sat down ad were greeted by our server everything was perfect. The wine list is the best in Santa Fe in my opinion and the menu is a refreshing change from the same old same old. We were very pleased to see the international dishes and especially the incredible fresh seafood. An added plus is the owner and chef (his son) support the local and regional farms and ranchers. Not a big place so be sure to make a reservation as this gem will be sold out!!"

  • "Nice place right near everything in downtown Santa Fe. We were greeted at the door by the new owner, who had only 3 weeks' experience at this site. Arturo did a great job waiting on us. The food was great and service unassuming and attentive. We would definitely return our next trip to the area."

  • "The restaurant was sold and reopened with a new chef within a few days. The food is still terrific and the chef creative. Excited that the quality and variety at this restaurant continues to be at the high end. The lamb was superb - tender, juicy and flavorful. The special pasta was great, and the salads creative. Too full for desserts, but will try some next time!"

  • "My husband and I both had the New Zealand venison at Galisteo Bistro when we were in Santa Fe this weekend. As we commented to the chef, we've had some of the best venison in the world while in Germany (a place well known for their preparation of game meats). The tenderness and the preparation of the venison at Galisteo Bistro was every bit as good. And the blackberry/raspberry ice cream pie with pistachios was divine (and not too sweet)."

  • "After walking by for years, we finally had dinner here. Two of us shared four Tapas, the prosciutto and goat cheese salad, and could have easily gotten by with less. The owner stopped by to visit as did the chef. Our server was quite knowledgeable. A perfect evening."

  • "My first impression was the warmth I felt when I entered the bistro...the Owner greeted us right away and seems to be very proud of his restaurant. Our waiter Ben was amazing and knows his wine knowledge and made a wonderful suggestion to the extensive wine list! They don't miss a beat in this bistro....this is our second time here and they make you feel like family! The first time it was very busy and we didn't have a reservation. "Which I recommend" so we sat at the window and actually we just loved it! All the food was wonderful and can't wait till our friends come so they too can share our experience. ps...Save room for their wonderful dessert's!"

  • "Has not missed a beat. Food and services as good has it's ever been."

  • "This is a very convenient spot to dine for dinner but the food is very mediocre. The food is seasoned mainly by salt and sugar instead of more Italian style with spices and garlic. Very disappointed by the food as the restaurant was rated fairly high. This is not a good place for foodies"

  • "We were greeted promptly at the door, and our server welcomed us BACK (thanks to Open Table reservations, after a 2 1/2 year gap since our last trip to Santa Fe). Service, food, and ambience were all great. Wine list is a bit pricey, but there are some affordable and unique selections. The chocolate decadence for dessert was amazing! My only critique is that the lighting level could be lowered a bit to create a more intimate atmosphere."

  • "Located just a few minutes from the Plaza, the Galisteo Bistro offers a varied menu that easily accommodates vegetarians as well as meat and seafood choices - great appetizers, and tasty deserts."

  • "Booked a table at the last minute for a small dinner before a show. We were not especially hungry so just ate salads and shared a few of the tapas - the breaded grilled eggplant and the lamb were really good, as were the salads. We both saw bigger main course dishes that we wanted to try when more hungry so we will definitely be returning when up in Santa Fe again. Service from all the staff was extremely good, very friendly and attentive."

  • "Really enjoyed everything about our evening at Galisteo Bistro. It was one of our finest of many meals over many trips to Santa Fe and we would gladly return. The atmosphere is classy but casual enough to be very comfortable. The service from Ben was fantastic and timed perfectly. "

  • "We had an early reservation and arrived even earlier thinking we might have a drink before dinner. The bistro does not have a bar but we were immediately seated. We ordered tapas, enjoying the sauteed shrimp cocktail (the house made sauce was fab), and the pan seared risotto cakes. Excellent. Next, we had the spinach salad which they thoughtfully split for us; wonderfully dressed and very tasty. My wife enjoyed the Chicken Saltimbocca which had a lovely brown butter/Madeira sauce. I had the beef au bleu which was marvelous. We split a lemon tart for dessert and enjoyed snifters of Riesling and Madeira to wrap up the experience. Our server was truly outstanding. We were made to feel like old friends from entry to exit. We'll be back!"

  • "They had an appetizer special that was awesome - a savory 4-cheese and veggie bread pudding. My date had the Gorgonzola Torte which was also awesome - smooth and tasty. She had the Smacafam (sausage on polenta) and I had the Lamb Shank with a squash flan both of which were great - more than we could finish. We chose the Mud Puddle for dessert - light and fluffy with an ice cream base and mouse. Overall the best meal we have had since arriving. I would highly recommend but be sure to make reservations as it is not a big place."

  • "A delightful meal. Service and food top notch. Similar to a choreographed dance with all the pieces flowing seemlessly together. "

  • "The owners are trying really hard, and they were packed, but this is just not on a par with other serious food choices in Santa Fe. Not sure what all the buzz is about."

  • "I have been to most of the restaurants in downtown Santa Fe and the Galisteo Bistro, I am happy to report, ranks up near the top. The food was excellent (I'm still eating leftovers) -- the lamb shank was superb. We ended up being seated next to a table with a baby -- who had arrived late and probably would not have been seated had their friend not already been seated. We were given a free dessert for our inconvenience and the chef checked in with us more than once to make sure were happy. We were very happy and the service was excellent, only surpassed by the food. Highly recommended."

  • "We found all of our dishes to be very good, from the excellent salads and shrimp tapas to the entrees. We will be back for the lamb shank that other diners were ordering and appeared to enjoy. I didn't see a single dish served at any nearby table that I would not want to try. The tables are a bit close together, which makes for tight serving space for the wait staff, but the other diners were cordially involved in their own culinary and social experiences. "

  • "There are many dining opportunities in Santa Fe. Galisteo offers an adventurous menu, attentive service and very reasonable prices. You feel cared for here, unique to say the least. We will return."

  • "We were passing through Santa Fe on an across country drive and were lucky enough to have found this restaurant highly rated on this site. We were able to get a reservation in advance. There were so many wonderful things on the menu to choose from we wound up having a tapas style dinner of sorts. Each dish was delicious and the dessert with the coffee ice cream, and chocolate mousse is over the top wonderful. We may have to drive that route again just to eat at Galisteo! Go you won't be disappointed!"
