Everything was just great. TheEverything was amazing. The food was art. Everything was rich, flavorful, subtle, and attractive. We are novices at fine dining, and we ate all the bread when it was brought out. When they didn't take the empty bread bowl away for a while, it made us think that we were supposed to savor the bread through the main courses. It may have been helpful if the waiter had given us a gentle hint when they brought out the bread that we should make it last. Adding to its allure is that it's in Salt Lake and not NY, LA, Las Vegas, etc.
Sadly, I rarely find myself in Salt Lake City - but when I do, Forage is where I take the folks I need to impress.
The creativity and diversity of food and wine is unmatched. Incredible food and combinations. We even took advantage of the juice pairings (however, I would not do that again. Although the juice and pairing was wonderful, I felt it was way overpriced for juice). It is by far the most creative menu my husband and I have experienced. The dishes were thoughtful and elegant. The presentation was artful. I could care less about whether the staff was talkative or friendly (they were), or whether the chef visited our table (he did), we are just about the food. We take our eating seriously and we were not disappointed. We enjoyed the majority of new flavors of the 16 courses, and though there were one or two new tastes I did not prefer, I enjoyed the entire experience. You will eat something like a 20 course meal over three hours. Generally, each course was excellent. There were a couple of terrible courses but overall the food quality was very high. I didn't leave as full as I thought I would. And the wine and/or juice pairings were small. You will pay $240+ for two if you get the pairings. In the grand scheme of things, however, this restaurant is for the sophisticated eater who both understands and appreciates the construction of fine food, with complex balance and stunning visual fireworks. Was it better than Jules Verne at the top of the Eiffel Tower, or Le Cinq at the George V? Joel Robuchon? The food was outstanding. The wine pairings were delicious. We partciularly enjoyed the radish with sorrel, the carrots with smoked pistachios, the elk with yellow beets and yellowfoot mushrooms. Although the meal was all small bites, there were enough courses to fill you up by the end. We had read beforehand that the meal could take up to three hours, and it did. It's a miracle that we have Forage here in SLC because there isn't a market for these types of restaurants. The price is high but is on par for the experience and food. Each of our nineteen dishes was inventive, unique, beautiful and delicious. The time and creativity put into each course is obvious. My husband was impressed with the wine pairings and I (pregnant) was delighted with the juice pairings: everything from rhubarb to Douglas fir juice to housemade almond milk- amazing! The service is attentive and knowledgable while being friendly and unpretentious. They even sent us home with housemade granola for breakfast in the morning. The understated decor and quiet music make for a relaxing ambience, and the waitstaff are organized to a high level of service and attention. In fact, my mother, whom I was treating to a dinner there, was convinced that there were far more people covering the tables than there actually were, because of of the level and timeliness of their attention! The level of creativity in the use and presentation of local ingredients in each dish is an unmatched delight, and one of the main reasons that dining at Forage engages and indulges all of your senses. The food is excellent, the ambiance is very nice, the service is impeccable, and it feels intimate enough for most excursions. I only rated a 4/5 ambiance because the evening I attended, another patron was boisterous and obnoxious with another group of 4 to my side who also disregarded classical etiquette. The staff was prompt, polite, and knowledgeable. The kitchen staff and process looked like an art exhibit. The serving plates were unique and beautiful, helping to aid the experience and lend suggestive tones to the influence of the chef's pursuits. Absolutely incredible overall. Would suggest to 10/10 friends. However, portions were minuscule. I have eaten at numerous restaurants with high-end multi-course tasting menus, and the portions are typically small. However, Forage had the smallest portion by far, across all courses. Wine pairings were also very skimpy. If not for basket of bread served early (I suggest eating it all) and granola provided as the diners leave the restaurant, we might have stopped at Epic Brewery on the way home from the restaurant for a sandwich. Its hard to believe the value of the ingredients is large enough to justify such tiny portions - perhaps for a few courses, but not every one.3/2/2013 12:00:00 AM
