The Final Cut is a contemporary American steakhouse featuring hand selected USDA Mid-Western Prime Beef, corn-fed and naturally aged up to four weeks to insure maximum flavor and texture.   • "The Final Cut at Hollywood Casino, Charlestown Races, WV is as good as any Morton's or Ruth Chris. But beware, while the Final Cut at Harrisburg location is more like a Long Horn Steakhouse. I always enjoy the Charlestown location. The food is always superb, the staff friendly and accommodating, and the steaks are always done to perfection. I would highly recommend this to any beef eating aficionado."

  • "The Final Cut at Charles Town is probably the best restaurant that I have had the pleasure to dine at. Our friends also recommended Lasker as our waiter and he was absolutely the best at his job and friendly too! We were told we should request one of the semi circle booths. We did, and it seemed very private and cozy. We had been advised that we would be very pleased with the food, and we were!! Everything about the meal was enjoyable. I look forward to returning to the Final Cut at Charles Town."

  • "Another reminder that Final Cut is far more than a great steakhouse. The special was roasted red pepper fettuccine served with "head-on" Hawaiian prawns, a creation from Chef John Harder, but delivered tonight by Chef Christian Evans. This perfect presentation was preceded by a requested carpaccio. Chef Christian prepared a "lobster carpaccio" which featured salmon sushi and jumbo lump crab which was nothing short of incredible. When it comes to unique shellfish and seafood presentations, Chef Christian has few peers. McLean's perfect service included the arrival of cocktails that he did not need to ask about and, as always, a very personal touch with everything being exactly right. A perfectly managed restaurant!!!"

  • "A "Lobster Feast" was the special tonight, and it was indeed "special". A special request for Carpaccio, which arrived in wonderful presentation crafted by Chef John Harder proved a great start to the dinner. This was probably our 30th Carpaccio enjoyed here, and Chef Harder somehow always finds a way to do it differently, with each new treatment adding something unexpected and exciting. The lobster, with tails intact and part of the shell stuffed with a delicious creation that included Chilean Seabass, was pretty much as good as it gets. No surprise, given the talented chef guiding the kitchen, but it was another reminder that this is not just a great steakhouse, though it is certainly that as well. Perfect service from McLean as always."

  • "I hated my French onion soup, which is normally my favorite part of a meal. At the beginning of the meal the waiter said the steak are seared, mine was burnt! I won't be back I have had better steak at golden corral. This has nothing to do with the price, just the fact that my $44 steak was terrible!"

  • "My wife chose Final Cut to celebrate my birthday this year. She made a special request for Carpaccio from Chef John Harder, which appeared was beautiful, accented with a great Dijon sauce. The menus went away and the dinner was then left to judgment of the exceptional kitchen. What followed was dishes I might not have ordered on a menu, that turned out to be the most exceptional birthday dinner ever. Chef Christian Evans prepared giant oysters "scampi" wrapped in prosciutto with an organic bow around it, along with a number of other great items, and a deconstructed fish taco, and Wagyu beef cheeks from Chef Kevin. Not enough space here to describe the exceptional talent, along with McLean's typically perfect service. Pure artistry!"

  • "Our server was very good had him before. To make review short and sweet food was delicious but steak was very tough we were very disappointed. Steaks are pricey which we do not mind if they are tender but this time they were not. We should have spoke up but didnt because we did not want to make a big deal ruin night. If it should happen again we will speak up and I am sure they will fix new steak hopefully will not happen. So just dont make the mistake if it happens to you not to say anything speak up because again not cheap and at least you will have enjoyed your meal. Will try again."

He was well informed and made great suggestions starting with the wine, telling us about all the specials, how the beef is aged and of course the deserts.   • "Having just returned from Atlantic City over the New Year's Holiday, where we dined at a few world-class steakhouses (The Palm, Bobby Flay Steak, Wolfgang Puck American Grille), this dinner reminded us just how fortunate we are to live so close to this outstanding dining venue. A special request for carpaccio showed up in a beautiful presentation that included two small towers of tartare, along with a stripe of dijon sauce that made everything unique. A grilled lobster tail (with three different sauces) and an Ahi Tuna entree, that any Michael Mina restaurant would have been proud to serve were simply perfect. Coupled with perfect service delivered by McLean, this was a far better choice than our recently visited big name chef venues."

Helpings are of reasonable size, assuring even the most hardy eater won't go away hungry.   • "I'll admit that I didn't have high hopes for a restaurant in the casino in WV. I assumed it would just be overpriced. But it was delicious and they even claim to have a vegetable garden on the property where they harvest some of the food they use in the restaurant. We shared the iceberg salad and shrimp cocktail. Then I had the scallops which were cooked perfectly. My husband had the New York strip and he enjoyed it. We shared the truffle mac and cheese and a dessert. Cocktails were also good. And even with all of that sharing we still ate too much and were full for the rest of the night."

  • "We started our dinner with a special request of steak tartare, which was kindly honored by Chef John Harder. It was a beautiful presentation of two styles of tartare, accented with with sushi treatments of sea bass and fresh scallops. Delicious! The special of the night, which my wife and I both chose, was a "surf and turf" presentation of Wagyu skirt steak and genuinely fresh (delivered live to the kitchen) scallops. The steak was perfect, but having live scallops to work with in the kitchen was a first for me. They were served still attached to their shell, prepared "scampi" style. The dish was far sweeter and more firm than what you normally see and was simply perfect. Perfect service from McLean as always. Simply the best."

  • "My husband and I took some friends for a 55th birthday celebration, and I was a little nervous because the restaurant was in the casino and I was not sure what we would get. We ordered oysters as an appetizer, and for dinner 2 of us had the bone in ribeye, I had the petit filet, and our other first had lamb. Wow is all we could say. The service was great. We weren't sure about the wine but they sent over their oenophile and she recommended a fantastic wine based on what we described we wanted. The steaks were cooked perfectly and the lamb was great too. To top it off they provided our birthday guest with a complimentary dessert, creme brûlée, and we all were so impressed with the presentation and taste. Overall we had a wonderful time."

  • "The steak was over cooked. Dried out. There were two gentlemen who were seated at a table by us and they ordered steak and lobster, but left most of the steak as there complaint was over cooked. We have eaten in this restaurant before and have had no problems. Being busy was certainly not a factor."

  • "To be honest, I wasn't expecting much when my boyfriend and I made the reservation. I figured that a casino steak house would be good, but not great. However, we were totally blown away by the Final Cut. The food was delicious, the ambiance was romantic, and the staff was very friendly. The petite filet was extraordinarily tender and the caprese salad was a delight. We even loved the fingerling potatoes with a trio of delicious dipping sauces. The prices were what you'd expect from such an establishment, but well worth treating yourself on a special occasion."

  • "On short notice, my wife and visited for a light dinner, planning on having just a few appetizers. We did make a special request for two Carpaccio appetizers, which we have done many times before. Chef Harder honored the Carpaccio request, and once again, came up with a very new and different presentation. This time, the dish had a few interesting twists. First, the presentation included paper-thin slices of fresh tomatoes, along with multi-colored tiny tomatoes with excellent greens in a small salad. The dish was also drizzled with a buttermilk-garlic dressing, which at first seemed odd....until we tried it. Once again, it was delicious. Clearly, this Chef knows best. Service from McLean was, as always, perfect."

  • "After hearing of a Wagyu hangar and skirt steak menu special, we quickly made our reservations. Despite the late notice, the chef honored a few appetizer requests as well. The first was a spectacular carpaccio, treated with lemon dijon, capers, truffles and horseradish. Very innovative and definitely the best (and most delicious) presentation of the dish I have seen. The second needs to be seen to be believed; a complex presentation of tiger prawn, rare tuna, a very oriental steak tartare, and filet slices, accented with a little sea urchin and avocado. The bold spicing was incredible. The generous serving of the duo of Wagyu steaks, one coffee-rubbed, one with habanero lime demi, we wonderful. All perfectly served by McClean!!!"
