FT33Fine Modern DiningI had recently read about FT 33 in Food and Wine magazine. I was in town for business. So my co-worker and I broke away from our group to experience this new spot in the design district. The food was inventive, delicious and as my co-worker stated "special". If one is up for a great play on American cuisine, I highly recommend it. The staff was also very pleasant. As we waited for our cab to pick us up the busboy, Eric waited with us since it was nearing 11. FT 33 was even better than we expected. We had a perfect table--with a full view of the open kitchen, where we got to watch the energetic choreography of a fine kitchen. And, even better, we got to taste such items as lamb tartar and an appetizer pasta that I yearned to order again. And again.

The Potato appetizer and Beet/Strawberry salad both were delicious. The entree choices were limited that night: Lamb loin was very good; Triple Tail fish entree good; Pork loin good but needed more sauce as an accompaniment. Desserts stellar, particularly the Peanut Butter and Chocolate. Sat us near kitchen so we could watch. Each dish carefully plated to be a visual experience, before you eat it. Resorted to a middle cut---same deal....good flavor w/ poor quality of meat. Set it aside. Other staff recognized my subtle discontent & quickly scooped it away & brought me a recommendation. We will be returning to both but for different reasons. FT33's food was fabulous! No doubt some of the best in Dallas. The food was not only creative but tasted great. The service was good as well. Additionally, the host accommodated our table request and the bartender made great cocktails. Our issue was atmosphere and that is pure preference. This is more NYC with the noise and din of dining- definitely more trendy. The meal at FT33 was the best I had! The food was exceptional and the service spot on. Our waitress had a true passion for the restaurant and was knowledgable about not only the menu but wine pairings as well. As a special treat (as a foodie myself) we sat at the Chef's table and were wowed by what we saw in the kitchen. Do not miss the restaurant if you are traveling to Dallas. The wine list is stacked with perfection in Variety and selection. The food was out of this world, from balance, ingredients, nutrition, preparation, display, portion, Taste, Sources. .. All Perfect 10 out of 10.
The atmosphere was beautiful, Clean, fresh, Punctilious and Extremely welcoming. Would be a pleasure to Share and introduce FT33 to others. .
I would even consider returning to Dallas just to Experience this Restaurant again. Well Done.

We had the dumplings and the smoked potatoes as appetizers and enjoyed them very much. I had the lamb tenderloin which was cooked perfectly. The space has a good feel to it; very nice design but not overdone like some. Fits into the theme of the neighborhood. My only complaint and this is pushing it is that our waiter left us alone for way too long at first (we were talking business) and she got a little defensive when we had to ask her to take our order. The most delectable pork in a loose pasta (kinda like a ravioli, but not closed. Perfect texture.... Then the charcuterie. The chef makes the most amazing charcuterie. Beautifully balanced. Some challenges, but well worth trying.
There isn't a lot of point in describing every dish because the menu changes often. I love that - local, seasonal, fresh, rare. Those ranged from out of this world (duck ham) to okay but not great (lamb tongue), but most of the items were exceptional. The chef came over and talked to us a while, and the open kitchen allows you to watch him and his team at work. You can tell he takes his craft very seriously. Restaurant was crowded, but my wife and I got a high table overlooking the kitchen, which was fabulous. The wine list quickly impressed -- it's not a library, but the bottles featured are tough to find anywhere in Dallas and priced reasonably. Napa cabernets are featured quite well. The crudo appetizer was a flavor explosion; very bright and delicious. My wife's lamb tenderloin was outstanding; a beautiful and tasty dish. My short rib was very good as well. The presentation of the food is marvelous. And don't miss the $20 shake for dessert. The preparations are unique and creative, but never overreach. The most difficult part is having to make a single selection of starter and entree, so I strongly recommend going with friends that like to share. The three of us split three appetizers, two entrees, and two deserts, with well selected wine parings for the lot. Everything was prepared and presented with that in mind. Even the lowly pana cotta is transformed by this kitchen to a remarkable new level. The food is excellent. If there is one criticism, it is not with the food or service, but with the acoustics. Every morsel of food was delicious including the beet/strawberry salad, the smoked potatoes, the copia crudo, and the strawberry shortcake. It was all interesting, unique and bursting with various flavors. Not your typical Friday night meal. The wine list was interesting and the service was spot on (Kevin was a winner). The ambiance has a cool, urban, industrial vibe, but still comes off as warm and comfortable. No pretensions here. Reminds me of a restaurant in San Diego called Seersucker if anyone is familiar.
